Stuffed Mushrooms with Pine Nuts and Golden Raisins image

Mushrooms are stuffed with fontina cheese, pine nuts and golden raisins and then baked until golden brown.

Number Of Ingredients 12

24 large white or cremini mushrooms, wiped clean, stems finely chopped for the filling
2 tablespoons extra-virgin olive oil
Kosher salt
1/4 cup olive oil
1/2 cup finely chopped carrot
1/2 cup finely chopped onion
Kosher salt and freshly ground black pepper
1/2 cup grated fontina cheese
3 tablespoons pine nuts
3 tablespoons chopped golden raisins
2 tablespoons finely chopped fresh flat-leaf parsley
1 cup coarse fresh white breadcrumbs

Steps:

  • Preheat the oven to 425 degrees F.
  • For the mushrooms: If your mushrooms caps are very rounded, trim a very thin slice from the top of the caps to help them sit upright for baking. Toss the mushroom caps with the oil and 1/4 teaspoon salt in a large bowl.
  • For the filling: Heat the olive over medium-high heat. Add the chopped mushroom stems, carrot, and onion and cook, stirring occasionally, until just soft, 6 to 8 minutes. Scrape into a large bowl, season with 3/4 teaspoon salt and a few grinds of pepper and set aside to cool.
  • Add the fontina, pine nuts, raisins and parsley to the cooled mushroom stem mixture. Stir in the breadcrumbs until well moistened.
  • Pack each mushroom with an equal amount of filling and transfer the filled mushrooms to a rimmed baking sheet. Bake until the mushrooms are tender and the filling is brown and crispy on top, about 15 minutes. Let cool 5 minutes before removing from the baking sheet.

1/2 lb bacon, cut into 1-inch pieces
1/2 cup onion, minced
3 tablespoons butter
1/2 lb mushroom, sliced
1 tablespoon flour
1/2 lb zucchini, sliced into coins
1 cup swiss cheese, grated
1/2 teaspoon salt
1/4 teaspoon pepper
3 eggs, lightly beaten
1/2 cup milk or 1/2 cup cream
9 inches pie crusts

Steps:

  • Preheat over to 425 degrees F.
  • Cook bacon until crisp; drain and set aside.
  • Saute onion in butter until wilted. Add mushrooms and zucchini and saute 4 more minutes. Stir in flour and cook 2 more minutes, until thickened. Remove from heat and cool.
  • Place bacon over bottom of pie crust. Top with grated cheese and spoon vegetable mixture over the cheese.
  • Combine eggs, milk, salt and pepper. Pour over vegetables.
  • Bake in preheated oven for 15 minutes. Reduce heat to 300 degrees F and bake 30 minutes longer, or until filling is set and top is lightly browned.
  • Serve warm.

TEMPURA MUSHROOM STUFFED ZUCCHINI BLOSSOMS



Tempura Mushroom Stuffed Zucchini Blossoms image

12 zucchini blossoms, ideally, baby zucchini still attached and fanned out
2 minced shallots
2 cups roughly chopped shiitakes
2 cups roughly chopped cremini mushrooms
1/2 tablespoon minced fresh thyme
1 egg, beaten
2 tablespoons cold butter, chopped
1 tablespoon truffle oil
1 cup edamame
1/4 cup chopped chives
Salt and pepper to taste
2 cups rice flour
1 quart cold soda water
Canola oil to cook

Steps:

  • In a hot saute pan coated with oil, add the shallots and mushrooms and stir. Season and cook soft, about 5 minutes. Drain the mix in a strainer, place on plate and put in the refrigerator. When the mix is cold, squeeze out as much liquid as possible. Check for seasoning and transfer to a food processor and add thyme, egg, butter and truffle oil. Pulse a few times to break the mushrooms and butter into small pieces-do not puree! Transfer to a bowl and fold in edamame and chives. Using a pastry bag or ziploc with end cut off, fill blossoms full. Make tempura batter by whisking the rice flour with the soda water until a pancake batter consistency is achieved. Dip the blossoms in the batter and deep fry at 350 degrees until golden brown and delicious, about 4 to 5 minutes. Season with salt and serve immediately on a decorative platter.

