NO SUGAR ADDED HOMEMADE APPLESAUCE
Ditch the store bought stuff and make your own no-sugar added, flavorful homemade applesauce!

Steps:
- Peel all of the apples and cut each apple into large chunks. Place apple pieces in a large pot on the stove over medium heat and add in all of the remaining ingredients. Cover with lid.
- Cook on low-medium heat until apples break down, ~30-45 minutes. Be sure to stir occasionally. Remove cinnamon sticks when applesauce has finished cooking.
- Mash apples with a potato masher for a chunky consistency. For a smoother consistency, puree the applesauce in a food processor or with an immersion blender.
- Enjoy cooled down or warm! Store in fridge.

QUICK HOMEMADE APPLESAUCE - NO SUGAR ADDED
A quick, easy homemade applesauce recipe that I served with potato latkes this year. It has no added sugar, which makes it a better option for diabetics and low-carb people and others who avoid cane sugar. But if you prefer a sweeter sauce, add 1/2 cup of sugar. I recommend using 1/2 sweet apples (I like Braeburn) and 1/2 tart apples (Granny Smith, for example). Don't leave out the salt, it's a necessary ingredient for a good applesauce!

- Peel and core apples (I prefer to leave the skin on a few of them because I like the taste and texture). Cut apples into approximately 1 inch cubes.
- Add all ingredients to pot, and turn heat on high. Bring to a boil, then cover and reduce heat to low. Simmer for 20 minutes or until the apples have softened significantly.
- Stir frequently, making sure that the apples are not sticking to the bottom of the pot. Add more water if necessary. Remove lemon slices.
- Mash with a potato masher or use a food mill for a smoother consistency. Serve warm or at room temperature.
20 MINUTE NO SUGAR PINK APPLESAUCE

- Wash the apples well. Do Not Peel! Chop them into 1 inch pieces, discarding the core.
- Put the apples, cider, cinnamon and cloves into a heavy soup pot. Bring to a simmer, cover, and cook over medium heat for about 20 minutes, stirring often, until the apples are soft.
- Remove the spices, and then puree the apples in a food processor. I did this in batches so as not to overload the processor. You can puree the apples to a super smooth consistency, or keep some texture. I chose to retain a little bit of texture in mine.
- Refrigerate the sauce until needed. It will keep for a week in the refrigerator.
APPLESAUCE
My late father only knew how to cook two dishes and this was one. The type of apples you use will determine how mushy your apple sauce turns out. Cooking apples will turn into the texture of commercial applesauce while others will keep their shape even after the cooking. Either way it's delicious. The recipe can easily be doubled (or tripled...or quadrupled) to serve a crowd.

CRANBERRY APPLESAUCE - NO SUGAR ADDED
This is a vividly pink, wonderfully tart cranberry applesauce. Makes a great condiment for savory foods such as meat or potato pancakes, and also wonderful when eaten alone. It has no sugar added, thus it is VERY tart (which I love) - If you prefer a sweeter sauce, add 1/2 cup of sugar. - Quarter the apples, do not peel, and remove the seeds and cores. Place apples in a bowl, add the lemon juice, and toss thoroughly to coat.
- Place the apples, sugar, and 1 cup water in a heavy saucepan. Cover pot, and let simmer over low heat, about 30 minutes, or until the apples break down to a saucelike consistency.
- Remove pot from heat, uncover, and allow apples to cool slightly. Using a rubber scraper, gently push apples through a food mill or wire sieve. Discard the skins. Refrigerate until ready for use.
PRETTY IN PINK APPLESAUCE
This homemade applesauce has a delicious, clear apple taste accented with a little nutmeg, a nip of lemon, and bit of cranberry juice . Use some of the apple peelings to make the applesauce nice and thick (and remember to dig them out before serving).

- Peel the apples, reserving the peels of 6 of them.
- Quarter and core the apples.
- Combine all ingredients in a large saucepan; bring to a boil then reduce heat.
- Simmer mixture until apples are soft and you can mash them down into applesauce, about 45 minutes to 1 hour.
- Remove from heat and cool.
- Remove peels from the applesauce and discard them.
- Mash applesauce a bit more if you wish (I like mine a bit chunky), then refrigerate until ready to serve.
- If you like, you can make extra applesauce and spoon into sterilized pint jars, seal and process in a boiling water bath for 15 minutes.
PINK APPLESAUCE

- In a large heavy saucepan combine the apples, 1/2 cup water, the lemon juice, and the sugar, bring the liquid to a boil, and simmer the mixture, stirring occasionally, for 25 minutes, or until the apples are very tender. Force the mixture through a food mill fitted with the fine disk into a bowl.
- Serve the applesauce warm or chilled.
