Steps:
- Melt butter in a large saucepan over low heat.
- Blend in flour, salt, pepper, cayenne and mustard.
- Stir constantly for one minute until well mixed. Remove from heat and gradually stir in milk.
- Return to heat and cook over medium high heat until thick and bubbly. Stir frequently.
- Mix in cheese and stir until melted. Remove from heat, cover to keep warm until serving.
ZIPPY CHEESE DIP

- In a saucepan, saute onion in butter until tender. Add tomatoes, cheese, Worcestershire sauce, paprika, salt and hot pepper sauce. Cook and stir over medium heat until cheese is melted. Remove from heat. Stir a small amount of hot mixture into eggs. Return all to the pan, stirring constantly. Cook and stir until mixture reaches 160°. Serve warm with crackers. Store leftovers in the refrigerator.

ZIPPY SAUCE
This is a spicy sweet tomato chow chow that we make in the summertime with our home grown tomatoes. This goes well as a side to peas and other vegetables and also poured over a block of cream cheese as a spread with crackers.

Steps:
- Process all vegetables in a food processor to desired consistency. We like ours to be a bit chunky like salsa.
- Bring vinegar, salt and sugar to a boil on the stove to dissolve ingredients.
- Combine everything in a large stock pot.
- Bring to a boil and then simmer uncovered for 2 hours.
- Can in pint jars or enjoy immediately.

- In a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. , Transfer to a 5-qt. slow cooker. Stir in the tomato sauce, tomatoes, tomato paste, mushrooms, cheese, wine, olives, parsley, oregano, Italian seasoning, garlic, salt and pepper. Cover and cook on low for 6-8 hours. - For the fish: Cut mahi mahi (or fish of your choice) into small fillets. Mix together the olive oil, lime juice, 1/2 bunch chopped cilantro, and salt and pepper (you determine the amount of salt and pepper). Marinate the fish in the mix for 30 to 40 minutes. Grill for 4 minutes on each side. Remove and break the fish into pieces.
- For the salsa: Dice all ingredients and cook for 15 minutes. Puree and cool.
- For the Zippy Sauce: Mix the ingredients together.
- For the finished product: Preheat the oven to 350 degrees. Stuff the hard shell with mahi mahi (or fish of your choice), cheese, and tomatoes. Sprinkle the soft shell with cheese and wrap around the hard shell. Place in a pre-heated oven for 3 minutes, then top with salsa, zippy sauce, cabbage, and any extra cilantro. Serve with a slice of lime if desired.

- Spread about 2 tablespoons of beans on each tortilla. Combine soup and sour cream; stir in chicken. Spoon 1/3 to 1/2 cup down the center of each tortilla; top each with 1 tablespoon cheese. , Roll up and place seam side down in a greased 13x9-in. baking dish. Pour enchilada sauce over top; sprinkle with the onions, olives and remaining cheese. , Bake, uncovered, at 350° for about 35 minutes or until heated through. Just before serving, sprinkle lettuce around enchiladas if desired. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.
