1 pound bulk mild Italian sausage
1 ¼ teaspoons crushed red pepper flakes
4 slices bacon, cut into 1/2 inch pieces
1 large onion, diced
1 tablespoon minced garlic
5 (13.75 ounce) cans chicken broth
6 potatoes, thinly sliced
1 cup heavy cream
¼ bunch fresh spinach, tough stems removed

Steps:

  • Cook the Italian sausage and red pepper flakes in a Dutch oven over medium-high heat until crumbly, browned, and no longer pink, 10 to 15 minutes. Drain and set aside.
  • Cook the bacon in the same Dutch oven over medium heat until crisp, about 10 minutes. Drain, leaving a few tablespoons of drippings with the bacon in the bottom of the Dutch oven. Stir in the onions and garlic; cook until onions are soft and translucent, about 5 minutes.
  • Pour the chicken broth into the Dutch oven with the bacon and onion mixture; bring to a boil over high heat. Add the potatoes, and boil until fork tender, about 20 minutes. Reduce the heat to medium and stir in the heavy cream and the cooked sausage; heat through. Mix the spinach into the soup just before serving.

1 cup heavy cream
¼ bunch spinach, tough stems removed

Steps:

  • Heat a Dutch oven over medium-high heat. Add sausage and red pepper flakes; cook until crumbly, browned, and no longer pink, about 10 minutes. Drain excess grease and transfer sausage to a bowl.
  • Reduce heat to medium and cook bacon in the same pot until crisp, about 10 minutes. Drain, leaving a few tablespoons of drippings in the pot. 4 large potatoes, unpeeled
1 large onion
1/2 lb thick sliced bacon
4 garlic cloves
3 cups kale
32 ounces chicken broth
2 1/2 cups water
1 1/4 cups half-and-half

Steps:

  • Remove casings from sausage and brown the meat in a skillet, then put in stockpot.
  • Chop up bacon and onions and cook till onions are translucent, then add to stockpot.
  • Slice up potatoes, leave the skins on. Slice potatoe lengthwise, then in half and then into 1/4 inch thick triangles, and add to stockpot.
  • Add Chicken broth, minced garlic and water to stock pot.
  • Boil for 30 minutes or until potatoes are tender.
  • Slice up Kale, removing veins, thinly and add the half and half (after potatoes are tender. Lower heat to a simmer, and simmer for 15 minutes.

1 large russet potato, quartered and sliced
2 tablespoons chicken base
1 quart water
1 (12 ounce) can evaporated skim milk
1 tablespoon olive oil

Steps:

  • Sauté sausage, bacon and red pepper flakes in olive oil until browned, scoop out and set aside.
  • Add onion to pan and sauté until softened.
