SAUTéED ZUCCHINI RECIPE

This easy Sautéed Zucchini recipe is healthy, tasty and so simple! All you need is just 5 ingredients and 5 minutes for the perfect summer side.

2 lbs zucchini
1 tbsp avocado or olive oil (for frying)
1/2 tsp salt
Ground black pepper (to taste)
1-2 garlic cloves (grated)
2 tbsp dill, basil or Italian parsley (finely chopped)
Parmesan cheese (to taste)

Steps:

  • Chop garden or farmer's market large zucchini into 1/2 inch thick cubes or quarter moons. If zucchini is medium size, half moons are perfect. And baby zucchini could be sliced into rounds.
  • Preheat large ceramic non-stick skillet with tall sides on high heat and then swirl oil. Add zucchini, salt and pepper.
  • Cook for 3 minutes, stirring maximum 2 times. Let zucchini touch the hot skillet surface for at least a minute to really get that sear. Don't stir constantly to avoid pale "steamed" zucchini. And don't stir cooked zucchini to make it mushy too much.
  • After zucchini is cooked, sprinkle with herbs and freshly grated garlic. Stir and grate fresh Parmesan cheese on top. Serve warm or cold.

The title and base of this recipe comes my daughter's cookbook "Pretend Soup" by Mollie Katzen. So easy and delicious as a veggie side dish in the summer. I use oregano here, but any fresh herbs would be delicious.

4 cups zucchini, sliced
1 tablespoon olive oil
1 tablespoon fresh oregano, chopped
1/2 cup parmesan cheese, freshly grated
salt, to taste
fresh ground black pepper, to taste

Steps:

  • In a large skillet, heat the olive oil over medium heat. Add the zucchini and saute until soft, but still holding their shape. Stir in the fresh oregano and season with salt and pepper to taste. Remove from heat.
  • Place in a shallow serving bowl or platter. Spread the parmesan cheese over the zucchini and serve.

1 lb mini round cheese ravioli
1/4 cup extra virgin olive oil
1 clove fresh garlic, chopped
2 (7 ounce) jars roasted red peppers, sliced in strips
1 cup fresh zucchini, slice moons
1/2 cup black olives, sliced
1 cup chicken broth
grated parmesan cheese
garnish with chopped fresh parsley
salt & freshly ground black pepper

Steps:

  • SAUCE PREPARATION: Heat olive oil over medium heat in saucepan.
  • Add roasted red pepper strips, zucchini moons and black olives.
  • Cook while stirring for 2 minutes or until the zucchini is cooked to desired texture, then add chicken broth.
  • Simmer sauce for 2 minutes.
  • Season with salt and cracked black pepper to taste.
  • PASTA PREPARATION: Prepare pasta when sauce is complete.
  • Use a large pot to boil pasta.
  • Cook the pasta in salted boiling water until they float (approximately 3 minutes or 160 degrees F internal temperature).
  • Remove pasta from boiling water and lightly mix with sauce.
  • PLATING SUGGESTION: Place sauced pasta on serving plate then top with grated Parmesan and Parsley.
  • CHEF'S TIP: Toss the pasta in a small amount of olive oil after cooking to prevent sticking.

This Calabacitas recipe is a beloved Mexican vegetable dish made from sauteed zucchini and squash, corn, onions, peppers, tomatoes and cheese.

1 tablespoon olive oil
1 small onion, (diced)
1 poblano pepper, (diced)
1 jalapeno pepper, (diced (seeds removed if you don't want it spicy))
1 15-ounce can whole kernel corn, (drained)
2 plum tomatoes, (diced)
1 large zucchini, (sliced into half moons)
1 large yellow squash, (sliced into half moons)
3 cloves garlic, (minced)
2 teaspoons coarse kosher salt
1/4 teaspoon black pepper
1/4 teaspoon dried oregano
1/4 teaspoon ground cumin
1/4 cup water
1/2 cup shredded cheddar cheese
1/4 cup milk
optional garnishes: crumbled cotija cheese, chopped cilantro

Steps:

  • Heat olive oil in a large nonstick skillet over medium-high heat.
  • Add onions, poblanos, and jalapenos. Cook for 5 minutes, stirring occasionally, until vegetables begin to soften.
  • Add corn and tomatoes. Cook for 5 more minutes, stirring occasionally.
  • Add zucchini, yellow squash, garlic, salt, black pepper, oregano and ground cumin. Stir to combine and cook for 5 minutes, stirring every minute or so.
  • Add water to skillet, reduce heat to low, cover and simmer for 5 minutes.
  • Uncover the skillet, add the shredded cheese and milk, and stir together until the cheese has fully melted.
  • Remove from heat, garnish with chopped cilantro and cotija cheese, and serve.

3 1/2 oz. white sugar
2 1/4 oz. brown sugar
3 1/2 oz. butter
2 tablespoons vegetable oil
1/2 teaspoon vanilla extract
2 eggs
7 oz. flour
1/2 oz. moon-charged unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
3 tablespoons buttermilk (or mix 1/4 teaspoon lemon juice or vinegar with milk and leave to stand for 5 minutes before using)
5 oz. shredded zucchini
3 oz. (or more to taste) plain chocolate chips
confectioners' sugar (for dusting)

10 in. round cake tin (greased)

Steps:

  • Preheat your oven to 325°F.
  • In large bowl, combine the white and brown sugars, butter, oil, vanilla, and eggs. Beat well. Next, add the flour, cocoa, baking soda, cinnamon, and buttermilk, blending well with an electric mixer.
  • Now add the shredded zucchini and chocolate chips, mixing well by hand. Spread the mixture in the greased pan, and bake in the preheated oven for 30-40 minutes or until a toothpick comes out clean when poked into the mixture. Cool completely.
  • To make the stencil, trace shapes reflecting the phases of the moon onto a parchment round that is the same circumference as your cake (see photo for shape references) and carefully cut these out with scissors or a craft knife. Lay on top of the cooled cake and sprinkle confectioners' sugar on top.

2 tablespoons teriyaki sauce
1 tablespoon soy sauce
1 tablespoon toasted sesame seeds
ground black pepper

Steps:

  • Warm the oil in a large skillet over medium heat. Stir in onions, and cook 5 minutes. Add zucchini, and cook, stirring, about 1 minute. Stir in teriyaki sauce, soy sauce, and sesame seeds. Cook until zucchini are tender, about 5 minutes. Stir in ground pepper, and serve immediately.
