Thai fried rice with shrimp (khao pad goong ข้าวผัดกุ้ง), is a very typical Thai street food dish, available at all stir fry restaurants. Though you can order the dish with your choice of meat, shrimp is the most popular option. What really makes Thai fried rice unique, is that it's served with a squeeze of lime on top to give it a nice sour tinge, and always accompanied by prik nam pla (พริกน้ำปลา), the Thai condiment of chilies and fish sauce. Number Of Ingredients 13

1.5 cups of cooked Jasmine rice cooled (or day old rice works well too) - Or just estimate about 1 normal bowl full
About 5 - 10 shrimp, head peeled, but tail on
¼ of a big white onion (or ½ of a very small white onion, like I used)
1 leaf of Chinese broccoli (or any crisp green leafy vegetable)
2 cloves garlic
1 egg
½ tablespoon soy sauce
½ tablespoon oyster sauce
Pinch of sugar (optional)
1 tablespoon of oil for frying
5 Thai chilies
3 tablespoons of fish sauce
½ of a lime

Steps:

  • If you're using whole fresh shrimp like I did, first pinch off the head, and peel the outer shell of the shrimp, leaving only the tail on (that's Thai style). You can also devein them if you'd like, but for small shrimp, to me it doesn't really matter.
  • Peel 2 cloves of garlic, and then just finely mince them
  • Slice ¼ of a sweet white onion into medium sized strips
  • Finely dice about 3 - 4 green onions
  • Take just 1 leaf of Chinese broccoli (kai-lan), slice it in half first along the spine, and then slice it into 1 centimeter sized strips
  • Turn on your stove to medium high, heat up your wok (or frying pan), and add about 1 tablespoon of oil
  • Once your oil is hot, add the garlic first, and stir fry continuously for about 15 seconds or so, until it gets nice and fragrant
  • Next, toss in your shrimp, and fry for about 30 seconds - your shrimp should start to turn pink and feel more firm
  • Add in a little less than ½ of your rice first. This is going to soak up all those delicious shrimp juices and oils and keep your rice nice and dry. Stir fry for about 10 more seconds - This is a little known trick to make good rice, so it remains nice and dry
  • Scoot all your rice to one side of the pan, and then crack in the egg into the empty side
  • Whirl the egg up, let it cook for a few seconds, and then start to mix it up with the rice and shrimp
  • Keep stir frying for about 20 seconds until the egg is fully cooked, and then add in the rest of your rice, and give it a quick stir
  • Add ½ tablespoon of soy sauce, ½ tablespoon of oyster sauce, just a pinch of sugar (optional), and continue stir frying your rice, making sure all the sauce get mixed in
  • Then add your chopped Chinese broccoli and onions, and stir fry for another 30 seconds until the vegetables wilt, but they can still be crisp and not fully cooked
  • Lastly, toss in your green onions, stir it a few more seconds, and it's ready
  • Immediately dish your fried rice onto a plate
  • Slice off a wedge of lime, and serve it on the plate next to the rice
  • For the final touch, I like to sprinkle some freshly ground black pepper on top to give some extra flavor
  • Add 3 tablespoons of fish sauce to a small bowl
  • Slice about 5 Thai chilies (you can add more or less, up to you), and add them to the fish sauce
  • Finally, I like it with a little squeeze of about ½ of a lime - but this is optional - and at many Thai restaurants it's only fish sauce and chilies
  • That's is, give it a stir, and set it aside

For the Marinade:
2 teaspoons cornstarch
3 tablespoons soy sauce
1 to 1 1/2 cups bite-sized chicken pieces (about 8 ounces)
For the Noodles:
8 ounces rice vermicelli noodles (or very thin flat rice noodles)
3 to 4 cloves garlic, minced
1 piece galangal (thumb-size, or ginger, sliced into matchstick-like pieces)
1 cup fresh shiitake mushrooms, sliced
1/2 cup chicken stock
1 bell pepper (orange or green), sliced into thin strips
2 to 3 cups fresh bean sprouts
2 green onions , sliced
Handful fresh coriander/cilantro
2 1/2 tablespoons oil
For the Stir-Fry Sauce:
2 tablespoons soy sauce
1 teaspoon dark soy sauce
1 tablespoon fish sauce
1 teaspoon sugar
1 tablespoon lime juice
1/4 cup chicken stock
1 to 2 teaspoons chili sauce (or 1/2 to 3/4 teaspoon cayenne pepper, to taste)

