ZUCCHINI CON CARNE
Living in the land of green chilies and hot peppers, my family has grown to love the flavors of the Southwest. We now have a tradition of buying 50 pounds of chilies every year and roasting them on the grill. It keeps us stocked for the year.

Steps:
- Toss beef with flour until coated. In a Dutch oven over medium heat, brown beef in oil. , Add water, garlic, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 1 hour and 15 minutes or until the meat is tender. Add zucchini, corn, onion and chilies; bring to a boil. , Reduce heat; cover and simmer for 20-30 minutes or until the vegetables are tender. Sprinkle with cheese and serve with tortillas if desired.

CALABACITA CON CARNE DE PUERCO
Found this one a number of years ago in Texas Highways. I wanted to save safely. This originally was adapted from The Melting Pot: Ethnic Cuisine in Texas. Zucchini can be substituted for the mexican squash.

Steps:
- Brown pork in hot oil in a large skillet; drain.
- Stir in tomato, onion, bell pepper, garlic and cumin. Cover, reduce heat and simmer for about 15 minutes.
- Stir in corn, squash and salt. Cover and simmer for about 30 minutes.

Steps:
- Place processed cheese and milk in a slow cooker.
- Heat a large skillet over medium-high heat and cook and stir beef in the skillet until crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.
- Stir diced tomatoes and taco seasoning into ground beef and bring to a boil.
- Transfer ground beef mixture to the slow cooker. Stir with milk and processed cheese.
- Cook on High until cheese is melted, about 1 hour.

CARNE ASADA & ZUCCHINI
This is a great dish for a cool night. Filling and easy to make it is a great meal when you don't have a lot of time.

Steps:
- I like to use carne asada, but recipe did not recognize this ingredient.
- Cut up meat into small bite size pieces.
- With oil in the pan fry the garlic and onion slices for a few seconds before you put in the meat.
- Cook the meat until well browned.
- Slice the zucchini into thin slices and put into the pan. I like to use the side of my cheese grater to slice the zucchini it makes for very uniform slices and cooks well.
- Add remaining ingredients and simmer with lid on large pot.
- I sometimes add about 1/4 to 1/2 cup water to make it more soupy. You can eat this alone or over rice or sometimes I just add rice right into the pot while its cooking.
- Taste the broth it makes while cooking and adjust cumin salt and pepper to your liking.
- I also like to use a wok for this dish it just cooks well when I am making a large amount.

- In a large skillet heat oil on medium-high. Add the ground beef and break up with spoon. As it is cooking add the chuck roast. Drain any water/grease from the meat and then add the onion and continue to cook until translucent. Add the red pepper and vegetables. Stir in the spices: garlic, chili powder, paprika, cumin, salt, pepper until all the ingredients are well coated.
- Add the diced tomatoes, tomato paste, and beef broth. When the stew begins to reach a slight boil reduce the heat to simmer. Cover and cook for 30 minutes.
- If you would like to thicken the broth stir in the cornstarch mix and cook until desired consistency is reached. Serve with your favorite toppings
