I love to make paella! It is such a great dish for parties and can be done just as easily inside as outside. I also love that it teaches so much technique and timing. If you can master paella, there isn't much you can't cook!

1/2 Spanish onion, roughly chopped
2 cubanelle peppers, roughly chopped
1 red bell pepper, roughly chopped
1 jalapeño, roughly chopped
5 cloves garlic, smashed
1/2 small bunch cilantro, leaves and tender stems roughly torn
Extra-virgin olive oil
12 large head- and shell-on shrimp or prawns, cleaned
1 pound Morcilla sausage, sliced into rings
1 large vine-ripened tomato, grated on the large holes of a box grater
Kosher salt and freshly ground black pepper
1 tablespoon tomato paste
2 cups short-grain rice (preferably Calasparra)
1 cup dry white wine
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1 quart chicken stock
Roughly torn cilantro, for serving

Steps:

  • In the bowl of a food processor, pulse the onions and cubanelle and bell peppers to break them down. Pulse in the jalapeño and garlic, then add the cilantro and puree into a coarse mixture. Set the sofrito aside.
  • In two 10-inch paella pans (you can also use a large paella pan, if you like), heat a drizzle of olive oil over medium heat. Add the shrimp and sear on both sides until three-quarters of the way cooked, 3 to 4 minutes total, then transfer to a plate. Add the sausage and cook, turning once, until the casings are crispy, then transfer to a plate. Add the reserved sofrito, the grated tomatoes and a good pinch of salt and cook, stirring occasionally, until any liquid has evaporated and the sofrito begins caramelize.
  • Stir in the tomato paste, then add the rice and toast briefly. Deglaze the pan with the wine. Add the cumin, paprika and reserved sausage, then slowly add half of the stock and stir until the liquid comes to a simmer. Repeat with the remaining stock, then let the paella cook, undisturbed, until the rice is tender or until the liquid is almost gone, about 10 minutes.
  • Meanwhile, remove the shells from the shrimp, leaving the heads intact. When the rice is tender, scatter the shrimp over the top and cook until the liquid has evaporated and the rice is crisp on the bottom, about 5 minutes more. Drizzle with olive oil, top with cilantro and serve.

10 Minute Paella image

This is a recipe given to me by my sister in law. By using minute rice, small scallops or shrimp, and spicy thinly sliced pepperoni, dinner will be on the table in less than 10 minutes.

2 tablespoons oil
1/2 lb small shrimp or 1/2 lb bay scallop
2 garlic cloves, crushed
1 1/3 cups Minute Rice
1 tablespoon cornstarch
1 1/4 cups chicken broth
1 (14 1/2 ounce) can diced tomatoes
1/2 cup pepperoni, thinly sliced
1/2 cup frozen green pea
1/4 teaspoon Tabasco sauce

Steps:

  • Saute shrimp (or scallops) and garlic in oil until mostly cooked, about 2 minutes.
  • Stir in cornstarch and cook 1 minute, stirring frequently. Add broth, tomatoes, peas, pepperoni and tobasco. Stir together.
  • Add minute rice, stir and cover.
  • Remove from heat and let stand 5 minutes.
  • Fluff with fork and serve.

Minced fresh parsley
6 tablespoons olive oil
1 cup minced onions
1 each small-sized sweet red and green bell peppers, seeded, and cut into strips
1 cup drained, chopped canned tomatoes
1 tablespoon minced garlic
1 tablespoon minced fresh thyme
1 (2 1/2 pound) chicken, cut into serving pieces, patted dry
Salt and freshly ground black pepper
3 chorizos, sliced into 1/4-inch thick half circles
1/2 cup dry white wine
3 cups long-grain rice
1/4 teaspoon ground saffron or saffron threads
5 to 6 cups simmering chicken stock
12 extra-large shrimps in their shells, shelled and deveined, leaving tails intact
12 hard-shelled clams, such as littlenecks, scrubbed
12 mussels, scrubbed
1 cup peas
Lemon wedges, for garnish

