2 teaspoons vegetable oil
3 tablespoons minced peeled fresh ginger (from a 2-inch piece)
2 scallions, very thinly sliced
3/4 pound shrimp (peeled and deveined)
4 teaspoons red curry paste
1 teaspoon fish sauce
24 wonton wrappers (from a 12-ounce package)
2 tablespoons soy sauce
1 teaspoon toasted sesame oil

Steps:

  • In a small skillet, heat 1 teaspoon vegetable oil over medium-high. Add 2 tablespoons ginger and scallions and cook, stirring, until scallions are slightly softened and mixture is fragrant, 2 minutes. Remove from heat. In a food processor, pulse shrimp until finely chopped. Transfer to a bowl and add ginger mixture, curry paste, and fish sauce; stir to combine.
  • Working with 1 wonton wrapper at a time, place 1 heaping teaspoon shrimp mixture in center. With a wet finger, moisten edges of wrapper, then bring all 4 corners together, pinching at top to seal. (Cover filled dumplings with a kitchen towel as you work.)
  • In a large nonstick skillet, heat 1 teaspoon vegetable oil over medium-high. Add dumplings, seam side up, and cook until golden brown on bottom, 1 minute. Carefully add 1/2 cup water to skillet, cover, and cook until water is almost evaporated and dumplings are tender, 3 minutes. Uncover and cook until water evaporates, 1 minute (reduce heat to medium if dumplings begin to overbrown). Meanwhile, in a small bowl, combine 1 tablespoon ginger, soy sauce, and sesame oil. Serve dumplings with dipping sauce.

2 medium carrots, peeled and sliced, plus 1 small carrot, peeled and cut into fine julienne
6 scallions, trimmed and sliced
2/3 cup fresh cilantro leaves
1 small jalapeno, seeded and coarsely chopped
1 pound large shrimp, peeled and deveined
2 egg whites
4 tablespoons all-purpose flour
4 teaspoons kosher salt
Freshly ground pepper to taste
1 teaspoon grated lime zest
1/2 green bell pepper, cored and diced fine
Soy-ginger steaming liquid (see recipe)
8 Boston lettuce leaves

Steps:

  • Process sliced carrots, scallions, cilantro and jalapeno in a food processor until minced. Scrape into a mixing bowl. Process shrimp in the food processor until a paste forms. Add egg whites, flour, salt, pepper and lime zest and process just to combine. Scrape the mixture into the bowl. Add green pepper and stir until the vegetables and shrimp paste are well mixed.
  • Shape mixture into balls about 1 1/4 inch in diameter. Place in a steamer, cover and steam over the liquid until cooked through, about 10 minutes. Place 2 lettuce leaves on each of 4 plates so that they overlap slightly. Divide the dumplings among them. Scatter with the julienned carrots and serve immediately.

¼ cup vegetable oil
1 large onion, chopped
10 fresh curry leaves
1 tablespoon ginger garlic paste
1 teaspoon ground coriander
⅔ teaspoon salt
½ teaspoon ground turmeric
1 tomato, finely chopped
1 teaspoon ground red chile pepper
2 pounds medium shrimp - peeled and deveined
¼ cup water
1 teaspoon garam masala
chopped fresh cilantro to taste

Steps:

  • Heat the oil in a wok or large saucepan over nearly high heat. Add the onions; cook and stir until browned. Mix in the curry leaves, then season with the ginger garlic paste, coriander and salt. Cook and stir for 1 minute.
  • Season with salt and turmeric, then mix in the tomato, chile powder, shrimp and water. Reduce the heat to medium-high and cook for 7 to 8 minutes, until shrimp are opaque. Taste and adjust salt and chile powder if necessary. Season with garam masala, stir and remove from the heat. Garnish with fresh cilantro and serve with flat bread or rice.

