SHARP CHEDDAR BAKED ZUCCHINI FRITTERS

These Sharp Cheddar Baked Zucchini Fritters are the ultimate summer appetizer! Made with garden-fresh zucchini and cheddar cheese, they come together in no time and always impress at the party.

Sharp Cheddar Zucchini Bites
1 1/2 pounds zucchini (about 3 large, grated)
1 1/2 teaspoons salt
6 ounces Cabot Vermont Sharp Cheddar Cheese
1 3/4 cup panko
1/2 cup finely chopped parsley
2 eggs
1 large shallot (finely chopped)
3 cloves garlic (minced)
2 tablespoons dijon mustard
1/2 teaspoon lemon zest
1/2 teaspoon pepper
Lemon Parsley Dipping Sauce
1/2 cup sour cream
3 tablespoons finely chopped parsley
Juice of half a lemon
1 tablespoon water
1 teaspoon dijon mustard
Salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees. Line two baking sheets with parchment and lightly spray with non-stick spray.
  • Evenly salt the grated zucchini in a large bowl and allow to stand for 10 minutes. Using a colander or cheesecloth, squeeze out as much liquid as possible from the zucchini.
  • Combine the zucchini and the remaining zucchini bite ingredients in a large bowl and mix well.
  • Scoop a tablespoon sized scoop of the zucchini mixture and place on the baking sheet. Keep going until you've used it all up!
  • Gently press down on the tops of the zucchini bites to slightly flatten them.
  • Bake for 30 minutes, flipping halfway through until browned on both sides.
  • While your sharp cheddar zucchini bites are baking, you'll want to make the dipping sauce. Just mix all the sauce ingredients together in a medium bowl and chill until ready to serve.
  • Once your bites are done, serve them on a cute tray with the dipping sauce and enjoy!

3 cups shredded zucchini (about 2 zucchinis, peel on)
¼ tsp salt
½ cup shredded cheddar cheese
¼ cup whole grain seasoned bread crumbs
½ medium white onion (diced)
½ cup shredded carrot (about 2 carrots)
2 large eggs
1 clove garlic (minced)

Steps:

  • Prep: Preheat oven to 375 degrees F (190 C). Shred zucchini with a food processor or box grater. Spread onto a few layers of paper towels. Sprinkle with salt and set aside for 15 minutes.
  • Stir: Shred/dice/measure remaining ingredients. Press excess water out of zucchini then mix everything together. Spoon golf ball-sized rounds onto a parchment-lined baking sheet.
  • Bake: For 30 minutes, or until outsides are brown and crisp.

4 medium-sized zucchinis
¾ cup bread crumbs
¾ cup shredded cheddar cheese
2 eggs
1 tablespoon garlic powder
1 teaspoon pepper
salt, to pull moisture from the zucchini

Steps:

  • Preheat oven to 400°F (200˚C.)
  • Grate the zucchini into a bowl and salt generously.
  • Allow zucchini to sit for 20 minutes as the salt draws out moisture.
  • Pour zucchini onto a clean dish towel and wring it out over the sink or into a separate bowl.
  • Pour the zucchini back into your bowl and add bread crumbs, cheddar cheese, eggs, garlic powder, and pepper. Mix together until well-blended.
  • Take a tablespoon of mixture and roll it into a tot, repeat for rest of mixture.
  • Place on a greased baking sheet and place in the oven for 20-25 minutes or until tots are crunchy. Serve warm.
  • Enjoy!

This recipe was sent to me by my mum,who thought that her beloved grandchildren might enjoy them! The first time I made them they didn't even get a chance to go cold,as the children and I devoured them.I have since made them to take to our local playgroup end of term party,and once again,children and parents alike loved them.They are so simple and delicious,and a great way to get some extra veggies into your children.Perfect for picnics and lunchbags.I often pack a few in a tub for when we go shopping for child friendly snacks.I should imagine that these would be good served warm with pre dinner drinks or as part of a finger buffet.

1 tablespoon olive oil
1 onion, finely chopped
3 slices rindless bacon, finely sliced
1 large carrot, grated
1 large zucchini, grated
3 eggs
1 cup cheese, grated
1/4 cup cream
1/2 cup self rising flour

Steps:

  • Heat the oil in a large pan and sauté onion until translucent. Add the bacon and fry until it starts to colour. Add the carrot and zucchini and cook for about 2 minutes.
  • Transfer mixture to a bowl to cool.
  • Beat the eggs, cream and cheese together; season to taste.
  • Stir the egg mixture into the cooled zucchini mixture. Stir in the flour.
  • Grease and flour little muffin/bun tins. Spoon mixture into the holes.
  • Bake at 180°C/350°F/Gas 4 for 15-20 minutes.