Steps:

  • Make the sofrito: In a heavy 12-inch skillet heat 3 tablespoons olive oil until hot, add the onions, and pepper strips and cook, stirring, for 5 minutes. Add tomatoes, garlic, and thyme and cook, stirring for 5 minutes more, until most of the liquid in the pan evaporates and the mixture is thick.
  • Season the chicken with salt and pepper. In the skillet heat 3 tablespoons of the olive oil over moderately high heat until hot. Add the chicken and cook it, turning. Add sausages and cook until lightly browned. Transfer to a plate and deglaze pan with 1/2 cup dry white wine.
  • About a 30 minutes before you plan to serve the paella, preheat the oven to 400 degrees F. In a 14-inch paella pan or shallow casserole at least 14-inches in diameter, combine the sofrito, rice, and the saffron. Pour in 5 cups simmering stock and, stirring constantly, bring to a boil over high heat. Remove the pan from the heat immediately and season with salt. Arrange the chicken, sausage, shrimp, clams, and mussels on top of the rice. Set the pan on the floor of the oven or the lowest shelf and bake uncovered for 20 minutes. Scatter the peas at random over the whole and bake for 5 to 10 minutes more or until all the liquid has been absorbed by the rice and the grains are tender but not too soft. If necessary, add the remaining cup stock, if the rice needs to be more soft. Do not stir the paella once it goes in oven.
  • Let paella stand at room temperature covered with a cloth for 5 minutes before serving. Garnish with the lemons and parsley.

1 pound snow peas
3 cups short-grain white rice

6 to 10 oysters, cut in half if large

Steps:

  • Put the oil in a very large skillet over medium-high heat. Brown the chicken pieces and sausage, sprinkling with salt and pepper. Remove to a plate.
  • Lower the heat a bit and add the onion; cook, stirring occasionally, until soft, about 5 minutes. Add the snow peas and cook a minute over medium-high heat.
  • Add the rice and cook, stirring, until glossy, 2 or 3 minutes. Stir in the saffron, tomatoes, and oysters; return the chicken and sausage to the mix.
  • Add 5 cups water (remember: very large skillet!), stir to mix, and bring to a boil. Simmer -- you want bubbles, but not furious ones -- undisturbed, until the rice is cooked, adding a little more water if necessary. Serve hot or warm.

This recipe comes from a 1960's newspaper clipping in my grandmother's recipe box. Supposedly the recipe from the restaurant at the Hotel Al Andalus, Torremolinos, Espana.

6 chicken thighs, cut in half
salt & freshly ground black pepper
2 tablespoons extra virgin olive oil
1/2 teaspoon saffron threads or 1 teaspoon turmeric
7 cups chicken broth
1 (12 ounce) box frozen green beans, thawed
1 (14 ounce) can artichoke hearts, drained and chopped into halves
2 large onions, minced
4 garlic cloves, minced
1 teaspoon red pepper flakes, crushed
1 teaspoon smoked paprika (pimenton de la Vera)
1 (28 ounce) can Italian plum tomatoes, drained, seeded and chopped
3 cups short-grain rice (preferably the type called calasparra)
1/2 lb spanish smoked style chorizo sausage, cut into 1/2 inch slices
1 red bell pepper, roasted, peeled, seeded and thinly sliced
12 medium shrimp, peeled and deveined
1 cup frozen peas, thawed
12 small fresh clams or 12 small fresh mussels, cleaned
lemon wedge (garnish)

Steps:

