ACAI-BANANA SORBET
Acai is the purple, berrylike fruit from a palm tree that grows in Central and South America. It's packed with antioxidants and healthy omega-3 fatty acids. We love it partnered with frozen banana for a low-calorie, low-carbohydrate sorbet.

- Cut each banana into 6 chunks, and freeze until rock solid, preferably overnight.
- With the acai inside the packet, crush the puree into smaller pieces. Process the pieces in a food processor to a fine slush. Add the frozen banana chunks, coconut oil and maple syrup, and begin to process (the food processor may jolt in the very beginning). As the bananas break down and combine with the acai, the mixture will look crumbly, then gooey and eventually smooth and slightly slushy, like a sorbet. Stop the food processor frequently to scrape down the side of the bowl and break up any clumps. Serve right away, or scrape into a container and freeze until ready to serve.
AMAZING BANANA SORBET
This recipe is great for hot summer afternoons, or when you're just craving a cold snack! It is easy to make and uses only 3 simple ingredients. For one cup of mashed bananas, you will need about 3 bananas.

- In a small saucepan, stir together sugar and water. Bring to a boil, then remove from heat and allow to cool.
- When the sugar syrup is cool, stir in bananas. Pour into a freezer - safe baking dish. Freeze for 3 to 4 hours, until set at the edges.
- Remove from the freezer and transfer to a mixing bowl. Use an electric mixer to beat until smooth. Return to the freezer until gently set, at least 2 hours.

- Put everything into mini food processor, pulse about 5 times to chop. Than blend for about 2 seconds at a time until consistency of soft serve. Add more kefir or milk if desired. in tiny amounts, 1 teaspoon at a time.

- Mash bananas until smooth, stir in lemon juice.
- In a small saucepan, bring water and sugar to a boil over high heat; reduce heat to medium and simmer for 2 minutes, until slightly thickened. Let cool to room temperature. (to speed up cooling of syrup place in fridge for 40 - 45 minutes.).
- Stir cooled syrop into banana puree.
- Freeze in ice cream maker according to manufacturers directions.

- Place in a shallow pan covered with plastic wrap for at least 4 hours.

This very simple recipe was found on the internet with the stipulation "...super easy to make -- as long as you have a juicer." Well, all you really need is a good, ol' fashioned potato masher & you're on! This will melt quickly, so make just enough to eat right away, or you'll need to stash some away in the freezer!
