Steps:

  • Start by lining a baking sheet with parchment paper and set aside.
  • In a large mixing bowl combine yogurt, honey, vanilla, lemon juice, and salt.
  • Whisk until thoroughly combined.
  • Transfer yogurt mixture to the previously prepared baking sheet and spread it around to an even thickness.
  • Top with berries.
  • Garnish with granola.
  • Freeze for 2 to 3 hours, or until firm.
  • Break into pieces.
  • Keep in the freezer before serving,
  • Serve and enjoy!

¼ teaspoon vanilla extract
¼ cup sliced almonds
¼ cup freeze-dried blueberries
2 tablespoons cacao nibs

Steps:

  • Line two 9-inch rimmed baking sheets with parchment paper.
  • Whisk together yogurt, maple syrup, and vanilla extract. Divide mixture between the 2 baking sheets and spread out using a spatula until about 1/4-inch thick. Scatter sliced almonds, dried blueberries, and cacao nibs evenly over each baking sheet.
  • Place baking sheets in the freezer for at least 3 hours, or overnight. Remove from freezer and roughly break or slice into about 2 dozen pieces.

What I love about my Strawberry-Balsamic Jam is how versatile it is. Sure, you can spread it on toast or use it as a cake filling. I thought I'd do something a little different here and make a healthy-ish frozen treat to keep on hand for when I get a sweet tooth.

2 pounds very ripe strawberries, washed, stemmed and halved
1 cup sugar
1 tablespoon balsamic vinegar
1 teaspoon vanilla extract
Zest from 1/2 lemon plus 1 teaspoon lemon juice
3 cups vanilla-flavored Greek yogurt
1/2 cup blueberries
1/2 cup raspberries
1/2 cup sliced strawberries
Dark chocolate shavings, for garnish

Steps:

  • Make the jam: Combine the strawberries, sugar, vinegar and vanilla extract in a medium saucepan over medium heat. Bring to a simmer and cook until the strawberries soften and the mixture thickens, about 20 minutes. Remove the jam from the pan to a bowl and cool to room temperature. Stir in the lemon zest and juice.
  • Make the bark: Spread the yogurt on a parchment paper-lined baking sheet in a thin layer (about 1/3-inch thick). Dollop 1/2 cup jam over the yogurt and use a wooden skewer or tip of a knife to swirl. Sprinkle the fruit and chocolate shavings on top. Place in the freezer and freeze until firm, 2 to 3 hours. Once frozen, break into pieces.

1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon

1 (6 ounce) package mixed dried fruit, coarsely chopped
1/3 cup chopped walnuts (optional)
1 cup plain fat-free yogurt or 1 cup low-fat plain yogurt
1 large egg
1/4 cup apple juice concentrate
2 tablespoons oil
nonstick cooking spray

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, mix all dry ingredients. Add dried fruits and walnuts.
  • In a medium bowl, combine yogurt, egg, apple juice concentrate, and oil.
  • Make a well in the center of the dry ingredients and add the wet ingredients until blended.
  • Coat a 9 X 13 inch pan with vegetable spray, spread batter in pan.
  • Bake 45-50 minutes or until done. Cool 10 minutes before slicing.
