These 2 ingredient peanut butter cookies are the easiest and softest cookies ever! No flour, no eggs, and no leavening agents needed, they take minutes to make.

- In a large mixing bowl, combine your peanut butter with maple syrup until combined. Cover the bowl and freeze for 45 minutes or refrigerate for two hours.
- Preheat the oven to 180C/350F. Line a large baking sheet with parchment paper.
- Remove the chilled cookie dough from the freezer or fridge. Using your hands, roll out balls of dough and place them onto the parchment paper. Press down on each cookie dough ball into a cookie shape.
- Bake the cookies for 10-12 minutes, or until the edges look golden brown. Remove the cookies from the oven and let them cool completely, before carefully removing from the baking sheet.

2 INGREDIENT PEANUT BUTTER COOKIES
Steps:
- Preheat oven to 350°F. Line two baking sheets with parchment paper or silicone baking mats.
- Soak dates in warm water for 10-15 minutes. If you are using a new package of dates and your dates are very soft, you do not need to soak them and you can use them as is. Drain dates from water (no need to completely pat dry them) and add them to food processor. Pulse until dates form a thick paste. You may need to scrape the sides of your food processor a few times with a spatula to ensure all the dates are evenly pulsed and mixed in.
- Add in peanut butter. Pulse until peanut butter is fully mixed in and becomes a thick cookie dough. Your dough may seem a little crumbly but if you pinch it together, it should stick.
- Using a 1.5 cookie scoop, scoop cookie dough and place onto prepared baking sheet. Continue to scoop until all dough is used up. You should have enough for 16 cookies. Grab one dough ball and press between your palms to compact it and keep the dough from getting crumbly. Roll between your hands to form a round ball. Place back onto cookie sheet and repeat with remaining dough, placing dough balls 2 inches apart.
- Press down on each dough ball so it form a thick round disk (about 1/2 inch thick). The cookies will not spread much during baking so you want to shape the cookies as close to you want their final appearance as possible. Use the back of a fork to make criss-cross patten on the surface of each disk.
- Bake cookies for about 10 minutes or until they puff up and the surface of the dough does not look wet. If you are unsure if your cookies are ready, you can test one by gently try to slide it on the baking sheet. It should without the bottom sticking. Be gentle because cookies are not fully set yet.
- Let cookies cool on cookie sheet and fully set before removing the cookies from the baking sheet.

- Combine flour, baking soda and salt in a small bowl; mix well and set aside.
- Combine margarine and peanut butter in a mixing bowl; beat on medium speed until blended and smooth. Gradually add both sugars and beat until blended; add egg white and vanilla and beat until smooth. While beating on low speed, gradually add flour mixture and mix until just blended.
- Transfer dough to a large piece of plastic wrap and roll into an 8-inch log. Wrap log in plastic wrap and freeze for 2 hours. (Note: You can make the cookie dough up to 3 days in advance and freeze until ready to bake.).
- Preheat oven to 350ºF. Coat 2 large baking sheets with cooking spray.
- Remove cookie dough from freezer and slice crosswise into about twenty-four 1/3-inch-thick slices; place slices 1 inch apart on prepared baking sheets. Bake until golden around edges, about 8 to 10 minutes. Transfer cookies to wire racks to cool completely. Yields 1 cookie per serving.
- Flavor Booster: Browned margarine has a nutty flavor that enhances a peanut butter cookie. Melt the margarine in a small skillet until it sizzles and just begins to brown. Remove from heat and freeze for 20 minutes, or until firm, before using in recipe.
STORMY'S REESE'S PEANUT BUTTER CUP COOKIES (2 INGREDIENTS!)
Refrigerated cookie dough and mini peanut butter cups make preparing these a breeze...BUT they taste like a lot of effort goes into them. This recipe was given to me, so I do not know who Stormy is, but I figured I should give him/her credit! According to "Stormy", you can also do these with Rolos (haven't tried that yet!)

- Place unwrapped peanut butter cups in freezer before starting.
- Preheat oven to 350 degrees.
- Using miniature muffin tins, place a 1 inch ball of dough in each cup.
- Bake for about 5 minutes LESS than package directions instruct (This usually turns out to be about 7-8 minutes).
- Remove from oven and leave in pans.
- Remove candy from freezer and carefully press one into each cookie.
- Remove from tins after they are almost cool.
- Cool completely on racks.

- Preheat oven to 350°F.
- Sift together sugar, nutmeg, and cinnamon very well.
- Add egg and peanut butter, mix thoroughly(about 1 minute or so).
- Mixture should be very moist. Add the flour and mix thoroughly.
- Roll into balls (I recommend using a tablespoon full, but I suppose they could be bigger is desired) and place on cookies sheet, leaing about an inch in between each cookie.
- Bake for 15-20 minutes, checking every so often and touching (I really mean TOUCHING. Do not press or you will have flat cookies; very delicate.) the top of the cookie with a spoon. They are done when touching the top shows has no effect on the cookie.
- Eat with milk or alone. I recommend eating them when they are still warm.so good -- >3

- In a medium bowl, stir together peanut butter and maple syrup with a spatula. At first your batter will be very liquidy, but as you continue to mix the maple syrup into the peanut butter you will see your batter thicken and resemble cookie dough. Your dough will not be as thick and solid as typical cookie dough but it should be firm enough for you to scoop up with your cookie scoop and shape with your hands. See notes section about potentially making the cookies sweeter.
- Using a 1.5 tbsp cookie scooper, scoop cookie dough and place onto prepared baking sheet, spaced 2 inches apart. Using the palm of your hand, flatten cookie dough into a round disk. Make criss-cross patten on surface of each cookie using a fork.
- Bake cookies about 10-12 minutes or until surface of cookies look dry and cooked. Do not worry if the cookies still feel soft. They will firm up after they cool. Let cookies cool completely on baking sheet to allow them to set. Do not attempt to remove cookies before they are cool because they will fall apart. Once cookies are cooled and set, they should easily come off your parchment paper or silicone mat. Store cookies in an airtight container at room temperature.
