Spicy Garlic Beef Stir Fry image

This stir fry is delicious with tender strips of beef, sweet fresh veggies and a spicy beef sauce. I like to marinate my stir fry meat before cooking to add an extra layer of flavor. I like to use Dale's Liquid Steak Seasoning, but it can be difficult to find. If you can't find this product, substitute 1 1/2 tbs. soy sauce plus 1 tbs. Worcestershire Sauce. It's not the same but close enough. The heat level of this dish is just right for me, but you may adjust the amount of cayenne pepper per your taste.

1 lb sirloin steak, sliced into thin strips (1/4-inch)
2 tablespoons dale's liquid steak seasoning (low sodium)
2 tablespoons soy sauce
1/4 teaspoon garlic powder
1/4 teaspoon ginger, ground
1/4 teaspoon cayenne pepper
1 beef bouillon cube
1/2 cup water, boiling
1 tablespoon cornstarch
2 tablespoons vegetable oil
2 cups snow peas, trimmed
1 cup red bell pepper, sliced into thin strips
1 cup asparagus, sliced into 2-inch lengths
1 garlic clove, minced
1 onion, sliced thin (medium-sized)
1/4 teaspoon black pepper, freshly ground
2 cups white rice (I use quick-cooking)

Steps:

  • In a small mixing bowl, dissolve beef bouillon cube in boiling water. Set aside to cool.
  • Place beef and steak seasoning in a plastic resealable bag. Seal bag, releasing as much air as possible, and toss/squeeze with hands until well coated. Marinate for 30 minutes at room temperature.
  • Once beef bouillon mixture has cooled, whisk in soy sauce, garlic powder, ginger, cayenne pepper and cornstarch. Set aside.
  • In a wok, heat 1 tbs. oil until glistening. Brown beef strips on both sides, leaving a slight tinge of pink in the middle. Remove to another dish, cover and set aside.
  • Add remaining 1 tbs. oil to wok. Add vegetables and black pepper and cook until crisp-tender. Once vegetables are cooked, return beef to wok and toss to combine.
  • Make a well in the center of the wok and add sauce mixture, stirring constantly until slightly thickened. Then toss all together.
  • Serve immediately over rice.

  • SLICE meat thinly across the grain. Heat 1 tablespoons oil in large nonstick skillet or wok over high heat. Stir-fry beef in batches until browned, about 10 minute Remove from skillet.
  • STIR-FRY vegetables, ginger and garlic in remaining 1 tablespoons oil for 3 to 5 minute until vegetables are crisp-tender. Return beef to skillet.
  • STIR in gravy and Worcestershire. Cook until sauce thickens slightly and flavors are blended. Serve over cooked rice, if desired.

To get closer to the original dish, seek out Sichuan peppercorns.

3 tablespoons Asian black bean sauce
4 pickled hot cherry peppers, chopped, plus 2 tablespoons brine

Steps:

1/4 cup green onion, thinly sliced
1/4 cup soy sauce
2 garlic cloves, minced

Steps:

  • Slice beef across the grain into bite-size strips. (If beef is partially frozen it is easier to slice).
  • Combine green onions, soy sauce, garlic, sesame oil, sesame seed, red pepper flakes, sugar and pepper; add meat and marinate 30 minutes at room temperature.
  • Drain meat, reserving marinade.
  • Dissolve cornstarch in water and add to reserved marinade, mixing well.
  • Preheat wok or large skillet over high heat; add 1 tablespoon oil, then add carrots and stir fry 3 minutes. Add broccoli and cauliflower slices and stir-fry 2 minutes (until vegetables are crisp-tender). Remove vegetables and keep warm.
  • Add remaining oil to pan.
  • Add half the beef to hot pan and stir-fry 2-3 minutes (until brown). Remove beef and stir-fry remaining meat. Return all meat to pan.
  • Stir marinade a little and pour into skillet or wok. Cook and stir until thickened and bubbly. Stir in the vegies. Cover and cook 1 minute.

