ZUCCHINI AND GRUYERE FRITTATA SQUARES

Good olive oil
6 ounces pancetta, 1/2-inch-diced
4 cups medium-diced leeks, white and light green parts (4 leeks), washed and spun dry
8 to 10 ounces small zucchini, thinly sliced in rounds
2 teaspoons fresh thyme leaves, minced
12 extra-large eggs
3/4 cup half-and-half
Kosher salt and freshly ground black pepper
10 ounces grated Gruyere cheese, divided
1/2 cup chopped fresh basil leaves
Julienned fresh basil, for garnish

Steps:

  • Preheat the oven to 350 degrees F. Grease a 12-by-18-by-1-inch sheet pan with olive oil.
  • Heat 2 tablespoons of olive oil in a large (12-inch) saute pan over medium heat. Add the pancetta and saute for 5 minutes, until it begins to brown. Add the leeks and saute for 5 minutes, until tender. Add the zucchini and thyme and saute for 5 to 6 minutes, stirring occasionally, until the zucchini is tender.
  • Meanwhile, in a large bowl, whisk together the eggs, half-and-half, 1 1/2 teaspoons salt and 1 teaspoon pepper. Stir in two-thirds of the Gruyere and the basil.
  • Pour the zucchini mixture in an even, well distributed layer into the prepared sheet pan. Pour the egg mixture over the top and sprinkle with the remaining Gruyere. Shake the pan to evenly distribute the egg mixture. Bake for 30 to 35 minutes until puffed and just set in the center. Allow to sit at room temperature for 5 minutes. Cut the frittata into 30 equal size squares, sprinkle with salt, garnish with the julienned basil and serve hot, warm or at room temperature.

1 cup biscuit/baking mix
1/2 cup grated Parmesan cheese
1 tablespoon minced fresh parsley
1-1/2 teaspoons dried oregano
1-1/2 teaspoons dried basil
1/2 teaspoon salt
4 eggs
1/2 cup vegetable oil
1 small onion, chopped
3 medium zucchini, thinly sliced

Steps:

  • In a bowl, combine the biscuit mix, Parmesan cheese, parsley, oregano, basil and salt. Combine eggs, oil and onion; stir into dry ingredients just until combined. Stir in zucchini. Transfer to a greased 13-in. x 9-in. baking dish. Bake at 350° for 30-35 minutes or until golden brown and set. Cut into squares.

I found this recipe in 'Recipes+' magazine and it looks so colourful, fresh and and healthy. I used grapes strawberries and kiwi fruit in mine but of course the combinations are practically endless. Cooking time is chill time.

2 cups apple juice
2 tablespoons unflavored gelatin
2 cups fresh fruit (canned can be used if well drained)
flavoured yogurt or custard, to serve

Steps:

  • Grease a 23cm (9 inch) square baking pan.
  • Pour 1 cup of the juice into a microwave safe jug.
  • Cook on high for 1 minute.
  • Sprinkle gelatin over the hot juice and stir rapidly with a fork until dissolved.
  • Place remaining juice and fruit salad in a large mixing bowl.
  • Add gelatins mixture and mix well till combined.
  • Pour into baking pan and refrigerate for 5 hours or more.
  • To serve, cut in to squares and top with the yogurt or custard.

I made this recipe when I was in High School Home Economics class in the late 1980's. I found this recipe in a copy of the 1986 Bon Appetit Magazine. I love it and make it all the time.

4 cups zucchini (2 medium)
1 cup buttermilk baking mix (Bisquick)
4 eggs
1/2 cup finely chopped onion
1/2 cup freshly grated parmesan cheese
1/2 cup vegetable oil
2 tablespoons chopped fresh parsley
1 garlic clove, chopped finely
1/2 teaspoon dried oregano
1/2 teaspoon seasoning salt
fresh ground pepper

Steps:

  • Heat oven to 350 degrees Farenheit. Butter 9 x 13 inch pan or glass dish. Combine all ingredients. Mix together and pour into dish. Bake for 30 minutes. Let cool. Cut into small squares and serve.

This is a classic Scottish bar cookie from the city of Eyemouth. In Scotland, it's a standard bakery item all year, although the buttery pastry and the colorful icing make it perfect for Christmas.

2 1/2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup unsalted butter, cut into pieces
1/4 cup corn oil
1 large egg, separated
2 teaspoons fresh lemon juice
2 -3 tablespoons cold water
1 cup chopped walnuts
1 cup currants
1 cup sweetened flaked coconut
1 cup raisins
1 cup sugar
1/2 cup unsalted butter, melted
1 large egg, beaten
2 cups confectioners' sugar
4 -5 tablespoons fresh orange juice
1 cup candied cherry, chopped

Steps:

  • Measure the flour and salt into a large mixing bowl. Cut in the butter until the mixture resembles coarse crumbs. In a small bowl, beat together the corn oil, egg white, lemon juice, and 2 Tablespoons of the water. Sprinkle the liquids over the flour mixture and toss with a fork until the pastry holds together in a ball. Add more water if necessary. Cover and chill for 30 minutes.
  • Preheat the oven to 375°F Roll the pastry out to fit the bottom and sides of a 15 1/4 x 10 1/4 x 3/4 inch jelly roll pan. Prick all over with a fork. Bake for 10 to 15 minutes, until light brown.
  • To make the filling, combine the walnuts, currants, coconut, raisins, and sugar in a large bowl. Mix in the melted butter, the egg, and the egg yolk. Spread the mixture over the bottom of the pastry. Bake for 30 minutes or until set and the edges are golden brown.
  • While the bars bake, make the icing. Mix the confectioners' sugar (also known as icing or powdered sugar) with the orange juice in a small bowl until the icing is smooth and rather soft, but not runny, and spread over the bars. Sprinkle evenly with the cherries. Cool completely before cutting into squares. The bars are easiest to cut the day after baking.
  • Makes twelve 3-inch or forty-eight 1 1/2 inch bars.

This is a recipe I have had for about twenty years and filed it away and just came across it again today. I made it just to refresh my memory and it is very good. I got this recipe from an old relative.

1 cup grated zucchini
3/4 cup margarine, softened
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1 teaspoon vanilla
1 3/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup raisins
1/2 lb mixed fruit
4 ounces cream cheese
1 1/2 cups icing sugar
2 tablespoons butter
1 teaspoon vanilla

Steps:

  • Cream margarine and sugars.
  • Add eggs and vanilla and beat.
  • Mix fruit and raisins with dry ingredients.
  • Add dry ingredients and zucchini to creamed mixture.
  • Grease a jelly roll pan, 15 1/2" x 10 1/2".
  • Bake at 350° for 25 to 30 minutes.
  • Ice when cool.
  • Icing; Beat cream cheese, icing sugar, butter and vanilla until light and fluffy.
