ZIPPY PEANUT STEAK KABOBS

- In a small saucepan, combine brown sugar and water. Cook and stir over low heat until sugar is completely dissolved. Remove from the heat. Whisk in peanut butter until blended. Stir in the soy sauce, barbecue sauce, oil, pepper sauce and garlic. , Pour 3 cups of the marinade into a large resealable plastic bag; add beef. Seal bag and turn to coat; refrigerate for 4 hours. Cover and refrigerate remaining marinade until serving., Drain and discard marinade. Sprinkle ginger over pineapple. On 16 metal or soaked wooden skewers, alternately thread the beef, pineapple and red peppers. , Grill, covered, over medium heat for 5-7 minutes on each side or until meat reaches desired doneness. Serve with rice and reserved marinade for dipping.

FLANK STEAK KEBABS WITH PEANUT SAUCE

- Heat a grill to medium-high. Clean and lightly oil hot grill. Place a small flameproof pot on grill; add peanut butter, coconut milk, chili sauce, and fish sauce and whisk until smooth and heated through. Transfer sauce to a serving bowl and top with peanuts.
- Alternately thread steak, zucchini, bell pepper, and lime onto four 8-inch skewers, beginning and ending with steak. Season with salt and pepper and grill, turning occasionally, until steak is browned and cooked medium and peppers are crisp-tender, 7 to 9 minutes. Serve with peanut sauce.

STEAK AND VEGETABLE KABOBS
Found this recipe in TOH Magazine, submitted by Lorri Cleveland, and am posting here to clear up space in my cookbook shelves. We grill year round here in FL so I am always on the lookout for new recipes to grill. I marinade the steak and veggies, but put veggies on separate skewers from the steak, so I can cook them to the correct doneness. Use your favorite vegetables of choice.

- In a large bowl, combine first seven ingredients; set aside. On metal or soaked wooden skewers, alternately thread meat and vegetables.
- Place in a large glass dish. Pour marinade over kabobs; cover and refrigerate for 6 hours or overnight, turning several times. Discard cloves.
- Grill over medium-hot heat until the meat reaches desired doneness and vegetables are tender.

- Pulse first 5 ingredients in blender until smooth; reserve 1/2 cup mixture for later use. Pour remaining dressing mixture over meat in shallow dish. Refrigerate 1 hour to marinate.
- Heat grill to medium heat. Remove meat from marinade; discard marinade. Thread meat onto 4 skewers. Grill kabobs 9 to 11 min. until meat is done, turning occasionally.
- Meanwhile, heat reserved dressing mixture and peanut butter in small saucepan on medium-low heat until peanut butter is melted and mixture is well blended, stirring occasionally. Serve kabobs with peanut butter sauce for dipping.

- Combine first 3 ingredients. Thread beef strips onto skewers; brush with A. 1. mixture. Marinate 30 min.
- Meanwhile, combine dressing and chili sauce in small bowl. Reserve 2 Tbsp. dressing mixture; refrigerate remaining mixture.
- Heat grill to medium-high heat. Remove beef from marinade; discard marinade. Grill skewers 3 min. on each side until cooked through, brushing with reserved 2 Tbsp. dressing mixture during the last minute of grilling. Serve with remaining dressing mixture, nuts and onions.
