This scratch-made venison stew recipe is easy to make and the deer meat is fall-apart tender. It's packed with veggies and simple ingredients. Gluten free, dairy free, paleo, Whole30 friendly.

1 lb. venison, diced with all sinew removed - I used leg meat*
1 Tbsp. olive oil
2 and 1/2 cups diced potatoes, I left the skin on (about 3 medium potatoes)
2 cups diced carrots
1 cup diced celery
1 large onion, diced
2 garlic cloves, minced
2 tsp. herbs de Provence*
1 tsp. salt
3/4 tsp. black pepper
1 15 0z. can diced tomatoes
4 cups unsalted beef stock or venison stock
3-4 dashes Worcestershire sauce

Steps:

  • Dice the venison into bite-sized chunks, being sure to remove any of the silvery sinew tissue. Leaving this on makes the meat tough.
  • Add the olive oil to a large pot or Dutch oven and heat over medium-high heat.
  • When the oil is hot, allow the venison to saute for 5-7 minutes or until the edges start to brown. Remove the venison from the pot and set aside.
  • Turn the heat down to medium and add the potatoes, carrots, celery and onion. Allow the vegetables to saute for about 8-10 minutes, or until they begin to soften.
  • Then, add the garlic, herbs de Provence, salt and pepper and cook for an additional minute before adding the tomatoes, broth and Worcestershire sauce. Then, add the venison back to the pot. Stir well and bring the stew to a boil.
  • Once a boil is reached, turn the heat to low, cover the pot with a lid, and allow the stew to simmer for 1-2 hours until the venison is tender.
  • Serve hot (is amazing with crusty bread).

30 g cornflour
1 tablespoon dry mixed spice, of your choice
1/2 teaspoon black pepper
1/2 teaspoon sea salt
1 kg venison, meat for stew (deer, neck, shoulder and leg, without bones)
4 tablespoons olive oil (divided)
1/2 cup red wine
2 onions
80 g celery root, cut into small pieces
80 g parsley roots, cut into small pieces
100 g carrots, cut into small pieces
80 g fresh red peppers, cut into small pieces
8 -10 juniper berries, crushed in a mortar
800 ml beef broth, from 1 cube
2 tablespoons tomato paste
1 bay leaf

Steps:

  • Mix and combine corn flour, spices of your choice, black pepper and salt. Toss pieces of meat in seasoned flour, shake off excess flour.
  • Fry meat in batches in hot olive oil until browned on all sides. Take them out with a slotted spoon and place on a paper kitchen towel.
  • Return the meat to the pan, deglaze with red wine. Set aside.
  • Chop onions, celery, parsley and carrots in a blender to make a sofrito (a mixture of chopped vegetables). Fry in a pressure cooker pot in olive oil for 3-4 minutes, stirring occasionally.
  • Add chopped fresh red pepper and juniper berries, sauté briefly.
  • Add meat with wine, beef broth, tomato paste and bay leaf, stir, cover, and lock lid on pressure cooker. When pressure is reached, turn heat down to low. Continue cooking for 20 minutes. Release pressure naturally.
  • Serve with potato gnocchi, polenta or short pasta.

1 lb. venison or beef stew meat, cut to 1"cubes
2 Tbsp. canola or neutral oil
4 cups beef stew or broth
14 peppercorns, crushed
1/2 tsp. garlic powder
1/2 small onion, cut into 1/8" half-rings
4 red potatoes, cut into 3/4"-1" cubes
1 cup carrots, cut to 1/4" rounds
2 stalks celery, cut to 1/4" pieces
3 Tbsp. cornstarch
1/2 cup half and half

Steps:

  • 1. Place a medium pot on medium heat. Add oil and allow to warm up. 2. When oil is ready, add meat and sear the outsides of the meat, about 3-4 minutes. 3. Add in the rest of the ingredients except for the cornstarch and the half and half to the pot and allow the liquid to come to a boil. Once soup has come to a boil, turn down to low and allow to simmer for 10-20 minutes, or until the vegetables are fork tender and the meat reads 170°F. Stir occasionally. 4. In a separate small mixing bowl, whisk together the half and half and cornstarch until no lumps are present. Add to the pot slowly, stirring the stew as you add. Allow to simmer until liquid thickens, about 5 minutes. Serve immediately.

1 1/2 lbs beef stew meat, cut into 3/4-inch pieces or 1 1/2 lbs venison
1/2 cup flour
2 -3 tablespoons shortening (add more if need be)
salt & pepper, season according to taste
1 medium onion, chopped fine
3 -4 dashes Worcestershire sauce
6 cups hot water
2 teaspoons beef bouillon granules
1 pinch dried thyme
1 bay leaf
1 tablespoon lemon juice (This tenderizes the meat)
4 whole cloves
5 carrots, sliced thin
4 medium potatoes, cubed small
1/2-1 green bell peppers, chopped fine or 1/2-1 yellow bell pepper
1 stalk celery, sliced thin
1 (4 ounce) can mushroom stems and pieces, drained
1 (14 1/2 ounce) can whole tomatoes, cut up
1/2 cup frozen peas (*See note) (optional)
4 tablespoons flour (I use cornstarch)
1/2 cup cold water
1 teaspoon Kitchen Bouquet, browning & seasoning sauce (optional)