8 oz shelled and deveined shrimp
2 teaspoons red curry paste
2 teaspoon fish sauce
1 teaspoon cornstarch
A little egg white
Cilantro leaves, roughly chopped
Dumpling wrappers
Water, for wrapping

Steps:

  • Roughly chop the shrimp into pieces, transfer the shrimp into a bowl and combine it with the red curry paste, fish sauce, cornstarch, egg white and cilantro leaves. Stir to combine into a sticky filling. To wrap, place a heaping teaspoon of the filling onto the middle of a dumpling wrapper. Dip your index finger into some water and trace the outer edges of the dumpling wrapper. Fold up to form a half moon shape but only pinch to seal the middle part. Turn the dumpling and fold up the other two edges. Seal and pinch to form a nice and tight parcel like below. Repeat the same until you use up all the filling. Heat up a pot of water and bring it to boil. Drop the dumplings into the hot boiling water. As soon as they float to the top, they are ready. 3/4 cup wheat starch
2 tablespoons tapioca starch
1/4 teaspoon salt
2/3 cup water (divided, boiling)
2 1/2 teaspoons vegetable oil
For the Filling
6 ounces shrimp (rinsed, tails removed, and chopped)
3 tablespoons bamboo shoots (finely chopped)
1 1/2 teaspoons green onion (finely chopped)
3/4 teaspoon Chinese rice wine (or dry sherry)
1/4 teaspoon sesame oil
1/4 teaspoon salt (or to taste)
1/8 teaspoon white pepper (freshly ground)
1 large egg white (lightly beaten)
2 teaspoons cornstarch
For Shaping the Dough:
1/3 cup vegetable oil (or as needed)
For Serving:
Hot chili oil (to taste)
Soy sauce (to taste)

Steps:

  • Gather the ingredients.
  • In a medium-sized bowl, place the shrimp, bamboo shoots, green onions, rice wine, sesame oil, salt, pepper, egg white, and cornstarch. Mix well.
  • Cover and refrigerate for 1 hour to give the flavors a chance to meld.
  • In a medium bowl, combine the wheat starch, tapioca starch, and the salt.
  • Slowly stir in 1/2 cup of the boiling water. Add the oil and carefully use your hands to shape into a dough.
  • Add the remaining boiling water if the dough is too dry. Don't overwork the dough, but continue shaping it for about 2 minutes, until it is smooth and shiny.
  • Cover and let rest for 20 minutes.
  • Coat a paper towel with vegetable oil and use it to oil your cutting board or work surface and the broad side of a cutting knife or cleaver . Keep the dough covered to prevent it from drying out while preparing the dumplings.
  • Break off 1 teaspoon of the dough and roll into a ball. Flatten the ball of dough by pressing it in the palm of your hand.
  • Lay the dough on the oiled work surface and press down on it with the oiled side of the knife or cleaver to form a circle that is 2 1/2 to 3 inches wide.
  • Place a heaping teaspoon of filling in the middle of the wrapper, spreading it out evenly, without it touching the edges.
  • Carefully lift the top edge of the wrapper and fold it over the filling toward you to obtain a half-circle shape. Use your thumb and forefinger to form pleats in the dough, and pinch the edges closed.
  • Repeat the process until you have used all of the dough and filling, always greasing the work surface with vegetable oil when needed. Place the completed dumplings on a plate and cover with a damp cloth to keep them from drying out while preparing the remainder of the dumplings.
  • Add 2 inches of water to a wok that is at least 2 inches wider than the bottom of your steamer; bring to a boil.
  • Arrange an oiled plate inside the steamer. Place a few har gow on the oiled plate, cover, and place the bamboo steamer on top of the boiling water in the prepared pan. Steam the dumplings in batches, until the wrapper is translucent and the shrimp appear slightly orange, around 13 to 15 minutes per batch.

