Steps:
- Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
- Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.

GARLICKY GREEN BEANS
I make this often with my summer's crop of green and yellow beans ---for this recipe I really don't bother to measure so really the exact amounts do not matter, however I have posted the amounts that I I think is pretty much close to what I use --- I usually have my beans already steamed and stored in the refrigerator until ready to use for this recipe, do not make this using uncooked raw beans they must be cooked firstly, prep time does not include pre-steaming the beans or peeling the garlic cloves.

Steps:
- Heat the olive oil in a skillet on medium heat. Add green beans making sure that olive oil is distributed evenly, season with salt depending on your taste. Saute for about 10-15 minutes until softened but still crispy. Add minced garlic coating all green beans evenly for about 2-3 minutes, not too long as you don't want the garlic to brown at all--this can leave a bitter flavor. Immediately take off heat, let sit for another 2-3 minute Enjoy!
- I love garlic and usually use the 6 cloves, but you can use less to your taste.

- In the same skillet, heat olive oil over medium heat and add back in the drained green beans, salt, black pepper, and three cloves of minced or pressed garlic.
- Sauté the green beans for another 3-5 minutes until the green beans have gotten a little color and have softened. For more crisp green beans cook for less time. For softer green beans cook a little longer.
