1 cup yogurt
1 teaspoon baking soda
1/2 cup cooking oil
3/4 cup brown sugar
1 egg
1 cup All-bran cereal
1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup berries (raisins, or chopped fruit)

Steps:

  • Combine yogurt and soda in large bowl.
  • Mix oil, sugar, egg, and bran in second bowl.
  • Add yogurt to bran mixture.
  • Add flour, baking powder, and salt. Fold in fruit.
  • Bake in lightly greased muffin tins at 350F for 20-25 minutes or until done.

These moist, tender muffins will erase any memories of the rubbery, leaden low-fat muffins you have had before. One of the secrets is the applesauce which adds extra tenderness and sweet fruity flavor. The figs lend a deep flavored, sophisticated touch. It's maximum muffin satisfaction with minimal effort.

Nonstick cooking spray
1 cup chopped dried figs, plus 3 whole dried figs
1 1/2 cups bran cereal (recommended: All-Bran)
1 cup lowfat milk
1 1/2 cups whole-wheat flour
1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup natural applesauce
1/2 cup honey
1/3 cup canola oil
2 tablespoons unsulfured molasses
1 large egg, beaten

Steps:

  • Preheat oven to 400 degrees F. Coat a 12-capacity muffin pan with cooking spray. Thinly slice the whole figs.
  • In a large bowl, combine the cereal and milk. Let sit until softened, about 5 minutes. Meanwhile, whisk together the whole-wheat flour, baking powder and salt in a separate bowl.
  • Add the applesauce, honey, oil, molasses, and egg to the cereal mixture and stir until combined. Add the flour mixture and stir until just combined. Gently stir in the chopped figs. Spoon the batter into the prepared pan and top each muffin with a fig slice. Tap the pan on the counter a few times to remove any air bubbles.
  • Bake for about 20 minutes or until a wooden toothpick inserted in center of 1 of the muffins comes out clean. Let cool on a wire rack for 15 minutes. If necessary, run a knife around the muffins to loosen. Unmold and cool completely on a rack.

From the Weight Watchers Cookbook 'Take-Out Tonight!'. They're really big, dense muffins which are full of fibre and really fill you up and give you energy. They're the only muffin I've made that both me and my flatmate both like! You can eat them plain or split with jam/spread for breakfast, even heat them up and cover with syrup (I use sugar-free) for dessert. If you don't have a jumbo muffin pan, the recipe says you can use a 12-cup pan, reducing the cooking time to 25 minutes. They also work if you substitute the sugar for Splenda, which I did the first time I made them as that was all I had (but I added 1/4 cup of sugar-free marmalade to sweeten it a bit, which tasted yummy), and I also skipped the crumb topping and raisins, and they still tasted great. One time I made them, I added 2 teaspoons of cinnamon and one of mixed spice, which also tasted really nice, but my flatmate preferred them plain. It's a great basic recipe to play about with!

2 tablespoons all-purpose flour
1/4 cup all-purpose flour
2 tablespoons brown sugar, lightly packed
1 tablespoon butter, cut into small pieces
2 tablespoons walnuts, chopped
1 1/2 cups natural bran
1 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 large egg
2 egg whites
1/2 cup sugar
2 tablespoons molasses
1 cup fat-free buttermilk
2/3 cup golden raisin

Steps:

  • Preheat the oven to 375 degrees. Spray a 6-jumbo-cup (1 cup each) nonstick muffin pan with nonstick spray (or line with paper/foil liners).
  • To make the crumb topping, combine 2 tablespoons of the all-purpose flour and the brown sugar in a medium bowl. With a pastry blender, cut in the butter until the mixture is crumbly. Stir in the walnuts.
  • Combine the bran, wholewheat flour, the remaining 1/2 cup all-purpose flour, the baking soda, baking powder, and salt in a large bowl. With an electric mixer on medium speed, beat the egg, egg whites, sugar, and molasses in a large bowl intil blended. Gradually beat in the buttermilk. Gradually add the bran mixture, mixing on low speed until just blended. Stir in the raisins.
  • Spoon the batter into the cups, filling each about half full. Sprinkle with the crumb topping. Bake until a toothpick inserted into a muffin comes out clean, about 25 minutes. Cool in the pan on a rack 5 minutes; remove from the pan and cool completely on the rack.

2 cups plain yogurt
1 1/2 cups brown sugar
1 cup oil
2 teaspoons vanilla
4 teaspoons baking powder
2 teaspoons baking soda
2 eggs
2 cups natural bran
2 cups flour

1 cup raisins or 1 cup peanuts (optional)

Steps:

  • Preheat the oven to 350 degrees.
  • Measure the yogurt into a large bowl and mix in baking soda.
  • Set aside.
  • This mixture will expand so it is important to use a large bowl.
  • In a large mixing bowl, beat together the brown sugar, eggs and oil.
  • Add the bran and vanilla.
  • Sift together the flour, baking powder and salt.
  • Add to the sugar mixture alternately with the yogurt.

2 egg whites or 1 egg, slightly beaten
1/4 cup vegetable oil
2 containers (6 oz each) Yoplait® Original yogurt French vanilla
1 1/2 cups Gold Medal™ all-purpose flour
1/3 cup packed brown sugar
1 1/4 teaspoons baking soda
1/2 teaspoon salt
1/2 cup fresh raspberries or blueberries

Steps:

  • Heat oven to 400°F. Place paper baking cup in each of 12 regular-size muffin cups, or grease bottom of each muffin cup with shortening. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
  • In medium bowl, stir together egg whites, oil and yogurt. Add cereal, flour, brown sugar, baking soda and salt; stir just until dry ingredients are moistened. Gently stir in berries. Divide batter evenly among muffin cups, filling each 3/4 full.
  • Bake 18 to 20 minutes or until golden brown. Immediately remove from pan.

I try to match the yogurt to whatever type of additional stuff that I add - 1/2 cup chopped fruit, berries, raisins, nuts, etc. (optional).

I like it because it is a healthy muffin. I substitute Egg Beaters for the eggs. Instead of 1 cup of oil I use 1/2 cup oil and 1/2 cup applesauce, but that is up to you. I like to use frozen blueberries as then the colour doesn't turn the flour that yucky blue colour. You will have to test for doneness as it takes longer.

400 g any flavour yogurt (about 1-2/3 cups)
2 teaspoons baking soda
3/4 cup brown sugar (increase to 1 cup if you prefer sweeter muffins)
2 large eggs
1 cup oil (or 1/2 cup oil and 1/2 cup apple sauce)
2 cups natural bran (not cereal, the real wheat bran)
2 teaspoons vanilla
2 cups flour (can be white or whole wheat)
4 teaspoons baking powder
1 cup blueberries (I always use about 2 cups, I like lots of blueberries in my muffins)

Steps:

  • Preheat oven 350°.
  • Line 12 muffin cups with paper liners or spray with Pam.
  • Measure yogurt into medium bowl and mix in baking soda, it will foam and it is supposed too; set aside.
  • In a large bowl beat together sugar, eggs and oil.

  • In a separate bowl mix together flour and baking powder.
  • Gradually add the flour and yogurt mixtures alternately to the sugar mixture.
  • Fold in blueberries.
  • Bake 20-35 minutes.
