YUM YUMS (CHOCOLATE NUT COOKIES)
One taste of these and you will know where they got their name! A very delicious chocolate cookie great for holiday baking, bake sales, potlucks, etc.

Steps:
- Preheat oven to 375 degrees.
- Melt butter and chocolate together and set aside to cool for about 5 minutes.
- Stir chocolate mixture, granulated sugar, egg, vanilla and salt together until blended.
- Stir in flour and nuts.
- Shape into 1 inch balls and place 2 inches apart on ungreased cookie sheets.
- Bake for 8 to 10 minutes or until set.
- While still warm, roll in confectioner's sugar.
- Cool on wire racks and then roll in sugar again.

YUM YUM BARS
Another childhood recipe that I loved to make and eat growing up. Very easy as it requires no baking just stovetop cooking.

Steps:
- In a large saucepan, combine butter, sugar, and eggs on low heat.
- Boil for 2 minutes; stirring constantly.
- Remove from heat; cool.
- Fold in graham cracker crumbs, miniature marshmallows, nuts, and flaked coconut; mix well to combine the ingredients.
- Press into a lightly buttered 9 x 13-inch pan.
- Top with frosting.
- Refrigerate for 30 minutes until the frosting sets.
- Remove from refrigerator and cut into squares.
- FROSTING: In a double boiler, melt butterscotch chips, semi-sweet chocolate chips, and peanut butter.
- Spread immediately before it begins to cool.

YUMMY BANANA NUT BREAD
Sweet, moist, and dense, this really is a yummy banana nut bread recipe. It has the perfect amount of banana to make the bread moist and not gummy. Steps:
- 1. Combine softened cream cheese, sugar, and butter, mixing until well blended.
- 2. Blend in banana and eggs.
- 3. Add combined remaining ingredients mixing until moistened.
- 4. Pour into a greased and floured 9x5-inch loaf pan.
- 5. Bake at 350 degrees, for 1 hour and 10 minutes, or until a wooden toothpick inserted near the center of the bread comes out clean.
- 6. Cool 5 minutes; remove from pan. Glaze if desired when the bread is cooled. NOTE: I just make a glaze with powdered sugar, a little milk, and either vanilla or lemon extract. It's GREAT without glaze too. I personally like it best spreading... you guessed it, cream cheese on each slice. Yum!!
YUM YUM NUT SWEETS
I'm surprised and delighted by the number of sweets and desserts that I have been able to come up with sans flour and dairy. With this one I had help. Our good friend Dr. Nersessian-a very good cook-came up with the first version of this to give me a dessert without the bad things. I have fiddled with it a bit. It has been a great success with all who have tasted it. A chocolate version follows.

- Preheat the oven to 300°F. Grease a 7- or 8-inch square baking pan with the oil. Set aside. Place the nuts in a food processor and chop until the mixture resembles coarse sand. Put the contents into a small mixing bowl. Stir in the sugar and egg whites. With a spatula, scrape the contents of the bowl into the oiled pan and press into an even layer. Bake for 1 hour for soft cookies or 1 1/2 hours for crisp cookies. Remove from the oven. Allow to cool. Cut into 1 3/4- or 2-inch squares.
- Variation:
- Chocolate Yum Yums: Even though these are simply a chocolate version of the Yum Yums, everyone seems to think that they are brownies. Yum. Melt 2 1/2 ounces of 70% dark-not milk-chocolate in a double boiler. Add to the mixing bowl after the sugar and egg whites. Proceed as directed.
