BAKED SALMON WITH VEGETABLES AND FETA
This easy baked salmon recipe with vegetables and feta is the perfect one-pan dinner for any night of the week! For tender, flaky, never-dry salmon, it helps to take the salmon out of the fridge about 15 minutes or so before cooking. Here, you'll also par-cook the vegetables briefly before adding the salmon in. And finally, cover the salmon with foil to trap the moisture in.

- Heat the oven to 425 degrees F and arrange a rack in the middle.
- In a small bowl, combine the oregano, sumac, and cumin.
- In a baking dish or sheet-pan, arrange the tomatoes, mushrooms, bell peppers, and 4 to 5 whole garlic cloves. Nestle the chunks of feta in between. Sprinkle with 1 ½ teaspoons of the spice mixture and a good pinch of kosher salt and black pepper. Add a few sprigs of fresh thyme. Drizzle with 1 to 2 tbsp olive oil.
- Place the sheet pan in the heated oven on the center rack. Bake for 5 to 10 minutes until the veggies are softer.
- Meanwhile, pat the fish dry and season on both sides with kosher salt and black pepper and the remainder of the spice mixture.
- Carefully remove the sheet pan from the oven and add the fish in with the veggies and feta.
- Cover the sheet pan with foil and return to the center rack of the heated oven. Cook for about 10 minutes or until the fish is cooked through and flakes easily. Remove from the oven and immediately squeeze lemon juice onto the fish.

Steps:
- Preheat the oven to 400°F (200°C or 180°C for fan ovens).
- Arrange the onion, zucchini, red peppers and chickpeas on a baking sheet/sheet pan.
- Mix the oil and the Harissa together.
- Toss three quarters of the oil and spice mixture with the vegetables.
- Spread the vegetables evenly on the baking sheet and place in the oven for 20 minutes.
- Remove the pan from the oven and toss the vegetables again with a spatula.
- Nestle the salmon fillets or side of salmon amongst the vegetables.
- Brush the salmon with the remaining oil and spice mixture.
- Bake for 10 minutes for salmon fillets or 15 to 18 minutes for a side of salmon, until the salmon is cooked through and flakes easily with a fork.
- Serve garnished with flat leaf parsley.
PISTACHIO-CRUSTED SALMON

- Preheat the oven to 375 degrees F (190 degrees C).
- Combine pistachios, panko bread crumbs, Parmesan cheese, and butter in a small bowl; stir with a fork until evenly combined.
- Lightly season salmon fillets with salt and pepper on both sides.
- Heat olive oil in a large oven-safe skillet over medium heat. Sear salmon fillets, flesh-side down, for 2 to 3 minutes. Turn heat off and flip salmon pieces over so skin side is down. Brush tops of salmon evenly with Dijon mustard. Top with pistachio mixture, pressing mixture down onto salmon.

- Boil the potatoes in a large pan for 4 mins. Tip in the peas and beans, bring back up to a boil, then carry on cooking for another 3 mins until the potatoes and beans are tender. Whizz the olive oil, lemon zest and juice and mint in a blender to make a dressing(or finely chop the mint and whisk into the oil and lemon).

- Place the fish in a large bowl, add 2 tbsp of the olive oil, orange zest and season well. Carefully toss the fish to coat, cover and leave to marinate in the fridge for 1-2 hours. Put the raisins into a small bowl, pour over the orange juice and set to one side. Heat oven to 200C/fan 180C/gas 6.
- Place the peppers in a large shallow, ovenproof pan (approx 35cm diameter) or large shallow roasting tray and drizzle with the remaining olive oil. Season, toss together and roast in the oven for 30 mins. Toast the pine nuts on a baking tray on another shelf of the oven for 8-10 mins, until golden.
- Arrange the fish and raisins on top of the peppers and pour over the juices. Scatter the pine nuts over and season with a good pinch of salt. Cook in the oven for 12-15 mins until the fish is just cooked through. Scatter with parsley and bring to the table.

- LIne a baking sheet with greased foil.
- Place the samon fillets on the prepared sheet.

- In a small bowl, combine yogurt, spicy dijon, dill, chives, and honey. Set aside.
- Cut salmon into ½ inch (1¼ cm) cubes and transfer to a food processor.

- Heat oven to 180C, 160C fan, gas 4. Trim the stems of the beetroot and reserve any tender leaves that are suitable for eating in the salad. Cut the beetroots into quarters then toss with 1/2 tbsp oil, the coriander seeds, and some seasoning then pile into the centre of a large sheet of foil and wrap up like a parcel. Bake for 45 mins or until the beetroots are tender then top with the salmon, scatter over half the orange zest and return to the oven for 15 mins. If you want to toast the pumpkin seeds, put them in the oven for 10 mins.
- Meanwhile cut the peel and pith from 2 oranges then cut out the segments with a sharp knife working over a bowl to catch the juices. Finely grate the garlic and leave for 10 mins to allow the enzymes to activate. Stir the garlic into the orange juice and remaining oil with seasoning to make a dressing.
- Remove the parcel from the oven and carefully lift off the fish. Tip the beetroot into a bowl with the red onion, remaining orange zest, pumpkin seeds and spinach leaves and toss well. Gently toss through the orange segments and avocado with any beet leaves then pile onto plates and top with the warm salmon. Drizzle over the dressing and serve while still warm.