Steps:

  • Coat beef stew meat (or venison stew meat) with flour.
  • In a large skillet, melt shortening.
  • Add the flour coated meat; season with salt and pepper.
  • When the meat is almost browned, add onions; finish browning.
  • Add the Worcestershire sauce; stir for another minute.
  • Transfer to a 5 quart Dutch Oven, or a large soup kettle.
  • Add the hot water, bouillon granules, thyme, bay leaf, lemon juice, and whole cloves.
  • Bring to a boil. Cover, reduce heat to a simmer, and cook for 2 hours.
  • Add the carrots, potatoes, green peppers, celery, mushrooms and tomatoes.
  • Cover, and simmer 1-1/2 hours.
  • Remove bay leaf and whole cloves at this point.
  • Bring back to a boil.
  • Combine the flour and cold water, and add this to the boiling stew; stirring constantly.
  • Finally add the Kitchen Bouquet; mix through thoroughly.
  • Serves 8 - 10.
  • *Note: Sometimes you'll only need 3 tablespoons of flour, mixed with 1/3 cup cold water to thicken the stew. Also, if wanting to add peas to the stew, add the frozen peas within the last 20 minutes of cooking time (while the vegetables are simmering).

1 lb sliced baby portabella mushrooms (optional)
1 1/2 teaspoons garlic powder
salt and pepper
3 tablespoons Worcestershire sauce
2 teaspoons thyme
2 bay leaves
1 tablespoon olive oil

Steps:

  • Heat oil in skillet on medium heat and brown venison stew meat.
  • Slice carrots to desired size.
  • Cut onions into wedges.
  • Combine all ingredients in LARGE crock pot and cook on high for 4-6 hours.

7 cups water as needed
5 cubes beef bouillon cube
1 onion, thinly sliced
⅓ cup all-purpose flour
2 tablespoons vegetable oil
1 ½ cups sliced carrots
1 ½ cups chopped celery
1 ½ cups potatoes, cubed
½ cup all-purpose flour
1 cup hot water

Steps:

  • Cut meat into bite-sized pieces. Mix with onions, and toss mixture with 1/3 cup flour. Heat oil in a large saucepan, and cook over medium low heat until browned.
  • Place browned meat and bouillon cubes into crock pot. Add water until meat is covered with 1 inch liquid. Cover. Slow cook on high for about 5 hours. This should be long enough to make meat very tender.
  • To thicken up the gravy, mix 1/2 cup flour with 1 cup hot water until flour is dissolved. Pour into crock pot, and stir. Repeat if not thick enough. If you are not using veggies, the stew is ready to pour over the rice now. If you are going to use veggies, add them now. Cook until vegetables are tender.

This is the man's favorite stew recipe. I use a 5-quart crockpot and this recipe just fits in it. He prefers a thinner broth, so this isn't a thick, gravy like stew, but its a very tasty one!! His grandfather gave me the hint of adding cabbage to the stew, it definately enhances the flavor! Beef stew meat can also be substituted.

1/4 cup flour
1/2 teaspoon garlic salt
1 tablespoon Mrs. Dash seasoning mix
1/2 teaspoon black pepper
1 -2 tablespoon butter
2 cans beef broth
1 teaspoon Worcestershire sauce
3 tablespoons minced garlic
1 bay leaf
1 teaspoon paprika
4 carrots, sliced
4 potatoes, cubed
1 onion, chopped
1 stalk celery, chopped
1 rutabaga, peeled and chopped
1/4 head cabbage, chopped

Steps:

  • Mix together flour, garlic salt, Mrs. Dash, and pepper.
  • Dredge stew meat in flour mixture.
  • In a large skillet, melt butter over medium high heat and saute vension cubes until just browned on the outside.
  • Do not cook completely through.
  • Place stew meat into crockpot and then add the rest of the ingredients.
  • Stir to mix.
  • Cook on low for 8 hours.
  • Stir before serving.

1/4 cup vegetable oil
1 1/4 lbs stewing beef, cut into 1-inch pieces
1/2 cup flour
6 large garlic cloves, minced
3 cups beef broth
3 cups water
2 cups white wine (substitute with red wine if you like)
2 tablespoons tomato paste
2 tablespoons sugar
1 tablespoon dried thyme
1 tablespoon Worcestershire sauce
6 large garlic cloves, minced
1 bay leaf
4 celery ribs, cut in 1 inch pieces
1 large onion, chopped
3 -4 carrots, cut in 1 inch pieces
1/4 cup fresh parsley, chopped

Steps:

  • Heat oil in heavy large pot over medium-high heat. Coat Beef in flour and add to the hot oil. Saute beef until browned on all sides. Add beef stock, water, wine, tomato paste, sugar, thyme, Worcestershire sauce, garlic, bay leaf, celery, onions and carrots. Do not add the parsley at this point!
  • Bring mixture to boil. Reduce heat to medium-low, cover and simmer for 1 hour and 45 minutes.
  • Discard bay leaves.
  • Make dumplings according to recipe (see recipe description above for my suggested recipe--Recipe#30965). Roll into small bite size rounds and drop into stew. Continue to simmer for an additional 15 minutes.
  • Sprinkle with parsley and serve.
