QUICK & EASY REFRIGERATOR PICKLES
Refrigerator pickles are quick and easy to make -- no sterilizing jars or special equipment required.

Steps:
- Combine the vinegar, salt and sugar in a small non-reactive saucepan (such as stainless steel, glass, ceramic or teflon) over high heat. Whisk until the salt and sugar are dissolved. Transfer the liquid into a bowl and whisk in the cold water. Refrigerate brine until ready to use.
- Stuff the cucumbers into two clean 1-quart jars. Add the coriander seeds, garlic cloves, mustard seeds, red pepper flakes, dill sprigs, and chilled brine into jars, dividing evenly. If necessary, add a bit of cold water to the jars until the brine covers the cucumbers. Cover and refrigerate about 24 hours, then serve. The pickles will keep in the refrigerator for up to one month.

this is a brinedpickle recipe it takes 3 months that said this is from darlene kossman im writing the recipe as given in the directions its not cooked and is similar to russian brined pickles its very old and alot of experience is probably needed for these pickles they are going to fermint just know this and hopefully im not leaving out an importent step .

Steps:
- start with 1 jar at a time
- pack in jars whole cucumbers
- add 1 cup vinegar
- 1 tablespoon salt
- 2/3 teaspoon whole pickling spice
- 1/2 teaspoon powdered alum
- 1/2 teaspoon horseradih
- fill with cold water and seal
- DONT use until afteer 3 months
- then 24 hours before using
- drain and rinse in cold water
- slice pickles long ways
- in tupperware container.
- add 1 cup sugar to quart jar used
- and shake well.
- makes own juice
- and is now ready to eat.
- everything is cold DO NOT heat anything.
- i shake these in tupperware container alot of times to get sugar dissolved

SPICY QUICK PICKLES

- Stuff the cucumbers, chiles and scallions into a 1-quart glass or plastic jar with a tight-fitting lid.
- In another 1-quart jar, combine the water, vinegar, salt, sugar and sambal oelek. Close the jar and shake vigorously until the salt and sugar dissolve. Pour over the cucumbers, cover and refrigerate for at least 6 hours (preferably overnight) or up to 1 month.
DILL PICKLES BY THE JAR
This was the first recipe for dill pickles I ever made, and it's still a favourite. I like the technique it uses of making the pickles right in the canning jars, rather than in a crock. I've since adapted the method to any fermented pickles that I make. This makes one quart of pickles; you simply multiply the brine for the number of quarts of cucumbers that you have. I also use this brine to make pickled mixed green beans, wax beans and carrots cut in pieces the same general size and shape as the beans.

- Using a soft vegetable brush, thoroughly scrub the cucumbers in cool running water. Cut 1/16 inch off the blossom end. Discard any cucumbers that are bruised or damaged.
- Put however many quart canning jars that you need into a canner and cover them with water; bring to a boil and boil for 10 minutes.
- Make the brine with the water, vinegar and salt; put them in a pot and heat until the salt is dissolved.
- Put a couple good heads of dill seed into each sterilized jar.
- Seed heads should be well-formed but still green.
- Add a clove of garlic and/or a hot pepper if desired.
- Pack the jar with the cucumbers.
- I find it easiest to start with the jar on its side, laying some of the larger cucumbers along the bottom then keep stacking on top of them. Use the end of a large wooden spoon to gently push more cukes in once it gets snug in there. Then repeat with a second row of stacked cukes, picking ones that will fit in without sticking too far up in the jar. There may then be room to lay a couple on top.
- Pour the hot brine over them, and cap at once with a sterilized lid.
- Do not hot water process.
- Store jars on newspaper in case they overflow while fermenting.
- Can be opened in 6 weeks but much better after 6 months!
QUICK REFRIGERATOR DILL PICKLES
In just one week you can have some of the best homemade pickles you'll ever taste. These are incredibly easy to make and will last for a month in the refrigerator. The best part is that no special equipment is needed!

Steps:
- Clean the cucumbers well and then snip off the ends. Then cut into either spears or thin rounds. Stuff the cucumbers into two clean 1-quart glass jars. Divide the garlic, dill, bay leaves, coriander, peppercorns, mustard seeds and crushed red pepper flakes (if using) between both jars and set aside.
- In a medium saucepan, combine the water, salt and sugar. Set over moderate heat and bring to a simmer. Cook until the sugar and salt have dissolved. Remove from heat and cool down to room temperature.
- Once cooled, pour the mixture between both jars up to the very top. Seal tightly and place in the fridge for at least 1 week or up to 1 month.

- Place heads of dill and garlic in hot sterilized quart jar. Fill with small cucumbers to within 1 inch of top.
- Brine: Combine water, venegar and salt in saucepan.
- Bring to a boil.

MICROWAVE DILL PICKLES

Steps:
- Use a 1 quart canning jar and fill with cucumbers, 1 clove garlic, 3/4 teaspoon dried dill, 1/8 teaspoon turmeric and 1 hot pepper if using.
- Use a 4 cup microwave safe glass bowl and add 1 1/2 cups of water, 1/2 cup cider vinegar and 2 teaspoons salt. Place in microwave for 4 minutes (until it boils).
- Remove liquid from microwave, pour it over the cucumbers in the jar. Make sure the cucumbers are covered with liquid. If not, add water to cover.
- Use a piece of plastic wrap to loosely cover the jar. Microwave for 3 minutes. Place the cap on the jar and let cool to room temperature. Place in refrigerator. Pickles should be ready to eat when cold.
