CHAI TEA FROM SCRATCH
No coffee creamer or instant tea here. Wait until you catch the aroma of this wafting through your house! Adapted from several online sources with inspiration most notably from my own spice stash, but also from the side box of Yogi tea, and chaitearecipes.com, etc. Be sure the milk or milk substitute you use is very fresh!

ROOIBOS CHAI
Rooibos leaves, which are grown in South Africa, resemble tea leaves but come from a different plant and don't have any tannins. They have recently made an appearance on store shelves here. You can substitute black tea in this recipe; add it during the last 5 minutes of simmering.

Steps:
- Bring water to boil in a 3-4 quart pot.
- Add cloves and boil for one minute.
- Add cardamom pods (to better release flavor, crush or split pods), peppercorns, cinnamon sticks and gingerroot.
- Cover and simmer for 1-2 hours (longer = stronger).
- Add black tea (can use decaf).
- At this point you can cool the tea, strain it and refrigerate. I usually let it cool over night before straining.
- Or strain immediately and add the milk, return to boil and immediately remove from heat (or it will boil over).
- Add sweetener to taste (we like honey).

Steps:
- Bring water to a fast boil in a stainless steel pot.
- Add whole cloves and let them dance for about 1 minute.
- Add peppercorns, cinnamon, cardamom and gingerroot.
- Turn heat down so it is just simmering, cover, and let lightly boil for 45-60 minutes.
- Finally, add black tea bag and boil another 5 minute.
- If adding milk & honey, do so after adding the tea bag and letting it steep- (** OR BETTER yet add milk and honey to individual cups or a small batch. That way you can store the raw tea in the fridge and prepare with milk and honey as you go).
- After adding milk and or honey, bring to a boil one last time.
- Remove from heat, and let sit for another hour (or overnight). This way it gets nice and strong so you can best enjoy this potent spice blend!
- Strain and refrigerate.
- Enjoy!
