The real sin would be to forget this super-Southern staple. We gave it an update by serving it on top of mini hot dogs.

8 oz. cream cheese
1/2 c. sour cream
3 c. cheddar cheese, shredded
1 4 oz. can green chiles
1/3 c. green onions, chopped
3 tbsp. pickled jalapeños, chopped and divided
2 tbsp. Worcestershire sauce
24 dinner rolls
12 hot dogs, sliced in half crosswise

Steps:

  • Combine cream cheese, sour cream, cheddar cheese, green chiles, green onions, 2 tbsp. jalapeños, and Worcestershire sauce in medium sauce pan. Cook over low heat, until cheeses are melted and the dip comes together.
  • Meanwhile, heat hot dogs, and top-split dinner rolls to make mini hot dog buns.
  • Place hot dog in each bun, then top with a little dip and a few chopped jalapeños. Serve immediately.

1 bread bowl (or 1 french bread loaf, or rolls for individual servings)
8 ounces cream cheese (softened)
16 ounces sour cream
2 cups cheddar cheese (shredded)
1 cup bacon crumbles ( (cooked) about 8 slices)
1 tablespoon hot sauce
2 teaspoons garlic paste
1 teaspoon Worcestershire sauce
½ teaspoon salt
½ teaspoon onion powder
¼ teaspoon pepper
scallions (or chives, for garnish)

Steps:

  • Preheat the oven to 350°F.
  • Cream sour cream and cream cheese with a hand mixer until fluffy.
  • Add shredded cheese, cream cheese, bacon, hot sauce, garlic, Worcestershire sauce, and seasonings and mix well.
  • Cut the top off of the bread and remove the insides. Reserve the top and insides for serving.
  • Place the hollowed bread loaf on a baking pan and scoop the cheese mixture into the middle. Bake for 30-35 minutes or until the dip is bubbly and hot.
  • Remove from the oven and rest 5 minutes before serving. Garnish with chives if desired.

Like many Filipino dishes, this soup is bold in taste: sour, salty, slightly sweet, spicy, and umami. Use any combination of shrimp, crab, salmon, monkfish or other fish and shellfish you like.

Gremolata (optional):
1 tablespoon extra virgin olive oil
4 small cloves garlic, finely chopped
1 bunch flat-leaf parsley, finely chopped
Grated zest of 2 lemons
Sinigang:
4 cups seafood stock or water with dissolved fish bouillon cubes
Juice of 1 lemon, plus more to taste
1 teaspoon granulated sugar
2 red onions, chopped
4 tomatoes, chopped
1 pound fish fillets (such as salmon, monkfish, or cod), cut into 4 pieces
1/2 pound long beans or green beans, trimmed and cut into 1-inch pieces
4 fresh whole chiles of your choice
1 bunch water spinach or spinach, thick stems removed
Fish sauce, to taste
1 pound mixed shellfish (such as prawns, shrimp, and crab claws), shelled and cooked
Cooked rice or crusty bread, for serving

Steps:

  • Make the gremolata:
  • In a 3-quart saucepan, heat the olive oil over medium heat until it shimmers. Add the garlic and cook until it is light golden, then immediately remove the pot from the heat. Transfer the garlic mixture to a bowl and let it cool for 1 minute. Mix with the parsley and lemon zest. Set it aside.
  • Make the sinigang:
  • Pour the seafood stock into the same saucepan used to fry the garlic. Add the lemon juice and sugar and bring the mixture to a boil over medium heat. Add the onions and tomatoes. Cover the pan, reduce the heat to low, and simmer for 5 minutes, or until the onions are translucent and the tomatoes are mushy.
  • Put the fish in a strainer or colander and dunk it into the simmering broth. Cook for 3 to 5 minutes, until opaque throughout. Be careful not to overcook it. Immediately transfer the fish to a plate and set it aside.
  • Put the beans in the strainer and dunk it into the simmering broth. Cook for about 5 minutes, or until the beans are tender but still vibrant green. Transfer the beans to a plate and set it aside.
  • Put the chiles and water spinach in the strainer and dunk it into the simmering broth. Cook for about a minute, or until they are tender but still vibrant in color. Transfer the chiles and spinach to a plate and set it aside.
  • While the broth continues to simmer, taste and add fish sauce and more lemon juice as needed. Distribute and arrange the fish, shellfish, and vegetables into each of four bowls.
  • Remove the broth from the heat and ladle it into the bowls with the seafood and vegetables. Sprinkle each serving with the gremolata. Serve the soup piping hot, with rice or crusty bread.

Filipino soup cooked with pork. Serve with rice and for additional sauce, use soy or fish sauce. If you want to, you can add what Filipinos call gabi gabi, which is a small taro root. When peeled they look like potatoes. You can add 5 to 6 of them when you add the water and make sure they are cooked through. Take them out when they are cooked because they can get too soft.

This dip recipe was given to me by a co-worker some 15 or more years ago. She made it for potlucks at work, and it was always gone from the nurse's station before the rest of the food was put out! It's a simple mixture of beef and cheese, but it should always be made a day in advance to allow the flavors to blend. Serve with your favorite corn chips.

2 pounds lean ground beef
1 onion, chopped
1 (10.75 ounce) can condensed cream of mushroom soup
1 pound processed cheese food, cubed
15 slices pickled jalapeno pepper slices, to taste

Steps:

  • Place lean ground beef and onion in a large, deep skillet over medium high heat. Cook until beef is evenly brown and onion is soft. Drain and turn heat to medium low.
  • Pour in condensed cream of mushroom soup. Mix in processed cheese food and desired amount of jalapeno peppers. Cook and stir until all ingredients are well blended, about 10 minutes.
  • Transfer the mixture to a medium bowl. Cover and chill in the refrigerator 8 hours, or overnight.

1 (8 ounce) package sour cream
1 (8 ounce) package shredded cheese (I use sharp cheddar)
1/4 cup chopped green onion
1 can chopped green chili
1/2 cup chopped ham lunch meat
1 round loaf Italian bread

Steps:

  • Mix cream cheese and sour cream with mixer until smooth.
  • Add all other ingredients and stir well.
  • Cut top off bread loaf and hollow out the center.
  • Put mixture in the bread and put the top back on. (If you don't want to do the "bread thing" I have also put the ingredients in the crockpot on high till all cheese melts, stirring once or twice, then lowering the temp to low or warm settings to serve.)
  • Wrap in aluminum foil and bake for 1 hour at 350 degrees.
