- Preheat broiler. Arrange zucchini in a single layer on a greased baking sheet. Broil 3-4 in. from heat just until crisp-tender, 1-2 minutes per side., Sprinkle zucchini with salt and pepper; top with sauce, cheese and pepperoni. Broil until cheese is melted, about 1 minute. Sprinkle with basil.

ZUCCHINI-RONI PIZZA

- Preheat oven to 400 degrees F.
- If you are using jarred red peppers, drain them very well and pat peppers dry with paper towels. Place peppers in a food processor and pulse-grind into a paste. Spread paste in a thin layer on a thin crust shell. Top paste with thin slices of smoked fresh mozzarella cheese.
- Place very thinly sliced zucchini discs in a small bowl and combine with remaining ingredients. Toss discs well to evenly coat with seasonings. The zucchini discs will have a flavor similar to pepperoni. You have just made zucchinironi!
- Arrange your zucchinironi slices around your pie: as little or as much as you like, but do not overlap slices or you pie will be wet.
- Bake directly on oven rack or on a preheated, perforated pizza pan. Bake 10 minutes on the middle rack of preheated oven or, until cheese is bubbly and golden and edges of pizza are crisp.
- Tidbits: How to roast red peppers: To roast in your oven, preheat broiler to highest setting. Halve red peppers and rip out seeds. Place pepper halves, skin side up, on a cookie sheet. Broil peppers until the skins are completely black. Leave the oven door ajar while peppers roast to let steam escape. Place blackened peppers in a large brown paper sack and close tightly. Let peppers stand 10 minutes or until cool enough to handle. Peel skins away from red pepper flesh, and discard skins. To roast peppers on the outdoor grill, leave peppers whole and roast covered over high heat on a gas stove or close to coals. Follow above method to peel.
- If your market does not carry smoked fresh mozzarella cheese, you can substitute 1 1/2 cups of shredded smoked Gouda (the yield of grating about 8 ounces of cheese).
ZUCCHINI SNACK PIZZAS

- Preheat oven to 400 degrees F.
- Cut the zucchini horizontally or severely on the bias about 1/3 inch thick. Brush with olive oil and season with salt and pepper. Either roast on baking sheet in oven for about 10 minutes or grill. Zucchini strips should retain body and firmness.
- Sprinkle cooked zucchini with chopped tomato and mozzarella. Return to oven and allow cheese to melt, about 5 to 8 minutes. Remove from oven and sprinkle with basil.
- Serve on plates with knives and forks, moms may have to cut pieces up.

- Preheat the oven 400 degrees F. Line a baking sheet with aluminum foil and spray with cooking spray.

- Preheat oven to 400°F.
- Line a large rimmed baking sheet with parchment paper or a Silpat liner.
- Cut each zucchini into halves through the length; pat insides dry with paper towel.
- Align the sliced zucchinis on the prepared baking sheet.
- In a bowl, stir olive oil and garlic; brush lightly over the tops of the zucchini.
- sprinkle with salt and black pepper.
- Brush or spoon on a heaping 1 tbsp of marinara sauce over each zucchini; leave a small rim near the edges uncoated.
- Sprinkle tops evenly with mozzarella cheese then some parmesan cheese.
- top with pepperoni slices, placing them more on the center as the cheese will melt and spread.
- Bake in preheated oven 12-18 minutes; bake time will vary depending on thickness of the zucchini and how crisp or tender you prefer.
- Remove from the oven and sprinkle with chopped fresh oregano.
ZUCCHINI CRUST PIZZA
Our family loves this pizza and it is very light & easy to make. My husband says it reminds him of a quiche. I just like that my kids are eating at least 2 servings of veggies per slice! Uses up some of those extra zucchini cluttering the counter in late summer. This recipe came from Taste of Home's Light & Tasty collector's issue with my own changes added. This is not a large pizza so I often double the first four ingredients and the cheese, add other pizza toppings and make it a large. Also, I like to use my egg poacher or mini muffins and make mini appetizers (see picture). Now where did I put that zucchini bread recipe.....