1/2 tablespoon Thai palm sugar (preferred) or sugar, add more to taste

33 wonton wrappers
1/4 cup cornstarch, for dusting
2 tablespoons vegetable oil
1/2 lb raw shrimp, cleaned and finely chopped
1/2 cup green onion, finely sliced
1 tablespoon ginger, grated
1 tablespoon oyster sauce
1 teaspoon white wine vinegar
1/4 teaspoon hot chili sauce (optional)
1 (400 ml) can coconut milk
1 tablespoon cilantro, chopped
1 tablespoon fresh basil, chopped

1 shallot, minced
1 tablespoon rice wine vinegar

Steps:

  • Filling: Combine all ingredients for filling and refrigerate.
  • Sauce: Combine all ingredients for sauce and set aside.
  • Fill a small bowl with water, set aside.
  • Dust a platter or baking sheet liberally with cornstarch. (This will prevent filled wontons from sticking, prior to cooking.).
  • On a cutting board place the wonton wrappers, three at a time, side by side.
  • Into the centre of each one, place about 1 teaspoon of the shrimp filling.
  • Using a small pastry brush, paint two opposite edges of the wonton wrappers with water.
  • Fold the wrapper over so that the ends meet.
  • Gather the edges together like a purse, ruffling the edge. Pinch tightly to ensure it is sealed together.
  • Place on cornstarch dusting baking sheet.
  • Repeat until all filling is used up.
  • Heat a skillet with 2 tablespoons (25 mL) vegetable oil.
  • Place the wontons in the hot oil for about a minute or until browned on the bottom.
  • Add sauce and put the lid on, reduce heat to low.

1 tablespoon olive oil
1/4 cup finely chopped onion
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
1 garlic clove, minced
1 teaspoon curry powder
1/3 cup fat-free plain Greek yogurt
2 tablespoons chopped fresh cilantro
1 tablespoon water
1/4 teaspoon salt
1/4 teaspoon pepper
Hot cooked rice, optional

Steps:

  • In a large skillet, heat oil over medium-high heat. Add onion; cook and stir 1-2 minutes or until tender. Add shrimp; cook and stir 2 minutes. Add garlic and curry powder; cook and stir 30-60 seconds longer or until shrimp turn pink., Remove from heat. Stir in remaining ingredients. If desired, serve with rice.

Boiled Shrimp and Pork Dumplings image

A couple of weeks ago I went to a market and saw some dumplings in one of the stalls. I wanted to buy some but they were so expensive, so I decided I'd just make them myself. The preparation - filling and shaping the dumplings - does take time, but I think it is worth the result.

Number Of Ingredients 15

200 g ground pork
100 g shrimp, finely chopped or ground using food processor
2 garlic cloves, minced
2 green onions, finely chopped
1 teaspoon soy sauce
1 tablespoon rice wine
1/2 tablespoon sesame oil
1 teaspoon cornstarch
1 teaspoon oyster sauce
1/4 teaspoon ground black pepper
30 -40 wonton wrappers
3 cups chicken stock
salt and pepper, to taste (for the stock)
1 dash mushroom soy sauce (optional, but remember that the stock will look a bit brown)
cauliflower (optional) or carrot, chopped (optional)

Steps:

  • Mix all ingredients except wonton wrappers and stock.
  • Place a teaspoon of meat mixture in the center of wrappers.
  • Enclose the filling - you can shape the wontons into any shape you want. Don't forget to wet the edges of wrappers to ensure the filling is sealed well.
  • Boil the chicken stock over high heat.
  • Reduce heat to low and simmer.
  • Carefully put dumplings into stock and cook, covered, until dumplings float in the surface. Don't crowd the dumplings - you may need to repeat this step for 2-3 times.
  • Add the vegetables along with the last batch of dumplings, if using.
  • Add salt, pepper, or soy sauce to taste.
  • Enjoy!

  • Roughly chop the shrimp into pieces, transfer the shrimp into a bowl and combine it with the red curry paste, fish sauce, cornstarch, egg white and cilantro leaves. Stir to combine into a sticky filling.
  • To wrap, place a heaping teaspoon of the filling onto the middle of a dumpling wrapper. Dip your index finger into some water and trace the outer edges of the dumpling wrapper. Fold up to form a half moon shape but only pinch to seal the middle part. Turn the dumpling and fold up the other two edges. Seal and pinch to form a nice and tight parcel like below. Repeat the same until you use up all the filling.
  • Heat up a pot of water and bring it to boil. Drop the dumplings into the hot boiling water. As soon as they float to the top, they are ready. Scoop out with a slotted spoon, shake off the excess water, transfer to a plate and serve immediately.
