Zucchini Casserole That Even

Got this recipe from an old friend and have been making it for almost 20 years. Every family dinner, holiday dinner and potluck, I am always asked to bring this dish. It has become a staple everywhere I go. There's never any leftovers - yes, it's that good! Best part is it's so easy to make. You can used ready to use, bagged shredded cheese if you're short on time.

Number Of Ingredients 7

6 cups sliced zucchini
2 cups Bisquick
6 eggs
1 cup oil
2 cups grated mozzarella cheese
1 1/2 cups grated parmesan cheese
2 teaspoons pepper

Steps:

  • Preheat oven to 350 degree.
  • Mix all ingredients in very large bowl until well blended.
  • Place in large casserole dish (it will expand, so leave room).
  • Bake covered for 1 hr., 15 minutes.
  • Remove foil and bake for an additional 15 minutes or until golden brown.

  • Line sliced zucchini in an even layer on paper towels. Sprinkle evenly with kosher salt; let rest 15 minutes.
