Kalua Pork is the most tender and juicy pork you'll ever eat! It only takes 3 ingredients, 5 minutes prep time, and can be made in the slow cooker or Instant Pot.

1 4 pound pork shoulder roast
1 1/2 tablespoons liquid smoke
1 tablespoon Pink Himalayan salt (or Hawaiian sea salt)
1 head cabbage (chopped)
2 tablespoons butter
1 1//2 teaspons kosher salt
fresh cracked pepper

Steps:

  • Cut pork into about 6 large chunks. Place in the bottom of the Instant Pot pressure cooker and poke all over with a fork. Pour liquid smoke over the top and then sprinkle with the salt. Cover, set knob to seal, and cook on high pressure for 60 minutes followed by a 25 minutes natural release. Release any leftover pressure and open. Remove pork from pot and shred in a large bowl, removing any large fat pieces. Ladle desired amount of juice in the Instant Pot over the pork and serve with cooked cabbage and white rice.
  • Place in the bottom of the slow cooker (Crock-Pot) and poke all over with a fork. Pour liquid smoke over the top and then sprinkle with the salt. Cover and cook on low for 10-12 hours. Remove pork from cooker and shred in a large bowl, removing any large fat pieces. Ladle desired amount of leftover juices over the pork and serve with cooked cabbage and white rice.
  • Melt butter in a large non-stick skillet. Stir in the cabbage. Let cook 10-15 minutes, stirring occasionally, until tender. Serve with Kalua Pork and rice.

2 Tablespoons brown sugar

Steps:

  • Place roast in the slow cooker. Add sauerkraut and brown sugar and mix to combine the three.
  • Cover and cook on low for 3-4 hours or until internal temperature registers in the middle at 150 degrees. Transfer to a plate or platter and allow to sit for 10 minutes
  • Cut roast into slices and serve with sauerkraut mix.
  • Label a gallon size freezer bag. Add all ingredients, remove excess air and lay flat to freeze. To cook, follow instructions above.

12 ounces root beer
18 ounces BBQ sauce ((we love Famous Dave's BBQ Rich 'n' Sassy sauce))
8 hamburger buns

Steps:

  • Place pork roast in the bottom of the Instant Pot.
  • Pour root beer on top of roast.
  • Place the lid on top of the Instant Pot and move the valve to SEALING. Press the MANUAL (PRESSURE COOK) button and set timer for 60 minutes (or 20 minutes per pound, depending on the size of your roast).
  • When the timer is done, let the pressure do a NATURAL RELEASE (it will take at least 20 minutes, but I even prefer to let the roast sit in there for a couple hours to make sure it is super tender).
  • Remove the lid and shred the roast with 2 forks.
  • Drain the root beer out of the Instant Pot and place the shredded roast back inside. Stir in the bottle of BBQ sauce.
  • Place meat on hamburger buns or rolls and serve.

  • Stir 1 bottle barbeque sauce and dry onion soup mix together in the bottom of a large slow cooker crock. Place pork loin and ribs into the slow cooker.

This pulled pork could not be easier! I used a pork loin roast for this but you could used tenderloin. I trimmed off the huge slab of fat on the side but you don't have to. I also used about 16 oz of homemade BBQ instead of the bottled stuff. The pork turned out very tender! I served this on toasted hamburger buns with creamy slaw, pickles, and some hot sauce.

2.5kg boneless pork loin, skin and fat on, butterflied (ask your butcher)
1½ tbsp fennel seeds, crushed
1½ tbsp coriander seeds, crushed
4 lemon thyme sprigs, leaves only
2 large garlic cloves, crushed
2 tbsp olive oil
dauphinoise potatoes and green vegetables, to serve
300g forced rhubarb, cut into 4cm pieces
3 tbsp light brown soft sugar
1 orange, juiced
1 bay leaf

Steps:

  • Lay the pork skin-side up and score the skin using a sharp knife in 2cm intervals. Turn over. Using a pestle and mortar, grind the fennel and coriander seeds, lemon thyme, garlic and ½ tbsp salt to a rough paste, then spread over the flesh-side of the pork. Roll the meat up tightly from the longest end, then tie together using butcher's string in 1cm intervals. Rub the outside of the pork with 1 tbsp salt and chill overnight or for at least 6 hrs.
  • Heat the oven to 220C/200C fan/gas 8. Put the pork in a roasting tin, drizzle over the oil and roast for 30 mins. After this time, reduce the temperature to 190C/170C fan/gas 7 and cook for 1 hr 30 mins, then remove from the oven and rest, covered in foil, for 30 mins.
  • Meanwhile, make the sauce. Tip the rhubarb, sugar, orange juice, bay and a pinch of salt into a pan. Simmer gently for 10-15 mins, or until the rhubarb has broken down with some chunkier bits.
  • Slice the pork with a sharp serrated knife (a bread knife works well) and serve with the rhubarb sauce, dauphinoise potatoes, greens or purple sprouting broccoli.