Steps:

  • Gather the ingredients.
  • Mix together cornstarch with soy sauce until well combined.
  • Marinate the chicken in the cornstarch-soy sauce mixture, coating all over. Set aside.
  • Gently boil rice noodles for 2 to 5 minutes (depending on the thickness and brand of the noodles), or until noodles are soft enough to eat but still firm and a little bit crunchy (they will finish cooking later).
  • Drain and briefly rinse with cold water to keep from sticking. Set aside.
  • In a small bowl, combine chicken stock, soy sauce, fish sauce, lime juice, dark soy sauce, sugar, and chili sauce or cayenne. Stir well to dissolve sugar. Set aside.
  • Heat a wok or large frying pan over medium-high heat. Add 2 tablespoons oil and swirl around; then add the garlic, galangal or ginger, chicken (together with the marinade), mushrooms, and a few tablespoons of stock. Stir-fry 5 minutes. When pan becomes dry, add a little more chicken stock, 1 to 2 tablespoons at a time.
  • Add the bell pepper and stir-fry another 1 to 2 minutes. Add the reserved noodles plus stir-fry sauce. Using two utensils, lift and turn the noodles or use a tossing motion, like tossing a salad. Keep the heat turned up. Stir-fry in this way until the sauce is well distributed throughout the noodles, 1 to 2 minutes.
  • Add bean sprouts, continuing to stir-fry another minute.
  • Remove from heat and taste-test for salt and flavor, adding 1 tablespoon more fish sauce or soy sauce if not salty or flavorful enough. If too salty, add another squeeze of lime juice.
  • To serve, lift noodles out of the wok or frying pan and mound in a bowl or serving platter. Sprinkle with the sliced green onions and chopped cilantro. A wedge of fresh lime squeezed over just before eating also is delicious.

100g salted peanuts
1 head of broccoli , cut into florets and the stem cut in half
2 tbsp olive oil
1 red onion , finely diced
1 garlic clove , crushed
1 tbsp grated ginger
1 medium red chilli , deseeded and finely diced
½ small red cabbage , shredded
1 red pepper , deseeded and sliced into strips
small pack coriander , roughly chopped
zest and juice 1 lime
2 tbsp tamari
½ tbsp golden caster sugar
2 tbsp olive oil

Steps:

  • Heat a frying pan over a medium heat and add the peanuts. Toast evenly, regularly shaking the pan, then remove and set aside. Put the broccoli in a food processor and pulse until it looks like green couscous grains. Empty into a large bowl and set aside.
  • Heat the oil in a large frying pan and fry the onion, garlic, ginger and chilli until soft and aromatic. Add the broccoli rice to the pan and mix through, making sure everything is well coated. Sauté for 3-4 mins until al dente. Transfer to a large bowl and add the red cabbage, red pepper, half the coriander and half the toasted peanuts. Mix to combine.
  • To make the dressing, whisk the lime zest and juice, tamari, sugar and oil together until combined. Toss the dressing through the broccoli rice and transfer to a serving bowl or individual bowls. To serve, garnish with the remaining coriander and peanuts.

1 lb boneless skinless chicken breast, sliced thin
peanut oil
4 cloves garlic, minced
6 Thai red chili peppers, stemmed and sliced thin (amount to taste)
1 stalk fresh lemongrass, chopped
3 cups broccoli florets
1 tablespoon sambal oelek or 1 tablespoon other hot chili sauce
3 tablespoons fish sauce
1 tablespoon peanut butter
1/2 teaspoon galanga powder or 1/4 teaspoon ground ginger
1/2 fresh lime
1/3 cup chopped fresh basil

Steps:

  • Heat 1 tbsp oil in wok over medium-high heat; add garlic, lemongrass, and chiles, heating until they become fragrant, then add chicken to wok.
  • Stir-fry chicken 3-4 minutes, or until chicken is cooked through; remove from pan and set aside.
  • Add another 1/2 tbsp oil to wok if needed; allow to heat and add broccoli florets, stir-frying for about 3-4 minutes or until broccoli is crisp-tender.
  • Return chicken to pan with broccoli and stir well.
  • Stir together peanut butter with chile sauce, galanga powder, and the juice of the half of lime until smooth; add to pan along with the fish sauce and blend well.

2 cups water
2 tablespoons olive oil
1 tablespoon minced garlic
½ cup uncooked white rice
