75 g soft butter (plus extra for greasing and serving)
4 ripe bananas (medium sized) (mashed up)
200 g soft brown sugar
1 egg (beaten)
1 tablespoon vanilla extract
1 teaspoon bicarbonate of soda
1 pinch salt
170 g spelt flour (see notes for alternatives)

Steps:

  • Preheat the oven to 180C/160C fan/Gas 4. Grease a 13 x 23-cm/ 9 x 5 inch bread tin. (I used my largest loaf tin).
  • Pour the mashed bananas into a big mixing bowl. Mix in the butter, sugar, egg and vanilla extract.
  • Add the bicarbonate of soda and salt and mix in the flour last. Pour into the prepared tin.
  • Bake for 1 hour, remove and cool, then serve in slices with a little butter.

1 1/3 cups sugar
1/2 cup butter, softened
2 eggs
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon baking powder
2 cups all-purpose flour
1 teaspoon vanilla
1 1/4 cups mashed ripe bananas
3/4 cup broken pecans

Steps:

  • Cream sugar and butter.
  • Add eggs, one at a time, mixing well after each addition - use a mixer.
  • Stir baking soda into buttermilk and add to mixture.
  • Sift baking powder with flour and blend into creamed mixture.
  • Add vanilla and banana and mix.
  • Stir in pecans.
  • Pour into greased and floured 9"x5" loaf pan. (May also use 4 mini loaf pans.).
  • Bake at 300 degrees F for about 1 1/2 hours or until loaf tests done with a toothpick. (Bake for 50-60 minutes for mini loaves.).
  • Cool for 20-30 minutes before removing from pan.

Very easy Spelt Banana Bread recipe. Perfectly soft and moist. You can eat it as a coffee cake or a snack. The best homemade healthy banana bread recipe ever!

2 cups whole spelt flour
2 1/2 tsp aluminum-free baking powder
1/2 tsp salt
4 very ripe bananas, peeled and broken into chunks
2 eggs, beaten
1/3 cup milk
1/4 cup maple syrup
1/4 cup + 1/2 Tbsp, coconut oil melted
1 tsp vanilla extract

Steps:

  • Preheat the oven to 375 F. Oil the loaf pan with 1/2 tablespoon of coconut oil.
  • In a medium bowl, combine the flour, baking powder, and salt. Mix to combine.
  • Place the banana chunks into a large bowl and mash them with a fork. If you are using frozen bananas, make sure they have thawed completely.
  • To the bowl with the mashed bananas, add the eggs, milk, maple syrup, 1/4 cup of melted coconut oil, and vanilla extract. Mix until well combined. See the notes.
  • Add the dry ingredients to the wet ingredients and stir until everything is moistened but make sure not to overmix.
  • Pour the batter into the loaf pan and place the pan in the oven. Bake for 45 to 50 minutes or until the cake tester comes out clean.
  • Remove the loaf pan out of the oven and place it on a cooling rack. When the banana bread is cool enough to handle, take it out of the loaf pan.
  • The banana bread tastes best when it's slightly warm.

The recipe is the result of a lot of testing and tweaking of other recipes to come up with a banana bread healthy enough to eat everyday but still tasty enough to taste like a treat. I use white whole wheat because it is closer in taste to white flour. This produces a very moist product. For a drier consistency use only 3 bananas.

2 eggs
3 bananas, very ripe and mashed
1 tablespoon vanilla
2 tablespoons vegetable oil

Steps:

  • Preheat oven to 325 and grease a bread pan. Set aside.
  • In a mixer, combine sugar and eggs and beat on medium speed until thick and light - about 5 minutes. Mix in bananas, vanilla, oil and buttermilk.
  • Combine flour, baking powder, baking soda and salt. Add the flour mixture to wet ingredients and stir until just combined.

The inspiration for this recipe came from a blog called The Southern Lady Cooks. I love banana bread, but banana and pumpkin bread is out of this world delicious. I love spelt flour and use it sometimes in place of regular all-purpose flour. I place the loaves into a cold oven and find that the bread turns out more moist this way and doesn't have such a large crack down the middle.

3 cups organic white spelt flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon kosher salt
1 teaspoon ground ginger
1 1/2 teaspoons cinnamon
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1 cup melted organic shortening, cooled
1 cup unrefined unbleached cane sugar
1 cup organic dark brown sugar, packed
4 eggs, lightly beaten
1 (15 ounce) can pumpkin puree
2 bananas, well mashed
1/4 cup real buttermilk

Steps:

  • In a large bowl, add flour, baking powder, baking soda, and spices, stir to combine, then set aside.
  • In another large bowl, add, melted shortening and both sugars and mix well.
  • Add eggs, then beat well until mixture is creamy.
  • Stir in pumpkin puree' and blend well to combine.
  • Add bananas, stir, then add in buttermilk and blend thoroughly.
  • Make a well in center of dry ingredients, then add wet ingredients and stir only until flour is moistened making sure not to over mix.
  • Pour batter into two greased 9 by 5 loaf pans and place both into a Cold oven.
  • Turn oven to 325 degrees and bake for 65 minutes or until a toothpick poked in center of loaf comes out clean.