  • Season the chicken thighs with salt and pepper. Add 1 tbsp oil to each of two 12-14 inch skillets or paella pans set over medium-high heat. When oil is hot, add half of the chicken thighs to each pan and brown on both sides, 15-20 minute Transfer to platter.
  • While the chicken is browning, toast the saffron threads in a 2 qt saucepan. Remove from heat and crush the threads with the back of a spoon. Add 1/2 cup chicken broth and bring to a simmer over medium heat. Remove from heat and let steep for 10 minutes. Add 5 1/2 cups additional broth to the saffron infusion and bring to a simmer, hold until needed over low heat.
  • If using turmeric instead of the saffron threads, pour 6 cups chicken broth into a 2 qt sauce pan, add the turmeric, and bring to a simmer, hold until needed over low heat.
  • Divide the green beans and artichoke hearts between the two pans and saute for 5-6 minutes. Transfer beans and hearts to the platter with the chicken.
  • Remove all but 1 tbsp of fat from each pan and divide the onion and garlic between the pans. Saute until the onion is translucent. Divide the pepper flakes and the smoked paprika between the two pans and saute for 30-60 seconds. Add the tomatoes between both pans and saute until the liquid from the tomatoes has evaporated and the mixture is thickened, about 5-7 minutes more.
  • Sprinkle 1 1/2 cups of rice over the onion mixture in each pan. Pour 3 cups of the hot broth evenly over each pan of rice, then arrange the chorizo, green beans and artichoke hearts on the rice. Nestle the chicken thighs into both pans and bring to a boil.
  • Reduce heat and simmer rapidly until the rice appears on the surface of the mixtures, about 5-6 minutes. Arrange the roasted red pepper slices over both pans. Divide the shrimp between both pans and push the shrimp down into the rice.
  • Continue simmering until all the liquid has been absorbed and the rice is al dente, another 8-10 minutes. If all the liquid has been absorbed but the rice is not done, add a little more broth and cook a few minutes more.
  • Cover the pans with aluminum foil and cook gently for another 2 minutes to ensure that the top layer of rice is cooked evenly. With the pans still covered, raise the heat to medium high and cook until the bottom layer of rice begins to brown. You may hear rice crackling, which is normal, but if the rice begins to burn, remove the pans from the heat immediately.
  • Check the chicken for doneness. Sprinkle the peas over each pan and let stand, covered, for 5-10 minutes.
  • While the paella is standing, bring the remaining chicken broth (or water if you used all of the broth earlier) to a boil in a medium saucepan and add the clams or mussels. Cover and simmer for 3-4 minutes or until the clams/mussels have opened. Arrange the opened clams/mussels over each pan of paella, discarding any that did not open. Serve directly from the pan with wedges of lemon to squeeze over the rice.

2 pounds skinless, boneless chicken breasts, cut into 2 inch pieces

3 cloves garlic, crushed
1 teaspoon crushed red pepper flakes
2 cups uncooked short-grain white rice
1 pinch saffron threads
1 bay leaf
½ bunch Italian flat leaf parsley, chopped
1 quart chicken stock
2 lemons, zested
2 tablespoons olive oil
1 Spanish onion, chopped
1 red bell pepper, coarsely chopped
1 pound chorizo sausage, casings removed and crumbled
1 pound shrimp, peeled and deveined

Steps:

  • In a medium bowl, mix together 2 tablespoons olive oil, paprika, oregano, and salt and pepper. Stir in chicken pieces to coat. Cover, and refrigerate.
  • Heat 2 tablespoons olive oil in a large skillet or paella pan over medium heat. Stir in garlic, red pepper flakes, and rice. Cook, stirring, to coat rice with oil, about 3 minutes. Stir in saffron threads, bay leaf, parsley, chicken stock, and lemon zest. Bring to a boil, cover, and reduce heat to medium low. Simmer 20 minutes.
  • Meanwhile, heat 2 tablespoons olive oil in a separate skillet over medium heat. Stir in marinated chicken and onion; cook 5 minutes. Stir in bell pepper and sausage; cook 5 minutes. Stir in shrimp; cook, turning the shrimp, until both sides are pink.
  • Spread rice mixture onto a serving tray. Top with meat and seafood mixture.
