pastry for single-crust pie
1/2 cup sugar
3 tablespoons flour
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon allspice
1/8 teaspoon salt
6 cups thinly sliced peeled apples (1/2 Macintosh, 1/2 Granny Smith)
2/3 cup packed brown sugar
1/2 cup flour
3/4 cup quick-cooking rolled oats
1/2 cup butter
1/4 cup toasted pecans, chopped

Steps:

  • Use foil on bottom of oven rather than a cookie sheet under pie pan.
  • Prepare pastry for single-crust pie.
  • Place in pie plate and trim and crimp the edge; refrigerate 30 minute loosely covered with plastic wrap.
  • In a large mixing bowl, stir together the sugar, flour, cinnamon, nutmeg, allspice, and salt.
  • Add apple slices and gently toss until they are coated well.
  • Transfer mixture to pie.
  • FOR CRUMB TOPPING: Stir together brown sugar, flour, and oats.
  • Using a pastry blender, cut in the butter until topping resembles coarse crumbs.
  • Sprinkle over apple mixture in pie.
  • To prevent over-browning while baking, cover edge of pie with foil.
  • Bake at 375 degrees Fahrenheit for 25 minutes.
  • Remove foil and bake 25 to 30 minutes more, or until top is golden.
  • Remove from oven.
  • Cool on wire rack about an hour and serve!

This is a wonderful apple pie filling that you make in the fall when apples are in abundance. During the winter months, just pull a package of pie filling from the freezer, defrost, and pour into your favorite pie crust. This makes enough filling for 4 pies.

16 cups apples, peeled and thinly sliced
4 tablespoons lemon juice
4 cups white sugar
1 cup cornstarch
4 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon salt
8 cups water

Steps:

  • In a large bowl, toss apples with lemon juice and set aside.
  • Pour water into a Dutch oven over medium heat. Combine sugar, cornstarch, cinnamon, salt and nutmeg. Add to water, stir well, and bring to a boil. Boil for 2 minutes, stirring constantly.
  • Add apples and return to a boil. Reduce heat, cover and simmer until apples are tender, about 6 to 8 minutes. Cool for 30 minutes.
  • Ladle into 4 freezer containers or gallon freezer bags, leaving 1/2 inch headspace. Cool at room temperature no longer than 1 1/2 hours.
  • Seal and freeze. Can be stored for up to 12 months.
  • You can also make pies right away.

1 (21 ounce) can apple pie filling
1 graham cracker crust (9 inches)
2 cups butter pecan ice cream, softened
1 (12 ounce) jar caramel ice cream topping
1/4 cup chopped pecans, toasted

Steps:

  • Spread half the pie filling over crust.
  • Top with half the ice cream; cover and freeze for 30 minutes.
  • Drizzle with half the caramel topping; cover and freeze for 30 minutes.
  • Top with remaining pie filling; cover and freeze for 30 minutes.
  • Top with remaining ice cream; cover and freeze until firm. May be frozen for up to 2 months.
  • Remove from the freezer about 30 minutes before serving.
  • Warm remaining caramel topping; drizzle some on serving plates.
  • Top with a slice of pie; drizzle remaining caramel topping over pie and sprinkle with pecans.
