This recipe was printed in yesterday's newspaper and originally comes from a book called "Chocolate Holidays." I haven't tried it yet, but it sounds wonderful!

4 ounces bittersweet chocolate (use the best quality you can find) or 4 ounces semisweet chocolate, chopped into small pieces (use the best quality you can find)
1 cup heavy cream
1 1/2 teaspoons instant espresso powder
3 -4 teaspoons Irish whiskey
2 eggs
2 tablespoons sugar
4 teaspoons sugar
1/2 teaspoon vanilla extract

Steps:

  • To make the mousse, place the chocolate, 1/3 cup cream and 1/4 tsp espresso powder in a heatproof bowl. Set the bowl in a skillet of barely simmering water. Stir frequently until the chocolate is completely melted and smooth. Remove the bowl from the skillet, stir in the whiskey and set aside. (You can use a double boiler instead of the bowl and skillet.).
  • In a heatproof medium bowl, whisk the eggs with 1 TB water and 2 TB sugar until well blended. Set the bowl in the skillet and whisk the eggs constantly (to prevent from scrambling) over hot (not simmering) water until they register 160 degrees on a thermometer. Remove the bowl from the skillet and beat at high speed with an electric mixer until the eggs have a texture like softly whipped cream, 3--4 minutes.
  • Fold one-quarter of the eggs into the chocolate. Scrape the chocolate mixture over the remaining whipped eggs and continue to fold just until evenly incorporated. Divide the mousse among 6--8 ramekins. Chill at least 1 hour, or unitl set, before serving.
  • In a chilled mixing bowl with chilled beaters, beat the remaining 2/3 cup of cream with the vanilla, the remaining 4 tsp sugar and the remaining 1 1/4 tsp espresso powder until nearly stiff. Top each mousse with a dollop of cream before serving.

A creamy chocolate mousse flavored with Irish cream. I really didn't know I could make something so good! I have also substituted dry gin for the Irish cream with delicious results.

4 ounces dark chocolate, chopped
3 eggs, separated
1 tablespoon Irish cream liqueur
1 cup whipped cream
chocolate shavings

Steps:

  • Melt the dark chocolate in a small saucepan over low heat. Remove from heat and allow to cool. In a bowl, beat the egg yolks and stir in the melted chocolate and Irish cream. Fold in 1/2 of the whipped cream.
  • In a separate bowl, beat the egg whites until stiff. Fold the egg whites into the chocolate mixture. Pour the mousse into serving glasses and garnish with remaining whipped cream and chocolate shavings before serving.

1 cup semi-sweet chocolate chips
1/2 cup sugar
1/4 cup water
2 eggs
2 tablespoons coffee-flavored liqueur
1/2 teaspoon instant coffee granules
1 cup whipping cream, whipped
whipped cream (additional)
toasted almond

Steps:

  • Melt chocolate over very low heat and let cool slightly.
  • Combine sugar and water in a saucepan and bring to boil, stirring,until sugar is dissolved.
  • Beat eggs on medium speed and gradually add chocolate into eggs; stir in liqueur and coffee granules.
  • While beating at medium speed, slowly pour hot sugar syrup in a thin stream over egg mixture and beat until well blended.
  • Fold in the whipped cream- takes some time to incorporate.
  • Chill, covered, for at least two hours or overnight.
  • Spoon into 4 parfait dishes.
  • Add additional whipped cream (and toasted almonds if desired).

1/2 liter milk, boiled and cooled
5 egg yolks
125 g sugar
12 g gelatin, powder
150 ml cream, whipped
50 ml Irish whiskey
20 ml coffee, decoction concentrate

Steps:

  • Mix the yolks sugar and milk in a bowl.
  • Cook it on double boiler until the mixture coats the spoon.
  • Mix the the gelatin in cold water and heat it to get rid of the froth and impurities collecting on the top.
  • Cool and add to the egg mixture.
  • Chill on ice. Stir till it starts to set on the sides of the bowl.
  • Add the coffee decoction and whiskey, fold in the cream.
  • Pour into wine glass; chill for 45 minutes.
  • Serve with cream rosette, a cherry and chocolate triangles.

Another favorite recipe using Bailey's Irish Cream. Chocolate Mousse is great, but adding a little Bailey's makes it decadent! I've had this recipe for years and can't remember where my friend got it, but I'm glad she shared.

16 ounces semisweet chocolate
4 ounces unsweetened chocolate
1/2 cup Baileys Irish Cream
1/2 cup heavy cream
4 tablespoons brewed espresso or 4 tablespoons coffee
2 tablespoons sugar
4 tablespoons water
1/2 cup egg white (about 4 eggs)
1 quart heavy cream
3/4 cup sugar

Steps:

  • Melt chocolate, Irish cream and espresso over low heat.
  • In separate pan, simmer sugar and water until temperature on a candy thermometer reaches 224 to 230°F., soft ball stage. (Remove from heat at 224°F; mixture will begin to caramelize at 232°F.).
  • Whip egg whites until stiff and glossy. Add sugar syrup to whites and continue to whip about 8 minutes until eggs have increased in volume and mixture has cooled; fold into chocolate mixture.
  • Whip heavy cream and sugar until stiff peaks form. Mix with chocolate mixture/eggs/sugar syrup mixture.
  • Pour mousse into molds or serving dish. Allow to set in fridge. Garnish with chocolate shavings and fresh seasonal berries.

I adjusted the preparation of a recipe of the same title that I found on In Mama's Kitchen website, to boost the chocolate taste. I tried making this using a dried premium cocoa powder and it was OK; it was much better using melted dark chocolate because it had a depth and richness that was lacking with the dried cocoa powder. The original recipe called for 2 teaspoons creme de menthe, but I thought it was a bit overpowering, so I cut it back to 1 teaspoon and thought it was just right, a subtle hint of the mint yet not so proiminent that the other flavors were lost.

1 cup fresh brewed strong coffee
2 tablespoons dark chocolate (not powdered cocoa mix)
1 ounze Irish whiskey
whipped cream (the kind from a can)
1 teaspoon creme de menthe
chocolate shavings (optioinal) or cocoa powder (to garnish, optioinal)

Steps:

  • Place dark chocolate in Irish coffee mug and microwave until melted, about 1 to 1 1/2 minutes. Add hot brewed coffee and stir well, until chocolate and coffee are well blended. Add whiskey.
  • Top with a dollop of whipped cream, then drizzle creme de menthe on top of the whipped cream mound. If desired, garnish with chocolate shavings or cocoa powder.
  • Serve hot.

  • Place the heavy cream and the coffee beans in a small saucepan set over medium-low heat. Bring the cream to scalding, then remove from the heat and cool to room temperature. Strain out the coffee beans, discard the beans, and chill the cream, as well as a large mixing bowl and the beaters of a mixer.
  • Once fully chilled, whip the heavy cream to soft peaks and keep chilled until ready to incorporate into the mousse.
  • Melt together the chocolate, Irish cream and butter over a double boiler. Stir until smooth, and cool to just warm to the touch. Keep the saucepan of simmering water on the stove.
  • Combine the egg yolks and the 2 tbsp of sugar in a mixing bowl. Set the bowl over the saucepan of simmering water and whisk continuously until the sugar dissolves.
