2 large free-range eggs
100 g plain flour
100 ml milk

Steps:

  • Preheat the oven to 225°C/425°F/gas 9.
  • Get yourself a cupcake tin and add a tiny splash of vegetable oil into each of the 12 compartments.
  • Pop into the oven for 10 to 15 minutes so the oil gets really hot.
  • Meanwhile, beat the eggs, flour, milk and a pinch of salt and pepper together in a jug until light and smooth.
  • Carefully remove the tray from the oven, then confidently pour the batter evenly into the compartments.
  • Pop the tray back in the oven to cook for 12 to 15 minutes, or until risen and golden.

4 large eggs
1 cup ( 250 mL ) whole milk
1 cup ( 250 mL ) all purpose flour
1 tsp ( 5 mL ) salt
¼ cup ( 60 mL ) vegetable oil or beef drippings

Steps:

  • Set a rack in upper third of oven and preheat oven to 425°F (220°C).
  • In a medium bowl, whisk together eggs, milk, flour and salt until smooth. Set aside.
  • Place 1 tsp (5 mL) oil or beef drippings into each cup of a 12-cup muffin pan. Transfer pan to oven and heat until oil is smoking, about 2 minutes.
  • Remove pan from oven and quickly pour batter into cups, filling ⅔ full. Bake until puddings have risen and are golden brown, about 15 minutes. Serve immediately.

Steps:

  • Preheat the oven to 450 degrees F.
  • Sift together the flour and salt in a bowl. In another bowl, beat together the eggs and milk until light and foamy. Stir in the dry ingredients just until incorporated. Pour the drippings into a 9-inch pie pan, cast iron skillet, or square baking dish. Put the pan in oven and get the drippings smoking hot. Carefully take the pan out of the oven and pour in the batter. Put the pan back in oven and cook until puffed and dry, 15 to 20 minutes.

1 1/2 cups whole milk
1 1/2 cups all-purpose flour
1 teaspoon kosher salt
1/4 cup meat drippings or olive oil

Steps:

  • Add the eggs, milk, flour and salt to a blender. Blend on high until completely smooth, then allow the batter to rest for 30 minutes.
  • Preheat the oven to 425 degrees F. Place a 12-cup muffin tin in the oven over a baking sheet and allow the pan to preheat while the oven is preheating.
  • After 20 minutes, remove the muffin tin from the oven and evenly pour the fat amongst the 12 cups (about 1 teaspoon of fat in each cup). Place the muffin tin back in the oven for 1 to 2 minutes to allow the fat to heat up.
  • Remove the baking sheet from the oven and carefully fill each cup a third of the way with the batter. Immediately place the baking sheet back in the oven and bake until golden brown and puffed, about 15 minutes. Serve while still warm.

To all the Brits out there this is a firm favourite. Traditionally served with roast beef, we like them with any roast, and even good with good old bangers and mash and oinion gravy. The addition of an extra egg white to the batter adds that extra bit of lift. They can be made any size, I use a medium size muffin pan. There are lots of theories about making the batter and letting it stand for a while, its not neccesary, I make these while the muffin pan is heating in the oven and add to the pan as soon as the oil in the pan is screaming hot. So no hanging about for these puds.

2 cups all-purpose flour
3/4 cup milk
3/4 cup water
3 large eggs, beaten
1 large egg white
1 pinch white pepper
1 pinch salt
3 tablespoons oil

Steps:

  • Preheat oven to 500f.
  • Put a little of the oil in each of the muffin pan cups, preheat in the oven.
  • Mix milk and water together.
  • Put all the dry ingredients into a large mixing bowl, and combine.
  • Add the whole eggs and egg white and whisk together and slowly add milk and water mixture. The batter should be a little looser than a milk shake. You may not need all the liquid, depending on your flour and the atmosphere of your kitchen.
  • When the muffin pans are very hot add the batter, filling each cup 2/3 of the way.
  • Bake for about 25-30 minutes. They should be light and golden brown on top.

2 eggs (at room temperature)
1 teaspoon salt
1 1/3 cups milk (at room temperature)
1 cup flour

Steps:

  • Beat the eggs together until light.
  • Beat in the remaining ingredients well.
  • Let stand, covered for 1 hour.
  • (This is a really important step) Fill muffin tins 1/4 full of oil or drippings and put into a hot oven until the fat is sizzling hot.
  • (450*F) Fill each muffin cup half full of batter, Place in a 450*F oven and bake for 20 minutes, gradually lowering the oven temperature every 5 minutes by 25 degrees until puffed, crispy and brown.

140g plain flour (this is about 200ml/7fl oz)
4 eggs (200ml/7fl oz)
200ml milk
sunflower oil , for cooking

Steps:

  • Heat oven to 230C/fan 210C/gas 8.
  • Drizzle a little sunflower oil evenly into two 4-hole Yorkshire pudding tins or two 12-hole non-stick muffin tins and place in the oven to heat through.
  • To make the batter, tip 140g plain flour into a bowl and beat in 4 eggs until smooth.
  • Gradually add 200ml milk and carry on beating until the mix is completely lump-free. Season with salt and pepper.
  • Pour the batter into a jug, then remove the hot tins from the oven. Carefully and evenly pour the batter into the holes.
  • Place the tins back in the oven and leave undisturbed for 20-25 mins until the puddings have puffed up and browned.
  • Serve immediately. You can now cool them and freeze for up to 1 month.

1 cup milk
1 cup sifted flour
1/2 teaspoon salt
Beef drippings from roast beef (about 1/4 cup)

Steps:

  • Preheat oven to hot (450ºF).
  • Beat the eggs with the milk. Sift together the flour and salt and stir this into the egg mixture. Beat the batter until well blended.
  • Discard most of the fat from the pan in which the beef was roasted. Heat an 11x7-inch baking pan or ring mold and pour into it one-quarter cup of the beef drippings. Pour in the pudding mixture and bake ten minutes. Reduce the oven temperature to moderate (350ºF) and bake fifteen to twenty minutes longer, or until puffy and delicately browned. Cut into squares and serve immediately with roast beef.

  • To Make Pudding Batter: In a large bowl combine the flour, salt, milk and eggs. Mix all together with a hand beater just until smooth.
  • Prepare Yorkshire pudding 30 minutes before roast is done. Remove roast from oven and spoon drippings into a 9x9 inch pan, to measure 1/2 cup. This recipe was given to me by my Mam many years ago and it has never let me down.

4 tablespoons of plain flour
A pinch of salt
1 beaten egg
4 tablespoons each of cold water & cold milk

Steps:

  • Sieve the flour into a bowl and add in a pinch of salt. Mix 1 beaten egg, 4 tablespoons each of water & milk into a jug, then add to the flour & salt mixing continually, beat well with a 'wooden' spoon until a smooth runny batter, is obtained. This mix is sufficient for 2 people, if more is required simply multiply the mix.
  • This is the important part, leave the mixture to stand at room temperature for 1 hour.
  • Heat the oven to 230C and when hot add 1/2tsp of fat to each tin and place the tin into hot oven, when the fat is smoking hot then add your mixture.
  • Tip: Keep fat used from previously cooked pork/beef sausages in your fridge until required, this adds a fantastic flavour.
  • Cook in the hot oven for approx 15-20 minutes if using small bun tins and 30-35mins if using large tins.
  • Enjoy!!
