BACON SPANISH RICE

I orginally found this in a very old Better Homes and Garden cookbook. It's been my family's favorite for years . . . try it and you'll see why! Use hotter chilis to achieve more spice. The brown sugar can be deleted for less sweetness. The Chili Sauce I use in the US, is a slightly sweet (not hot) sauce, believe it's made by Heinz (small fat jar). I have substituted pureed tomatos here in Mexico and it works great!

8 slices bacon
1 cup onion, finely chopped
1/4 cup green bell peppers or 1/4 cup poblano pepper, chopped
1 (16 ounce) can diced tomatoes
1 1/2 cups water
1/2 cup bottled chili sauce
1 teaspoon salt
1 dash pepper
1 teaspoon brown sugar
1/2 teaspoon Worcestershire sauce
1/4 cup fresh cilantro (optional)
3/4 cup uncooked white rice

Steps:

  • Fry the bacon until crisp.
  • Remove bacon and crumble.
  • Save 1/2 of bacon fat.
  • Saute onion and pepper (in 1/2 of the fat from the bacon) until tender. Add rest of ingredients.
  • Stir, cover and simmer for 45 minutes.
  • Add crumbled bacon before serving.

6 slices bacon, cut up
1/4 cup finely chopped onion
1/4 cup chopped green pepper
3 cups cooked rice (1 cup uncooked)
2 cups canned tomatoes
1 1/2 teaspoons salt
1/8 teaspoon pepper

Steps:

  • In a skillet, fry the bacon until it is crisp; remove from skillet and drain off most of the fat.
  • Add onion and green pepper to bacon fat and cook over medium heat until the onion is yellowed.
  • Add remaining ingredients and cook uncovered over low heat for abou 15 minutes, or until hot.
  • NOTE: you can heat the oven to 400 degrees and combine the cooked bacon, onion and pepper with the rice and tomatoes, salt and pepper, in a baking dish. Bake for 25-30 minutes.
  • ALSO, you can substitute jarred or packaged cooked bacon bits, genuine or soy-imitation.

If you like the kind of spanish rice served in Mexican restaurants, you will LOVE this recipe. Browning the rice gives it that fluffy and nutty taste that makes it so good. The flavor is not meant to be overpowering, so it goes very good with spicy entrees. This recipe was given to me by a friend who makes the best authentic Mexican dishes ever. Enjoy!

2 cups long-grain white rice (Riceland)
1 -2 medium green pepper, sliced
1 medium onion, sliced
1 medium tomatoes, sliced
2 tablespoons tomato & chicken bouillon (Knorr brand, "Caldo de Tomato con Sabor de Pollo", in Mexican food aisle)
1/8 teaspoon garlic salt (to taste)
4 cups water
vegetable oil (no olive oil)

Steps:

  • Pour rice into a deep pot and stir in enough oil so that every grain is coated.
  • Cook rice on medium and constantly stir, using a spatula, until it becomes a light toasted color (20-25 min), be careful not to burn.
  • Add onion and green pepper, cook until they become soft, add more oil if needed.
  • Stir in tomato, cook for 2-3 minute.
  • Tilt pot, remove any excess oil w/ spoon.
  • Sprinkle bouillon and garlic salt over rice (DO NOT STIR).
  • Pour water over rice (DO NOT STIR), then cover.
  • Bring to a boil, then lower heat and cook for 25-30 min, or until most liquid evaporated (DO NOT LIFT LID DURING THIS TIME).
  • Pick out large pieces of veggies w/ a fork and discard, (this step may be omitted if you chopped your veggies, I have picky eaters).
  • *This rice actually tastes better when cooled, and then heated in the microwave, as any remaining liquid is evaporated.

3 tablespoons vegetable oil
2 cups long-grain rice, uncooked
2 large green bell peppers, chopped
2 stalks celery, chopped
2 medium onions, finely chopped
2 teaspoons cumin seeds, crushed
1 -1 1/2 teaspoon salt, to taste
1/2 teaspoon pepper, to taste
1/4 teaspoon garlic powder
6 cups water
1 (8 ounce) can tomato sauce

Steps:

  • In a large pot, heat the oil over medium-high heat.
  • Add in the rice and next 7 ingredients.
  • Cook and stir often until the rice is browned.
  • Add in the water and tomato sauce; stir to combine.
  • Bring to a boil; lower heat to medium; cover and cook 25 minutes or until rice is tender.

This is what Ohioan kids thought was Spanish food...we got it at school cafeteria in the late 50's and 60's. This is a recipe from my late Mother-in-law. Everyone in the family loves it, and now her recipe is being enjoyed by her great Grandkids.It doesn't seem like it will make as much as it will.

1 lb good ground beef
2 medium yellow onions, chopped fine
1 c celery, chopped fine
1 c uncooked, long grain rice, rinsed
1 Tbsp salt
1/4 c sugar
6 c tomatoes, crushed (with hands is fine) and the juice

Steps:

  • 1. Mix all together and bake at 350 degrees for 45 minutes, making sure rice and celery is done. If you have a food processor, the chopping is quicker, but get crushed tomatoes, or just crush them with you hand.

1 1/3 c instant minute rice (up to 1 3/4 cup)
1 Tbsp oil
1/2 c onion, diced
1/2 whole green bell pepper, diced
1 14-oz can(s) crushed tomatoes
1 8-oz can(s) tomato sauce (or 2 cans if desired)
1 tsp salt
1/8 tsp pepper
1 lb ground beef
1 clove garlic, minced
1 Tbsp mustard

Steps:

  • 1. In a large skillet, heat 1 tablespoon oil.
  • 2. Cook onion, green bell pepper, garlic and rice for several minutes, then add ground beef; cook until meat is no longer pink.
  • 3. In a bowl, add mustard, crushed tomatoes and tomato sauce. Mix well.
  • 4. Drain grease from meat mixture.
  • 5. Add tomato mixture.
  • 6. Season with salt and pepper to taste.
  • 7. Cook on low heat, covered, for 20 minutes.
  • 8. Notes: 1 10-ounce can of Rotel can be substituted for the crushed tomatoes. Add shredded cheese at end if desired.

2 garlic cloves, minced
2 tablespoons vegetable oil
1/4 cup onion, finely diced
4 ounces el pato salsa fresca (or tomato sauce if you cant find el pato sauce)
2 1/2 cups chicken broth
1 teaspoon cumin
1 tablespoon chili powder
1/2 teaspoon sea salt
pepper

Steps:

  • in a bowl combine broth, cumin, chili powder, salt & half a can of el pato sauce (if you can't find el pato use regular tomato sauce).
  • brown rice, in hot oil, in a large skillet for approximately 5 minutes flipping occasionally.
  • add diced onion, minced garlic, sauté for 1 minute.
  • add seasoned broth, bring to a boil.
  • reduce heat to low, cover and simmer for 15 minutes. do not check on the rice before the 15 minutes is up, this will allow steam to escape and may make your rice turn out undercooked.
  • most of the water will absorb before the 15 minute time limit but keep covered and continue to steam for the entire 15 minutes. this will make for perfect rice that isnt crunchy.
  • after 15 minutes turn heat off, uncover & flip rice over. recover & let sit until everything else is ready. you can let the rice sit covered for up to 25 minutes which will cook out most of the moisture & leave perfect fluffy rice.
