⅓ cup milk
2 teaspoons pineapple juice
1 cup white sugar, divided
½ cup unsalted butter, softened
1 large egg
1 ¾ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
2 teaspoons crushed pineapple
2 tablespoons pineapple juice
1 tablespoon crushed pineapple

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine milk and 2 teaspoons pineapple juice in a bowl and let stand.
  • Mix 3/4 cup sugar and butter together in a large bowl. Mix in egg and stir in pineapple juice-milk mixture. Add flour, baking powder, and baking soda. Stir in 2 teaspoons crushed pineapple. Drop batter by rounded spoonfuls onto ungreased cookie sheets.
  • Bake in the preheated oven until edges are light brown, 10 to 12 minutes.
  • While cookies are baking, make glaze by mixing remaining 1/4 cup sugar, 2 tablespoons pineapple juice, and remaining 1 tablespoon crushed pineapple together in a bowl. Brush or spoon onto cooled cookies.

Steps:

  • Place 4 fresh mint leaves in a shaker glass. Add ice and equal parts iced green tea, and pineapple juice, approximately 3 ounces each. Shake well to bruise the mint leaves and strain into an ice filled wineglass. Garnish with fresh mint sprig, and orange wheel.

  • Add the remaining ingredients.
  • Let chill in the fridge until cold.

300ml coconut rum
600ml pineapple juice (not from concentrate)
150ml gin
6 small chunks watermelon
12 coriander sprigs
6 x 324ml screw-top jam jars with lids
ice bucket filled with ice

Steps:

  • Put 50ml coconut rum, 100ml pineapple juice, 25ml gin and 50ml cold water into each jam jar.
  • Stir, then garnish each one with a piece of watermelon and a couple of coriander sprigs, squeezing the leaves a little bit first before dropping them into the jars to help release the flavour. Screw on the lids and chill or set in ice buckets until needed - they will keep well for 4-6 hrs.
