WARM ROASTED MUSHROOM, GREEN ONION AND CHEDDAR DIP
from Calgary Herald - haven't yet tried, but sounds delicious. This warm and savoury dip, rich with melted cheese and roasted mushrooms, is easy to make and take. You roast the mushrooms in advance, stir the whole thing together, cover and refrigerate, then heat up just before serving, releasing the heady aromas of thyme and rosemary.

A crispy, tasty alternative to deep fried mushroom. Easier than frying as well. Make a double batch, freeze on a baking sheet and place in a plastic bag for unexpected guests.

- Wash your mushrooms. I rinse mine under cold water and then pat them dry thoroughly with paper towels. I also remove the stalks but this is personal preference!
- Get three bowls - in one, place your milk, in one, the plain flour, and in the third, combine your breadcrumbs and herbs.
- One at a time (it helps to use tongs to save your fingers getting messy!), dip each mushroom in the flour, then the milk, then the breadcrumbs, making sure it's coated all over. Repeat for all of your mushrooms.
- Fill a small saucepan 1/3 of the way up with oil and put on a medium heat. To test if it's the right temperature, drop a small bit of the breadcrumb batter into your pan - if it rises straight to the top, you're good to go.
