1/2 cup sesame seeds
1 tablespoon sugar
3 tablespoons vinegar
4 tablespoons light soy sauce

Steps:

  • Toast the sesame seeds in a fry pan over medium low heat, stirring constantly (apprx 5 minutes).
  • Crush with mortar& pestle or in a blender.
  • Mix in remaining ingredients.
  • Store in a bottle in the fridge.

This is a wonderful sauce from a local restaurant. Its sought after and thankfully they are planning on bottling it but I just couldn't wait and happened to get the recipe from a friend who got it from a former employee. Its super tasty over rice, goes well as a dipping sauce for steak and prawns or whatever you want to try.

6 tablespoons ground sesame seeds
1 tablespoon roasted sesame seeds
1 teaspoon English mustard powder
3/4 cup yamasa soy sauce
3/4 cup vegetable oil
1 garlic clove
1/2 cup chopped onion

Steps:

  • Prepare mustard according to instructions.
  • Mix mustard, soy sauce and oil in blender. You can use any type of soy sauce you like, but tamara can get to salty, so a less salty version is better.
  • Add garlic, onion, ground seseame seeds and blend until smooth.
  • Mix roasted seeds inches.
  • You can substitute whole seseame seeds for the ground but make sure to blend on high for a long time.
  • Warm if desired over low heat.

COD WITH ALMOND-SESAME SAUCE

1 1/2 pounds skinless center-cut cod fillet, bones removed, cut into 4 pieces
Kosher salt and freshly ground pepper
1 cup sliced blanched almonds
3 tablespoons sesame seeds
1/4 cup extra-virgin olive oil
1 leek (white and light green parts), halved lengthwise and thinly sliced
1/2 cup dry white wine
1/2 large head napa cabbage, torn into 2-inch pieces
2 tablespoons chopped jarred pepperoncini, plus 1 tablespoon brine
1 cup cilantro (leaves and tender stems), chopped
1/3 cup pitted Castelvetrano olives, chopped

Steps:

  • Preheat the broiler. Season the cod with salt and pepper. Heat a large skillet over medium-high heat. Add the almonds and sesame seeds and cook, tossing, until toasted, 3 to 4 minutes. Transfer to a blender and puree until finely ground; set the blender aside.
  • Heat 1 tablespoon olive oil in the same skillet over medium-high heat. Add the leek and cook, stirring, until just beginning to brown, 3 to 4 minutes. Add the wine and cook until slightly reduced, about 3 minutes. Add 2 cups water and bring to a simmer. Add the cod, reduce the heat to low, cover and cook until just cooked through, 7 to 9 minutes. Remove the cod to a plate.
  • Transfer the leek and 3/4 cup of the cooking liquid to the almond mixture in the blender and blend on high speed until smooth and thick. Add more cooking liquid as needed to loosen.
  • Meanwhile, arrange the cabbage on a baking sheet and broil, tossing occasionally, until tender and browned in spots, about 8 minutes. Transfer to a bowl and toss with 2 tablespoons olive oil and the pepperoncini brine. Season with salt and pepper.
  • Toss the cilantro, olives, pepperoncini and remaining 1 tablespoon olive oil in a small bowl. Divide the cod among plates. Top with the almond sauce and olive mixture. Serve with the cabbage.

Soba Noodle Cold Rolls with Spicy Sesame Sauce image

125 grams dry soba noodles (about 4 ounces)
Kosher salt
12 rice paper wrappers
6 leaves green or red leaf lettuce, ribs removed and cut in half
350 grams extra-firm tofu or marinated tofu, cut into 1/2-centimeter (1/4-inch) sticks (about 12 ounces)
1 peach or half mango, thinly sliced
1/2 English cucumber, cut into 8-centimeter (3-inch) matchsticks
1 large carrot, peeled and cut into 8-centimeter (3-inch) matchsticks
2 cups bean sprouts
1 small handful mint
1 small handful cilantro
2 limes, juiced
1/4 cup sriracha (60 milliliters)
2 tablespoons soy sauce (30 milliliters)
2 tablespoons honey (30 milliliters)
1 tablespoon finely minced ginger
1 tablespoon toasted sesame seeds
2 teaspoons toasted sesame oil

