10 fresh mint leaves, plus sprigs for garnish
2 teaspoons sugar
1 cup fresh blueberries, plus extra for garnish
4 ounces light rum
3 limes, 2 juiced and 1 cut into wedges
6 ounces club soda

Steps:

  • Muddle together the mint and sugar in a cocktail shaker. Add the blueberries and lightly muddle. Add the rum, lime juice and some ice to the shaker and shake vigorously. Fill two tall glasses with ice, then pour 3 ounces club soda into each. Divide the rum mixture evenly between the glasses and stir gently. Garnish with a lime wedge, a few blueberries and a sprig of mint, and serve.

Steps:

  • 1. Add the mint leaves, blackberries, and agave syrup to a cocktail shaker. Using a muddler or the handle of a wooden spoon, muddle the ingredients until the mint is fragrant. Add the ice cubes, rum, and lime juice. Cover and shake vigorously to chill.
  • 2. Fill 2 rocks or highball glasses with crushed ice and strain the liquid into the glasses. Top with club soda and garnish each with a slice of lime.

  • In a Boston shaker, muddle limes, mint leaves, blackberries, and simple syrup until pulverized. Add rum and ice and shake for 10 seconds.
  • Pour contents into a glass (no straining) and top with two ounces of club soda. Stir and garnish with mint leaves and blackberry.

8-10 raspberries
1 lime, chopped into large chunks
2 tsp granulated sugar
2 mint sprigs, leaves picked
ice
100ml white rum
sparkling water, to serve

Steps:

  • Divide the raspberries, lime and sugar between two tall glasses and muddle by gently crushing with a muddler or the end of a bar spoon. The fruits should start to release their juices, which will mix with the sugar.
  • Put half the mint leaves in the palm of one of your hands, then clap the other hand on top of the leaves - this bruises them just enough to release their flavour. Drop the bruised mint leaves into one of the glasses, then repeat with the remaining mint, dropping it into the second glass.
  • Add a handful of ice to each glass, followed by the rum. Stir, then top up with sparkling water. Stir briefly until just combined, then serve.

  • Place ice in beverage shaker then add in the rum, 8 broken up mint sprigs, lime juice and sugar. Shake well and serve over ice in a high ball glass. Top off each glass with a splash of club soda.

I love discovering new flavors of tea. Through traveling both domestically and internationally, I have had to the opportunity to try some of the most exotic and interesting teas. Now lets be honest, the Midwest is not exotic, but we do have some of the most amazing places for food and drink. Not far from our house there is the most amazing tea store called Teavana. I was so overwhelmed the first time I entered the store. For as far as the eye could see there were rows and rows of tea, separated not only by type but also by flavor. I was immediately greeted by someone offering to let me smell any and l of the teas I wanted. Wow, I could not believe all of the options being presented in front of me. I decided on 6 different flavors, a couple within each type of tea. I absolutely love green tea so I could not wait to try the Blackberry Mojito Green Tea I purchased. When I opened my tin, I was immediately hit by the aroma of blackberry and mint, and I knew I would love it. I continued drinking the tea at lunch and dinner for for several weeks, and I still drink it regularly. I knew I wanted to try this flavor combination in other applications such as granola or jam. I worked on the jam for a couple weeks and finally came up with the perfect concoction. It is so delicious on a bagel with a layer of cream cheese topped with the jam. It is my version of a faux danish. Trust me, try this once and you will be making double batches.

1 (7 ounce) package frozen blackberries
3/4 cup sugar
1 cup water, plus
1/4 cup water, for cornstarch mixture
4 sprigs of fresh mint
1/2 lime, juice of
3 tablespoons cornstarch

Steps:

  • In a heavy bottom sauce pan, combine the the blackberries, lime juice, sprigs of mint, sugar and 1 cup of water.
  • Mix the 1/4 cup of water with cornstarch and set aside.
  • Cook over medium heat, stirring frequently until it boils.
  • When the blackberries begin to pop, remove the mint sprigs. Stir the cornstarch mixture vigorously and add to the blackberry mixture.
  • Stir and continue to cook until the jam thickens to the consistency of your preference. Cool and pour into a jar.
  • ***Keep in the refrigerator for up to a week.****.
  • Try it on a bagel with a layer of cream cheese, then top with jam. YUM!
