Here is a good recipe for stewed tomatoes that I have on my site. This is a good way to use up the remaining tomatoes you may have on your vines!

Number Of Ingredients 7

4 large tomatoes
2 stalks celery, chopped very fine
1/4 bell pepper, chopped very fine
1 teaspoon Accent seasoning
4 tablespoons sugar
salt and pepper
2 cups water

Steps:

  • Peel the tomatoes by soaking them in boiling water for one minute. Gently pull away the skin.
  • Place tomatoes in a large pot and add the remaining ingredients.
  • Cover and boil gently for 15 minutes, until tomatoes are tender.
  • Serve with croutons.
  • I like my stewed tomatoes with toast and butter.

  • Gather the ingredients.
  • Peel the tomatoes .
  • Cut them into chunks.
  • Heat the tomatoes in a medium saucepan over medium-low heat, stirring constantly for about 5 minutes.
  • Continue cooking over low heat for 10 to 15 minutes, stirring frequently, or until desired consistency is reached.
  • Add salt, pepper, sugar, and butter; taste and adjust seasonings. If desired, serve with croutons on top. Enjoy.

2 slices bacon, chopped (thick slices)
1 slice good white bread, crusts trimmed
1 celery, chopped fine
2 tablespoons minced onions
1 1/2 lbs very ripe tomatoes, cut in wedges
1 -2 teaspoon packed brown sugar
1 teaspoon paprika
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Fry the bacon in a skillet over medium heat until brown and crisp. Remove the bacon from the rendered drippings with a slotted spoon, drain it, and reserve.
  • Cut the bread into bite-size cubes, stir them into the hot drippings, and cook until lightly toasted. (Warning: they cook pretty fast, so don't leave them unattended!) Remove the bread cubes with a slotted spoon and reserve them.
  • Stir the celery and onion into the remaining drippings (there won't be much left), then cover and sweat the veggies for about 3 minutes, until soft.
  • Add the tomatoes and the remaining seasonings, cover again, and continue cooking for about 15 more minutes, until the tomatoes are juicy and tender. If they are down-right soupy, uncover and cook over high heat briefly to eliminate some of the liquid. Just before serving, mix in the reserved bread cubes and bacon.
  • Note: This can also be made using canned whole tomatoes. Just take a utility knife and chop the tomatoes while still in the can, then use as directed.

Another one of those days when I needed some stewed tomatoes, and had none. Came up with this and they turned out great. You can use as much or as little of the listed ingredients as desired along with the canned tomatoes. I simmer until the veggies are tender and the liquid is reduced and thick. Goes great over a pile of my Recipe #282180 and steamed broccoli.

1/4-1/3 cup sweet bell pepper, diced, I prefer orange, yellow, red not green, amount to taste

pepper, to taste

  • Combine all ingredients in a small sauce pan.

3 pounds ripe tomatoes, cored and cut into 1-inch wedges
2 tablespoons cornstarch dissolved in 1/4-cup water

Steps:

  • In a glass or ceramic dish (11 by 14 by 2 inches), combine butter, sugar, salt, ginger, paprika, cloves and onion. Cook, uncovered, at 100 percent for 4 minutes.
  • Stir in tomatoes. Push tomatoes to the edge of the dish so that they make a ring, leaving an open area in the center. Cover dish tightly with polyvinyl microwave plastic wrap.