Steps:

  • For the rolls: Cook the soba noodles according to the package directions in salted water until al dente. Drain and rinse the noodles under cold water.
  • Fill a large wide bowl with very warm water. Dip one rice paper wrapper into the water and allow it to soften for a few seconds. Then carefully remove it from the water.
  • Top the wrapper with a piece of lettuce, a small handful of the soba, a few pieces of tofu, peach or mango, cucumber, carrot, bean sprouts and a few mint and cilantro leaves.
  • Fold in the edges of the wrapper and roll up like a burrito, pressing edge to seal. Set aside into a reusable container lined with a damp paper towel. Continue with the remaining wrappers and ingredients.
  • For the dipping sauce: Whisk together the lime juice, sriracha, soy sauce, honey, ginger, sesame seeds and sesame oil.
  • Store the rolls and sauce in resealable containers in the fridge until ready to serve, or portion out for lunch. Cut the rolls in half just before serving with the dipping sauce.

MISO-SESAME DRESSING

1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 cup 2 percent milk
1 head cauliflower, cut into bite-size pieces
Nonstick cooking spray, for the baking sheet
1/3 cup low-sodium soy sauce
2 tablespoons honey
2 tablespoons toasted sesame oil
2 tablespoons rice wine vinegar or apple cider vinegar
1 tablespoon cornstarch
1 tablespoon sesame seeds, plus more for garnish
2 teaspoons grated fresh ginger
1 teaspoon sriracha
3 cloves garlic, minced
Sliced scallions, for garnish

Steps:

  • For the cauliflower: Place a baking sheet in the oven and preheat to 425 degrees F. (If your cauliflower is large, preheat 2 baking sheets.)
  • Whisk the flour together with the garlic powder, onion powder, salt and pepper in a large bowl. Whisk in the milk and 1/4 cup water until smooth. Toss the cauliflower in the mixture until evenly coated. Remove the baking sheet from the oven and spray with nonstick cooking spray. Spoon the cauliflower into the baking sheet, leaving any excess sauce behind in the bowl. (Do not overcrowd the baking sheet or the cauliflower will steam and not become crispy; you may need to bake in batches or use two baking sheets.) Bake the cauliflower for 20 minutes.
  • For the sesame sauce: Meanwhile, put the soy, honey, sesame oil, vinegar, cornstarch, sesame seeds, ginger, sriracha, garlic and 1/2 cup water in a medium saucepan over medium heat. Whisk together thoroughly. Bring to a boil, then reduce the temperature to medium-low and let simmer, stirring frequently, until the sauce becomes glossy and thick, about 2 minutes. Remove the cauliflower from the oven and toss with half of the sesame sauce. Return the cauliflower to the oven until dark and glossy, 5 to 8 minutes. Remove to a serving bowl and drizzle with more sauce. Add sesame seeds and scallions over the top and serve immediately.

PAN SEARED SCALLOPS WITH SESAME SAUCE AND CELLOPHANE NOODLES



Pan Seared Scallops with Sesame Sauce and Cellophane Noodles image

8 ounces cellophane noodles
1/4 cup reduced-sodium soy sauce
3 cloves garlic, minced
1 tablespoon rice vinegar
1 tablespoon sugar
2 teaspoons sesame oil
1 teaspoon cornstarch
1/4 teaspoon crushed red pepper flakes
1 tablespoon olive or vegetable oil
1 1/2 pounds large sea scallops, about 12
Ground black pepper
1/4 cup scallions, chopped

Steps:

  • Soak cellophane noodles in hot water for 10 minutes, until tender. Strain and set aside.
  • While the noodles are soaking, in a small bowl, whisk together soy sauce, garlic, vinegar, sugar, sesame oil, cornstarch, and red pepper flakes. Set aside.
  • Heat olive oil in a large skillet over medium-high heat. Add scallops and season the tops with black pepper. Cook 2 minutes, until golden brown. Flip with spatula and cook 2 more minutes, until second side is golden brown. Add soy sauce mixture to pan and bring to a simmer, for 2 minutes, until sauce thickens and scallops are cooked through and have an opaque color.
  • Serve half of the scallops over all of the cellophane noodles and top with scallions. Reserve remaining scallops for salad, if desired.

