Steps:
- Heat the oven to 375°F.
- Using an electric mixer, blend the cream cheese in a large mixing bowl to further soften it. Beat in the white sugar and the brown sugar, then beat in the eggs one at a time.
- Add the vanilla extract, spices, salt, pumpkin, and cream, and blend the filling on a low speed until it is smooth.
- Pour the filling into the prepared/panned pie shell and bake the pie on the center rack for 30 minutes.
- Reduce the heat to 350° and continue baking until the pie puffs slightly around the edges and the center is no longer soupy, about another 20 minutes.
- Remove it from the oven and let it cool to room temperature. Cover the pie and refrigerate it for at least 4 hours.
- To prepare the topping, blend the orange juice and cornstarch in a small saucepan until smooth. Stir in the cranberry sauce.
- Bring the mixture to a boil over medium heat, stirring all the while. Let the filling boil for 1 minute, then remove it from the heat and let it cool for 10 minutes.
- Pour 1 1/2 cups of the topping over the pie and smooth it up to the edges with a spoon. Pour the rest of the topping into a serving bowl.
- Chill the pie for 15 minutes before serving, and set out the remaining topping for those who prefer an extra-tart flavor.

Steps:
- Make the pastry: combine the flour, sugar, and salt in a large mixing bowl. Add the butter and mix with a pastry blender or your hands until the mixture resembles coarse crumbs. Pour in the ice water and work it in to bind the dough until it holds together without being too wet or sticky. Squeeze a small amount together, if it is crumbly, add more ice water, 1 teaspoon at a time. Form the dough into a ball, wrap it in plastic wrap, and refrigerate it for at least 30 minutes.
- Sprinkle the counter and a rolling pin lightly with flour. Roll the dough out into a 10-inch circle. Carefully roll the dough up onto the pin and lay it inside a 9-inch pie pan. Press the dough firmly into the bottom and sides so it fits tightly. Trim the excess dough around the rim and pinch the edges to form a border. Place the crust on a sheet pan to catch any spills. Refrigerate until ready to fill.
- Heat the oven to 375 degrees F.
- Filling: Puree the pumpkin in a food processor with the butter and a pinch of salt. Measure 1 1/2 cups puree into a bowl. In another bowl beat the eggs and sugar until the sugar has melted. Add the eggs to the pumpkin puree and whisk well. Add the cream, cinnamon, and nutmeg and stir well to combine. Pour the mixture into the pie shell, and place on the bottom rack of the oven. Brush the pastry with the beaten egg white. Bake until the pie is set but still jiggles slightly, 45 to 50 minutes. Remove from the oven and allow it to cool.
- Meanwhile, put the pecans on a baking sheet and bake them with the pie for about 10 minutes to toast them. Remove them from the oven and let them cool. Thaw the cranberries in a strainer set over a bowl to catch the liquid. Put the cookies, pecans, and cranberries into a food processor and pulse them a few times until they are coarsely chopped. Sprinkle the topping evenly over the cooled pie and serve immediately. Refrigerate leftovers.

Beat in the heavy cream on high speed until stiff peaks form, 2 to 3 minutes. Spread the mixture on top of the pumpkin pie. Refrigerate until set, 1 to 2 hours.
- Melt the cranberry sauce and 1 tablespoon water in a small saucepan over low heat, stirring until smooth, about 5 minutes. Mix the cornstarch with the remaining 1 tablespoon water in a small bowl, then whisk into the cranberry sauce. Bring to a simmer and cook just until thickened, about 30 seconds. Scrape into a bowl and let cool slightly, about 15 minutes. Spread over the cream cheese topping and refrigerate until set, about 30 minutes.
DEEP-DISH PUMPKIN PIE WITH CRANBERRY MARMALADE
I never go wrong with my favorite chef's recipes during the holidays. This is a wonderful pie by Wolfgang... It is a more complex balanced pumpkin pie, but is sure to impress. Making the homemade crust, a cranberry marmalade and pumpkin filling adding a mixture of spices and a splash of burbon, which adds an extra hint of intriguing flavor without an appreciable amount of alcohol.... makes this an extraordinary holiday pie.

