MOIST AND DELICIOUS BANANA BREAD
This is the best banana bread I have ever had. I buy really ripe bananas just so I can make this :-) Got the recipe years ago from my friend Rachel. We used to beg her to make this for us in college! I think the moistness is due to the 1/2 cup of oil - I didn't say it was the healthiest banana bread around, but it is worth the extra time on the treadmill!

Steps:
- Combine the oil, eggs, sugar, milk, vanilla, and mashed bananas.
- Add the baking soda and flour.
- Combine well for 2-3 minutes.
- Pour into a greased loaf pan and bake in a preheated 325 degree F oven for 1 hour and 20 minutes.

- In a large bowl mash your bananas until they are very pasty.
- Add all other ingredients. Mix well.
- Pour all ingredients into a greased loaf pan.
- Bake at 350°F for 50-60 minutes or until a toothpick inserted into the middle of the pan comes out clean.
YUMMY BANANA BREAD
This is the best banana bread I have ever had!! It is so moist, I believe it is due to the over ripe bananas and the sour cream. You must try it!!!

- Preheat oven to 350°F.
- With an electric mixer, cream the butter and sugar until light and fluffy, next add the eggs; beat thoroughly.
- Add the honey and mix well.
- Sift in the dry ingredients.
- Blend well.
- Add sour cream, bananas and vanilla; again blend well.
- At this time if you are adding nuts add them and mix them thoroughly.
- You can bake this as muffins, mini breads or a bread, it's up to you.
- Adjust the baking time to the choice you make.
- For a bread bake one hour or until a toothpick comes out of the center and its clean.

- Preheat oven to 350.
- Combinen first 5 ingredients in a large bowl; beat with a mixer at medium speed until smooth.
- Combine flour, cream of tartar, baking soda, and salt in a bowl, stirring with whisk. Add flour misture to banana mixture, stirring just until moist.
- Spoon batter into an 8x4 inch loaf pan coated with cooking spray.
- Bake at 350 for 40 minutes. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on rack.
- To freeze, wrap tightly in plastic wrap, and place in a heavy-duty plastic bag. Good for up to a month.

- Preheat oven to 325 degrees F (165 degrees C). Lightly grease an 8x4 inch loaf pan.
- In a large bowl, cream the shortening and sugar. Sift in the flour, baking soda and salt. Blend in the mashed bananas. Pour batter into prepared pan.

MOIST & DELICIOUS BANANA NUT BREAD
I got this recipe when I was 12 and have used it for the past 33 years and haven't found one better! My son used it when he was 12 at the California State Fair and won a first place ribbon with it. It is just simply delicious & moist. I either make a loaf or put it into muffin cups & make muffins for my kids to grab in the morning on their way to school. Using margarine makes the muffins come out in a better form, but the butter has a better flavor, so I usually use 1/2 of each to get the best of both worlds.

- Cream butter & sugar. Add vanilla & eggs. Combine dry ingredients, add alternately with bananas & milk. Add nuts if desired. Grease & flour 1 bread pan (2-3 smaller pans) or pour into muffin cups. For loaf bake at 350 for 45-60 minute Muffins 350 for 20-25min. Enjoy!
- *Note- I usually use a smaller bread pan to make the 2 loaves, or use a larger one and just make 1 big loaf, but it will need to bake longer. I adjusted the time because people had been saying it was over baking, now people are saying it's under baked. I would use the old fashion test of a tooth pick at 45 min, then at 1 hour -- up to 1 hour & 30 min if needed. Hope that helps!
AMY'S YUMMY BANANA BREAD (BREAD MACHINE)
I developed this recipe initially through trial and error, and have now got it pretty well 'right'. My husband and in-laws love this! A few notes: you will need to keep an eye on the dough during mixing to make sure it isn't too wet. If it looks too wet, try adding 1 tbs of flour at a time until it looks like a rather wet ball of dough (it should be slightly wetter than ordinary bread dough). I also made this to be slightly more 'healthy' than other banana breads - so feel free to add a bit more butter if you feel the need to be decadent! EDIT: After one review, I realised that I should have said this is not intended to be a very sweet recipe; the main flavour should be the flavour of the banana. If you want to make it sweeter, use 1/2 cup of sugar, rather than the 1/4 cup specified.

- Mash the bananas, and mix mashed bananas with butter, sugar and cinnamon.
- Add all ingredients to bread machine pan in the order the manufacturer tells you to do so.
- Turn bread machine on - use the 'sweet' cycle if yours has one. If not, you will need to watch out that the bread doesn't burn at the end.
- Keep an eye on the dough as it's mixing - if it looks too sticky (it sometimes does), try adding a tablespoon of flour at a time til it looks right. Don't add more than this at a time, otherwise it may be too much!
- If using, add the pecans and/or sultanas when the beeper sounds.
- This recipe will never make a full size loaf for many bread machines, so don't worry if it doesn't look 'full'. If I want mine to rise a bit more I just turn the machine off just before it should bake for an extra 20 mins or so, then turn it back on and set it to 'bake only' for 40 minutes.
- Check the bread after about 40 mins of baking - my bread maker has a tendency to burn this loaf if left in for longer than this.
- Enjoy fresh and warm, cold, or toasted, with plenty of butter!
YUMMY HEALTHY BANANA BREAD
I made this recipe twice in 2 days as my friends and family all enjoyed it so much. It makes a moist, chewy yet soft bread/ cake with lots of banana flavour but not too sweet which suits my taste better. No eggs, no butter, no oil, quick and easy.

- Preheat oven at 160 deg C (325 F). Grease 7X7" tin or a 9X5" bread tin. 7x7" cooks faster.
- Mix applesauce and sugar in a bowl. If using unsweetened applesauce, add about 2 tablespoons of sugar extra.
- Add bananas and mix. Add flour, salt, vanilla essence and baking soda. Mix quickly but thoroughly.
- Pour into tin. Sprinkle with some brown sugar and cinnamon powder. Put into oven immediately.
- Bake till a knife inserted in the centre comes out clean (A little mashed banana on the knife is ok as there's so much fruit. If in doubt, taste to see it doesn't taste of raw flour).
- Ovens vary so always check about 5mins before when you think it will be ready. About 50mins in a fan-assisted oven for 7X7" tin.