1 1/2 cups walnuts
1 cup all-purpose flour
2 tablespoons sugar
1/2 teaspoon fine salt
5 tablespoons unsalted butter, cut into 1-inch pieces
2 tablespoons olive oil
1 pound mixed wild mushrooms, such as oyster, shiitake and trumpet
3/4 pound white or cremini mushrooms, thinly sliced
Sea salt and freshly ground pepper
2 tablespoons unsalted butter
2 shallots, minced
1 tablespoon chopped thyme
2 1/3 cups freshly grated Parmesan (4 ounces)
1/2 cup shredded Comte or Mahon cheese
3 large eggs
1 1/4 cup heavy cream
2 tablespoons chopped flat-leaf parsley, for garnish
Crisp greens, for serving

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Pulse together the walnuts, flour, sugar and salt to a fine meal in a food processor. Pulse in the butter until it forms to a crumbly dough. Press into the bottom and up the sides of a 9-inch springform pan. Place on a baking sheet and bake until lightly browned, 15 to 20 minutes. Remove and let cool.
  • For the filling: Reduce the oven temperature to 325 degrees F. Heat the olive oil in a large skillet over high heat. Add the wild mushrooms and white mushrooms and season with 1 teaspoon salt and some pepper. Cook, stirring occasionally, until soft, about 5 minutes. Lower the heat to medium; add the butter, shallots and thyme. Cook, stirring frequently, until the mushrooms are tender, about 10 minutes more. Adjust the seasoning and set aside.
  • Combine the Parmesan and Comte cheeses in a small bowl and set aside. Scatter half of the mushrooms and half the cheese evenly over the crust. Whisk the eggs, milk, heavy cream and 3/4 teaspoon salt in a large bowl until smooth and frothy. Pour half the egg mixture over the mushrooms. Repeat with the remaining mushrooms and egg mixture and top with the remaining cheese.
  • Bake the quiche until golden brown on top and just set with a little wiggle in the very center, 50 to 60 minutes. Run a clean paring knife between the crust and the pan to separate. Let cool slightly for 25 minutes.
  • Garnish the quiche with parsley. Carefully remove the springform pan ring. Cut the quiche into wedges and serve warm or at room temperature with crisp greens.

1/2 teaspoon fine salt
1 stick unsalted butter, cut into 1-inch pieces
3 tablespoons olive oil
1 pound mixed wild mushrooms, such as oyster, shiitake, and trumpet
3/4 pound white or cremini mushrooms, thinly sliced
Sea salt and freshly ground pepper
3 tablespoons unsalted butter
2 shallots, minced
1 tablespoon chopped fresh thyme
3 1/3 cups grated Parmesan
1/2 cup shredded Comte or Mahon cheese
3 large eggs
1 cup whole milk
3/4 cup heavy cream

1/2 cup raw pumpkin seeds
1/2 cup raw pistachios
1 cup balsamic vinegar
1/4 cup olive oil, plus 2 tablespoons
1/2 small red onion, chopped fine
1/2 cup quartered shitake mushrooms
4 to 6 half-dried figs, halved
1/4 cup Marsala wine
2 tablespoons chopped fresh basil
1 scallion, chopped fine
1 teaspoon salt
1/2 teaspoon black pepper
Pita chips, as garnish

Steps:

  • Put seeds and nuts in a medium bowl and cover with water. Soak the nuts for about 6 hours. Drain, rinse, and drain again.
  • Reduce vinegar in a small, heavy bottom of saucepan, on medium heat, until syrupy, about 30 minutes.
  • In a saute pan, heat 1/4 cup of the olive oil over high heat. Add in the onions, lower to medium high and saute for about 2 to 3 minutes. Add in the mushrooms and continue to saute. Once the onions and mushrooms are browned, remove from heat.
  • Rehydrate the figs in the Marsala on low heat in a small pan for about 10 minutes. Strain, reserving figs and Marsala and set aside.
  • In food processor, add in the nuts, remaining oil, mushrooms, onions, basil, scallions, salt, pepper, and the Marsala drained from the figs. Blend well and adjust seasoning. Make sure the mixture is smooth.
  • Spoon mixture onto a chip, place a fig on top and drizzle with balsamic syrup.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Add zucchini and cook until tender, about 15 minutes; drain. Scoop out the flesh of the zucchini, making a 'boat'.
  • In a medium bowl combined zucchini flesh, bread crumbs, Cheddar cheese, onion, parsley, salt, most of the Parmesan cheese and egg. Fill zucchini boats with mixture. Dot tops with butter and sprinkle with remaining Parmesan cheese.
  • Bake in preheated oven for 30 minutes.

1 pound pork sausage
1 cup dry bread crumbs
1 clove garlic, minced
1 (32 ounce) jar spaghetti sauce
½ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