Steps:
- Up to 2 days ahead, prepare the Sugar Dough and Cranberry Marmalade
- Marmalada: (Makes about 1 cup).
- Put the sugar, water, orange zest, Grand Marnier, vanilla bean and seeds, cinnamon, and nutmeg in a saucepan. Bring to a boil over medium-high heat. Stir in the cranberries, reduce the heat, and simmer until the berries have softened, 3 to 5 minutes. Set aside to cool for at least 30 minutes. Remove the vanilla bean and cinnamon stick. If making in advance, transfer to a covered container and refrigerate until ready to use.
- SUGAR DOUGH: (Makes enough for 2 pies) (Freeze one).
- Put the flours, sugar, and salt in a food processor fitted with the stainless-steel blade. Pulse to combine.
- Add the butter and pulse 10 to 15 times, until the mixture resembles coarse cornmeal. Add the egg yolks and cream and pulse twice. Pulse in enough of the ice water to form a smooth but not wet dough.
- Gather the dough into a ball and divide it into 2 equal pieces. Flatten each piece into a disk, wrap it individually in plastic wrap, and seal in an airtight freezer bag. Refrigerate 1 piece until ready to make the pie; freeze the other piece for another use.
- Assembly:.
- On a lightly floured work surface, use a rolling pin to roll out the dough into a 13-inch circle. Transfer to a 10-inch deep-dish pie plate. Gently press the dough into the plate and trim the edges with a small, sharp knife. Refrigerate for 30 minutes.
- Meanwhile, preheat the oven to 375 degrees F.
- Line the chilled pie shell with parchment paper or aluminum foil. Fill it with pie weights or dried beans. Bake for 15 minutes. Carefully remove the paper or foil and weights; bake for 10 minutes more. Set aside on a wire rack to cool.
- Spread the Cranberry Marmalade evenly on the bottom of the pie shell.
- For the Pumpkin Filling, in a large mixing bowl combine the canned pumpkin, brown sugar, spices, salt, and pepper. With a wire whisk, thoroughly stir in the eggs, cream, half-and-half, and bourbon. Pour into the pie shell and smooth its surface with a rubber spatula.
- Bake the pie until a wooden toothpick inserted into the center comes out clean, 50 to 60 minutes. Remove to a wire rack and leave to cool to room temperature. Chill in the refrigerator before cutting into wedges and serving.

- To make the pastry, stir the icing sugar and the baking powder into the flour. Rub the butter into the mix with your fingers or an electric mixer until it resembles rough breadcrumbs. Add the egg yolks and the cream and mix until it just comes together. Gather it into a ball, wrap in cling film, flatten into a disc and chill for at least 30 minutes or longer – it will happily sit in the fridge overnight or freeze – defrost before processing further.
- To make the pie shell, roll out the pastry into a disc to the thickness of a £1 coin – about 3mm. You can bring it back to almost room temperature, place it on a floured surface and beat with the rolling pin to even a flatter disc. Then roll it into a 30cm/12inch round.
- Transfer it into a 20cm/9in pie dish or a tart tin. If it breaks, just press the broken off bits back to the main pastry layer. Crimp the edges or cut the surplus. Prick it all over with a fork. Bake it with or without baking beans: the pastry will puff up a bit more if no baking weights are used and it will be flatter and more compact if baked with pie weights – up to you; more pastry or more filling is the choice. Either way, chill the pastry for 30 minutes before baking.
- Preheat the oven to 170C/325F/gas 3. If using baking beans, scrunch up some parchment, place it in the pie dish over the pastry and pour baking beans, pie weights or simply copper and bronze coins on the parchment.

- Preheat the oven to 350°. In a food processor, pulse the gingersnaps with the walnuts until finely ground. Add the melted butter and pulse until the crumbs are moistened. Press the crumbs evenly into a 9-inch glass or ceramic pie plate.
- In a medium bowl, whisk the pumpkin with the brown sugar, honey, ground ginger, cinnamon, salt, ground cloves, eggs and heavy cream. Pour the pie filling into the crust. Bake for 35 to 40 minutes, until the crust is deep brown and the filling is just set around the edges but still slightly jiggly in the center; cover the edge of the crust with strips of foil halfway through baking to prevent burning. Transfer the pie to a wire rack to cool.
- In a medium saucepan, combine the orange juice with the water, granulated sugar and flour and whisk until smooth. Add the cranberries and cook over moderate heat, stirring, until the liquid is thickened and glossy and the cranberries just begin to burst, about 5 minutes. Carefully pour the hot cranberry glaze over the pie and refrigerate until well chilled. Sprinkle the walnuts on top of the pie just before serving.
