For a quick dinner, I prepare the marinade in the morning before work then throw them on the grill when I get home.

¼ cup fresh lemon juice
1 tablespoon brown sugar
1 tablespoon chili sauce

8 center cut pork chops

Steps:

  • In a large resealable bag, mix together the soy sauce, lemon juice, brown sugar, chili sauce, and garlic powder.. Place the pork chops into the bag, carefully seal the bag, and marinate for 6-12 hours in the refrigerator. Turn the bag over about halfway through.
  • Preheat an outdoor grill for high heat.
  • Arrange pork chops on the lightly oiled grate, and cook 5 to 7 minutes on each side, until the internal temperature reaches 145 degrees F (63 degrees C).

1 tablespoon coarsely ground Korean hot red pepper flakes

Steps:

  • To make marinade: Whisk first 9 ingredients (excluding pork) together in medium bowl. Pour into one-gallon sealable plastic bag. Add pork chops, coating pork in marinade. Close bag and refrigerate, turning bag occasionally, for at least 2 and up to 6 hours. To make pork: Prepare outdoor grill for direct cooking over medium-high heat, about 450 degrees F. Brush grill grates clean. Remove pork from marinade - do not shake off excess marinade. Discard remaining marinade. Grill, with grill lid closed, turning once, until the internal temperature reads between 145 degrees F. (medium rare) to 160 degrees F. (medium) on a digital meat thermometer, about 10 minutes. Yes, the title says it all! This recipe was created by mistake. While using another recipe as a guide, I made the mistake of using cocktail sauce instead of chili sauce. Well, this was the best darn mistake I have ever made. These pork chops had the most wonderful zip to them! Mistakes like this should happen more often!

¾ cup water
½ cup brown sugar
1 tablespoon honey
1 dash lemon juice
4 pork chops
1 cup ketchup
½ cup cocktail sauce
¼ cup brown sugar
2 tablespoons water
1 ½ teaspoons ground dry mustard

Steps:

  • In a saucepan over medium heat, mix the soy sauce, water, brown sugar, honey, and lemon juice. Bring to a boil, remove from heat, and cool.

1 cup vegetable juice cocktail (V8)
3 tablespoons chopped onions
3 tablespoons green peppers, chopped

6 medium jalapeno peppers, stemmed
4 habanero peppers, stemmed
5 cloves garlic
2 tablespoons Worcestershire sauce

¼ cup all-purpose flour
1 (1 ounce) package dry onion soup mix
1 pinch cayenne pepper, or to taste

1 cup canola oil for frying, or as needed

Steps:

  • Combine onion, jalapeno peppers, habanero peppers, garlic, and Worcestershire in the bowl of a food processor; puree until smooth.
  • Pour a thin layer of marinade in the bottom of a medium rectangular glass or ceramic container so the bottom is completely covered. Place 4 pork chops in the bowl and cover in marinade. Add last 4 pork chops and pour in remaining marinade, ensuring all pork chops are coated. Cover and refrigerate, 8 hours to overnight.