Using thinly sliced beef tenderloin means the dish is ready in just minutes, and you can adjust the heat to taste by reducing or increasing the number of fresh bird's-eye chiles. Made with fresh holy-basil leaves, the classic Thai dish is known as phat ka-phrao. If you can't find holy basil at a Thai market, Indian market or health food store, you could swap in more widely available Thai sweet basil (pictured), and make a dish of phat bai hora-pha. The dish could be one part of a larger meal or stand alone with some jasmine rice and a fried egg.

Steps:

  • If you're making rice with this dish, get it started. In a small bowl, stir together the soy sauce, oyster sauce, fish sauce, chicken stock and sugar. In a mortar or small food processor, grind together the garlic and chiles into a coarse paste.
  • Heat the lard in a wok or large skillet over medium-high heat. Add the garlic-chile paste, and stir until fragrant, about 1 minute. Before the garlic starts to brown, add the beef, and stir-fry to separate the pieces and coat with fat. Add the liquid mixture, making sure not to leave any behind in the bowl, and cook until the beef is only barely pink, about 2 minutes. This beef stir-fry is a little spicy...if you need a milder version reduce the crushed red pepper by half. This comes from "Plain & Elegant: A Georgia Heritage" . The original recipe does not call for any green vegetable, but I like to add some fresh asparagus when I cook the squash....but I posted it as originally posted.

2 lbs sirloin steaks, boneless
2 large red bell peppers, coarsely chopped
1/4 cup vegetable oil, divided
2 medium onions, cut into wedges
4 garlic cloves, minced
2 small yellow squash, cut into 1/2 inch cubes
6 stalks asparagus, cut into 1 1/2 inch pieces (optional...not in original recipe)
3 tablespoons soy sauce
2 tablespoons dry crushed red pepper
1 teaspoon black pepper
hot cooked rice
green onion, cut into strips

Steps:

  • Trim excess fat from the steak; slice the steak diagonally across the grain into thin strips. Set aside.
  • Place the chopped red bell peppers in a food processor or blender; cover and process until smooth, stopping frequently to scrape down the sides. Set aside.
  • Pour 2 tablepoons oil around the top of a preheated wok or large skillet, coating the sides; heat at medium-high (375 degrees) for 2 minutes. Add the onion and minced garlic, and stir-fry 2 minutes. Add the squash, (and asparagus if using) and stir-fry for 1 to 2 minutes or until crisp-tender. Remove the vegetables from the wok and set aside.
  • Pour 1 tablespoon oil into the wok; add half of the steak strips, and stir-fry 2 to 3 minutes or until browned. Remove the steak from the wok, and set aside. Pour the remaining 1 tablespoon of oil into the wok. Add the remaining steak strips, and stir-fry 2 to 3 minutes or until browned.
  • Combine the soy sauce, crushed red pepper, and black pepper. Add the soy sauce mixture, red bell pepper puree, reserved vegetable mixture, and steak strips to the wok. Stir fry until thoroughly heated. Serve over rice.
  • Garnish with green onion strips.

¼ cup cornstarch
¼ tablespoon salt
black pepper
12 ounces flank steak, thinly sliced
1 quart oil for frying
4 tablespoons soy sauce
1 tablespoon rice vinegar
½ tablespoon rice wine
1 ½ tablespoons honey
7 tablespoons granulated sugar
½ tablespoon chile paste
¼ cup water
3 tablespoons chopped fresh ginger root
1 tablespoon vegetable oil
2 cloves garlic, chopped
¼ cup sliced onion
¼ cup diced red bell pepper

Steps:

  • Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  • Meanwhile, in a mixing bowl, combine cornstarch, salt and pepper together. Mix thoroughly. Toss the steak slices in the cornstarch mixture and coat well.
  • Deep fry the coated steak slices until golden brown. Check to make sure they are cooked through. Remove from oil, and set aside.
  • In another mixing bowl, combine the soy sauce, rice vinegar, rice wine and honey. Add sugar, chili paste, water, and ginger. Mix well and set aside.
  • Heat a wok or deep frying pan over medium high heat. Add 1 tablespoon of oil, and quickly saute the onion, garlic and red pepper for 30 seconds. Add the sauce mixture, and cook another 30 seconds. Finally, add the strips of fried steak and toss to heat through and coat with sauce.
