ZESTY BISCUIT BEAN BAKE
This came from Pillsbury's Harvest Time Cook Book. My husband and I can almost eat the whole thing ourselves - it is sooo good.

Steps:
- Heat oven to 375 degrees F.
- In 10-inch ovenproof skillet, brown ground beef and onion; drain.
- Reserve 1 T seasoning mix; set aside.
- Add remaining seasoning mix, beans, brown sugar and catsup to ground beef; heat until hot and bubbly.
- Separate biscuit dough into 10 biscuits.
- Place cheese cube in center of each biscuit.
- Fold dough over cheese, covering completely; seal well, shaping into balls.
- Roll each biscuit in reserved seasoning mix; arrange biscuits on hot meat mixture.
- Bake at 375 degrees F for 20 to 25 minutes or until biscuits are a deep golden brown.
- Serve immediately.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat olive oil in a large skillet over medium heat. Add onion; cook and stir until softened, about 5 minutes. Add beef; cook and stir until no longer pink, 5 to 7 minutes.
- Pour onion and beef mixture into an ungreased 8-inch baking dish. Layer corn and black beans on top.
- Stir biscuit baking mix, milk, Cheddar cheese, egg, and jalapeno peppers together in a bowl until well-blended. Pour evenly over black beans in the baking dish.
- Bake in the preheated oven until golden brown, 30 to 35 minutes.
- Serve topped with salsa and sour cream.

- Heat oven to 200C/fan 180C/gas 6. For the wedges, mix the flour, cayenne and herbs (if using), add some salt and pepper, then toss with the potatoes and oil until well coated. Tip into a roasting tin, then bake for about 35 mins until crisp and cooked through.
- Meanwhile, heat the oil in a non-stick pan, then gently fry the onion and bacon together for 5-10 mins until the onions are softened and just starting to turn golden. Stir in the sugar, tomatoes, stock and seasoning to taste, then simmer the sauce for 5 mins. Add the beans, then simmer for another 5 mins until the sauce has thickened. Serve with the wedges.

- In a large skillet or dutch oven, brown the ground beef, bacon and onion.
- Drain the excess grease.
- Preheat the oven to 350.
- Spray a 9x13" pyrex dish with cooking spray.

ADZUKI BEAN BAKE
This is a Gillian McKeith recipe that I've grown to enjoy. I have added diced sweet potatoes to the veggie mix at times for a sweeter taste with wonderful results. Keep in mind that cook time will vary on how soft or crisp you like your sweet potato topping.

Steps:
- Heat oil in large saucepan with a tiny bit of water, so you are water sauteing really-not frying in the normal sense of the word.
- Gently water saute onions and garlic for 3 minutes, stirring occasionally.
- Add squash,carrot and celery, cook with onion and garlic for 2 minutes-stirring regularly.
- Pour just boiled water over the vegetable mix and stir in the bouillon powder.
- Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Preheat oven 390°F.
- Stir the sliced leek and adzuki beans into the veggie mix.
- Return to a simmer and cook for 5 minutes, stirring occasionally.
- Add the cornstarch or arrowroot mixture and cook for about 1 minute or until the sauce thickens to your liking, stirring.
- Remove from the heat and transfer to a 3 3/4 cup ovenproof dish.
- Arrange slices of the sweet potato on top of the bean and veggie mix.
- Brush with a little oil and bake for about 30 minutes until the potato is soft.

- Stir in beans and 1/2 can fried onions.
- Bake 350 for 25 minutes.