NOODLES WITH SESAME SAUCE

1 Tbsp. soy paste
1 Tbsp. toasted sesame oil
1 Tbsp. grapeseed or vegetable oil
1 tsp. finely grated peeled ginger
1 tsp. rice wine
1 tsp. kosher salt
¼ tsp. freshly ground white pepper (optional)
1 large egg
48 wonton wrappers
Sesame sauce and assembly:
3 Tbsp. toasted sesame oil
3 Tbsp. Chinese toasted sesame paste or tahini
2 Tbsp. soy sauce
2 Tbsp. unseasoned rice vinegar
1 Tbsp. sugar
1-3 Tbsp. store-bought or homemade chili crisp; plus more for serving (optional)
Thinly sliced scallions (for serving)

Steps:

  • Wontons:
  • Using your hands, mix pork, scallion, soy paste, sesame oil, grapeseed oil, ginger, wine, salt, and pepper (if using) in a large bowl until thoroughly combined. Crack egg into center of mixture and stir vigorously in one direction with a wooden spoon or rubber spatula until mixture is shaggy and lightened in color, about 4 minutes. Cover and chill at least 15 minutes and up to 12 hours.
  • Fill a small bowl with cold water. Take a wonton wrapper and lay it in your palm. Using a small offset spatula or butter knife, press about 1 tsp. pork mixture into the center of wrapper. Dip a finger into water and run it around edges. Fold wrapper in half on a diagonal and press edges tightly together to seal. Dip your finger into water again and dampen 2 bottom corners of wonton. Bring corners together and pinch to seal. Place on a parchment-paper-lined baking sheet. Repeat with remaining wonton wrappers and filling. Cover and chill until ready to cook.
  • Do Ahead: Wontons can be assembled 1 day ahead. Keep chilled, or freeze up to 1 month. Freeze in a single layer on baking sheet until frozen, then transfer to an airtight container. Cook from frozen, about 4 minutes.
  • Sesame sauce and assembly:
  • Whisk oil, sesame paste, soy sauce, vinegar, and sugar in a small bowl to combine, then whisk in water, 1-tablespoonful at a time, until you can drizzle sauce easily but it's not watery. If using chili crisp, stir in 1-3 Tbsp., depending on how spicy you want your sauce; set aside.
  • Bring a large pot of water to a boil. Working in batches of up to 10 at a time, boil wontons until wrappers are puckered and tightly wrapped around filling (filling should be cooked through; slice one open to double-check if unsure), about 3 minutes. Using a spider or slotted spoon, transfer to a plate; let cool slightly.
  • Divide wontons among bowls and spoon reserved sauce over; top with scallions and more chili crisp if desired.

2 small garlic cloves, minced
1 1/2 teaspoons minced fresh ginger
3/4 cup roasted salted peanuts
3/4 cup sesame seeds, toasted
6 tablespoons grapeseed oil or vegetable oil
1 small red Thai chile or red jalapeño chile
1/4 to 1/2 teaspoon cayenne pepper

Steps:

  • Stir sugar, garlic, and ginger in heavy nonstick skillet to blend. Cook over medium heat without stirring until sugar melts and caramelizes to dark amber color, about 3 minutes. Scrape mixture out onto piece of parchment paper. Let mixture cool and harden, about 15 minutes.
  • Place peanuts, sesame seeds, oil, chile, and 1/4 teaspoon cayenne pepper in blender. Break up garlic mixture; add to blender. Puree until paste forms, scraping down sides of jar as needed (most sesame seeds will remain whole). Season sauce to taste with salt and cayenne pepper. Transfer to small bowl. (Peanut-Sesame Sauce can be made 3 days ahead. Cover and refrigerate. Bring to room temperature before using.)