- Preheat oven to 450 degrees.
- In a bowl, combine zucchini and egg substitute; mix well. Add flour and salt; stir well, scraping sides to incorporate all dry ingredients.
- Pour dough mix onto a solid bottom large 18 in" or larger pizza pan with a lip coated with nonstick cooking spray. Spread it evenly over pan with a spoon.
- Bake at 450 degrees for 8 minutes. Take pizza dough out of oven and reduce heat to 350 degrees.
- Sprinkle with mozzarella, tomatoes, onion, green pepper, oregano, basil and Parmesan cheese. (I love adding sliced broiled eggplant and sliced mushrooms and black olives too). Arranging artfully will take more time than just sprinkling on.
- Bake for 15-20 minutes OR until onion is tender and cheese is melted.
- I've made this in 2 different ovens and in one oven I had to take the crust out 2 minutes sooner in my first oven to avoid it being overdone. The crust will cook more during the last cycle of baking so keep that in mind. If you get any puffy pockets forming during the first round of baking, just lance them with the tip of a sharp knife.
- Doubling this recipe gives about 10 big slices.

I picked up this recipe from my brother-in-law. It is an ideal way to utlize some of the zucchini that seems to multiply out of control in the summertime. And, it is a great way to get the kids to eat some of that zucchini.

ZUCCHINI PIZZA
A break from traditional pizza. I made a Carpaccio of Raw Zucchini recipe that my husband saw Tyler Florence make (Tyler's Ultimate http://www.foodnetwork.com/recipes/tyler-florence/carpaccio-of-raw-zucchini-recipe/index.html) and thought it might go good on a pizza. I added my own take. The pizza dough recipe also came from him. If you only want to make one pizza you can freeze the dough in a large ziploc bag, just take it out in the morning and you have pizza dough ready to go for dinner. The dough does well in a bread machine, but I usually have to add sIightly less flour for my most of my bread machine recipes. I also like to use a pizza stone. I usually make two pizzas, one for the grown ups and one for the kids, usually pepperoni and cheese.

- DOUGH
- Add all ingredients to a bread machine starting with water. Set to pizza dough setting. If you don't want to use a bread machine continue below.
- Dissolve sugar and salt in the warm water in a large bowl.
- Sprinkle yeast over water mixture and let stand 8 minutes covered, then mix.
- Add 1/2 of the flour and beat vigorously until smooth and elastic.
- Gradually add enough flour to dough until it come free from the bowl.
- Turn dough out onto a lightly floured surface and knead dough until it is no longer sticky and is smooth (8-10 minutes).
- Lightly oil a large bowl with vegetable oil and turn dough over in bowl to cover. DON"T use too much oil.
- Cover with a clean cloth and let rest in a warm spot until doubled in size (about 1 1/2 hours).
- Punch down and divide into two balls. Cover and let rest 10 minutes.
- Roll one ball out into a 14 inch circle and place on pizza pan. Roll in edges. If not using other dough ball you can freeze it for future use. Use more dough for a thicker crust.
- Pre-heat oven to 475F degrees and prepare sauce.
- SAUCE - can also be prepared ahead.
- In a blender add all ingredients and pulse until combined nicely. It should have the consistency of a medium to thick sauce. Add more olive oil if needed.
- Spread sauce onto the prepared pizza dough.
- Add the thinly sliced zucchini until it totally covers the pizza.
- Add the chicken (optional) and cheeses.
- Bake pizza 5-10 minutes until bottom of pizza is crispy. The time depends on your oven - make sure to watch it.

ZUCCHINI PIZZA DOUGH
From my e-cookbook collection, this looks yummy and interesting. The only ingredient in here that I changed was to use 3 egg whites instead of 3 whole eggs as originally called for-- since you don't need yolks to bind and all. Can use any kind of flour but I think whole wheat or bread flour would add great substance and flavor. (1/3 cup AP flour + 1 teaspoon vital wheat gluten = 1/3 cup bread flour) But the only quirk with this recipe is that unlike flour doughs, you can't bake with the sauce, cheese, and toppings on or else it'll fall apart-- you have to bake this dough first.

- You need about 3 1/2 cups zucchini-- about 3 medium size zucchinis should do it. Grate it coarsely with a vegetable shredder/peeler, food chopper, mandolin, etc.

- squeeze out all the water that is rendered. Roll in a towel and twist.
- again. This is to remove all the water-- if you don't remove the water, it won't bake right.

- Bake at 350F until the top is dry and lightly browned, about 20-30 minutes.
- To eat right away, add your favorite sauce, cheese, and toppings then bake at 350 for another 15-20 minutes.
