3 eggs
1 cup vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 ⅓ cups all-purpose flour
¼ teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
2 cups grated zucchini
½ cup margarine
1 (3 ounce) package cream cheese, room temperature
2 ½ cups confectioners' sugar, sifted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • In a large bowl, mix together the eggs, oil, sugar and vanilla until well blended. Combine the flour, baking powder, baking soda and salt; stir into the sugar mixture. Mix in the zucchini. Spread the batter evenly into the prepared pan.
  • Bake in preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.
  • To make the frosting, blend together the margarine, cream cheese and confectioners' sugar until smooth. Spread over warm cake. Allow cake to cool completely before cutting into bars.

1¾ cup flour
2 cups grated zucchini
1 tsp. vanilla
½ tsp. salt
2 tsp. cinnamon

¾ cup coconut, optional
½ cup nuts, optional
2 cups confectioners sugar
2½ Tbsp. milk
1½ Tbsp. melted butter
1 tsp. vanilla
½ tsp. cinnamon

Steps:

  • Preheat oven to 350 degrees F and grease a 13x9-inch pan.
  • In a mixer bowl, beat together sugar, brown sugar, butter and eggs.
  • Add the flour and grated zucchini alternately into the mixer and combine.
  • Mix in the vanilla, salt, cinnamon and baking powder. Add coconut and nuts if you would like or one or the other whatever your preference!
  • Bake for 40 minutes and allow to cool.
  • Mix together the frosting with your mixer. Mix together confectioner sugar, milk, melted butter, vanilla and cinnamon. Ice the bar cookies, slice and enjoy!

1/2 cup buttermilk
1 tablespoon grated lemon zest

3-1/4 cups plus 2 tablespoons all-purpose flour, divided
1 teaspoon baking soda
1/2 teaspoon salt
2 cups fresh or frozen blueberries
GLAZE:
2 cups confectioners' sugar
1/4 cup buttermilk
1 tablespoon grated lemon zest
2 teaspoons lemon juice
1/8 teaspoon salt

Steps:

  • Preheat oven to 350°. Grease a 15x10x1-in. baking pan., In a small bowl, combine zucchini, buttermilk, lemon zest and lemon juice; toss to combine. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs, 1 at a time. In another bowl, whisk 3-1/4 cups flour, baking soda and salt; gradually add to creamed mixture alternately with zucchini mixture, mixing well after each addition. Toss blueberries with remaining flour; fold into batter., Transfer batter to prepared pan, spreading evenly (pan will be full). Bake 30-35 minutes or until light golden brown and a toothpick inserted in center comes out clean. 1/2 cup oleo (not spread or tub product) or 1/2 cup butter, room temperature (not spread or tub product)
1 teaspoon vanilla
1 (3 ounce) package cream cheese, room temperature
2 1/2 cups powdered sugar
milk, as needed

Steps:

  • Preheat oven to 350°F and grease/flour a 13x9-inch baking pan.
  • Beat eggs; add sugar and oil.
  • Add the zucchini and vanilla; stir to mix well.
  • Sift the dry ingredients together and add to the egg mixture.

  • Preheat oven to 350*.
  • Grease a 10 x 13 inch pan, with cooking spray.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Gradually add the eggs, flour, baking soda, cinnamon, and salt: mix well.
  • Stir in the zucchini, walnuts, and chips.
  • Batter will be very thick and heavy.

6 -8 cups zucchini, peeled, cubed with seeds removed
2/3 cup lemon juice
1 cup sugar
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon vanilla
4 cups flour
3 cups sugar
1/2 teaspoon salt
1 1/2 cups margarine (3 cubes)
1 teaspoon cinnamon

Steps:

  • Cook zucchini in lemon juice until tender, use often.
  • Add 1 cup sugar, nutmeg and 1 teaspoon cinnamon and vanilla and let simmer for two minutes.
  • While zucchini cooks, combine the flour, 2 cups sugar, salt and margarine in a large bowl and mix well.
  • Add 1/2 cup of the crumb mixture to the zucchini to thicken, stir well, turn off the heat after thick.
  • Pat 1/2 of the remaining crumb mixture into a greased 9x13-inch pan.
  • Bake at 375°Fs for 10 minutes.
  • Spread zucchini evenly over the crust.
  • Add 1 teaspoon cinnamon to the remaining crumb mixture and spread over the top of the zucchini.
  • Bake at 375°F for 30-40 minutes, until bubbling around the crust.
  • Let cool before cutting into bars. Can be warmed up in microwave and top with ice cream.

1 cup all-purpose flour
½ cup white sugar
½ cup very soft butter
2 cups evaporated milk
2 eggs
1 ½ cups white sugar
¼ cup all-purpose flour
1 tablespoon butter
2 teaspoons vanilla extract
1 tablespoon white sugar
½ teaspoon ground cinnamon

Steps:

  • Bring a pot of water to a boil over medium heat, and cook the zucchini until tender, about 5 minutes. Drain the zucchini in a colander set in the sink, and set aside to cool.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine 1 cup of flour, 1/2 cup of sugar, and 1/2 cup of very soft butter in a bowl until crumbly and well combined. Press the mixture into the bottom of the prepared baking dish.
  • Measure out 3 cups of cooked zucchini, and place into a blender. Pour in the evaporated milk and eggs, and add 1 1/2 cups of sugar, 1/4 cup of flour, 1 tablespoon of butter, and the vanilla extract to the zucchini. Pulse the blender several times to combine the ingredients, and then blend until the filling mixture is pureed, about 1 minute. Pour the mixture over the crust. Combine 1 tablespoon of sugar with the cinnamon in a small bowl, and sprinkle over the filling.
  • Bake in the preheated oven until the middle of the dessert is set, about 45 minutes. Let cool, and chill in refrigerator before slicing.
