AWESOME CHICKEN AND YELLOW RICE CASSEROLE
This Cuban influenced dish has been a family favorite for generations! Chicken baked with onions, bell peppers, and water chestnuts, then added to prepared yellow rice makes this dish one you'll be asked again and again to make!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a Dutch oven, toss the onion, green bell pepper, and water chestnuts with olive oil to coat. Rub the chicken with salt, pepper, and seasoning salt, and place on top of the vegetables in the Dutch oven.
- Cover, and cook the chicken 1 hour and 15 minutes in the preheated oven, or to an internal temperature of 180 degrees F (85 degrees C). Remove from heat. Leaving the vegetables in the Dutch oven, remove the cooked chicken, cool, skin, debone, and shred meat.
- While the chicken is cooking, prepare the yellow rice according to package directions.
- Mix the shredded chicken and cooked rice into the Dutch oven with the vegetables. Return to the 350 degrees F (175 degrees C) oven, and continue cooking 15 minutes before serving.

Steps:
- In a medium saucepan, heat the turmeric, cumin, and cinnamon over low heat until fragrant, stirring, about 30 seconds. Add the water, salt, and butter and bring to a boil. Add the rice and stir well. Cover and reduce heat to a bare simmer. Cook, covered, without stirring until the water is absorbed and the rice is tender, about 20 minutes.
- Remove from the heat and let sit, covered, without stirring, for 10 minutes. Fluff with a fork, add scallions, and serve.

This is a traditional South African recipe, which comes from the great culinary tradition of the Cape Malays -- originally brought in as slaves in the 17th century. - In a saucepan, combine the rice, salt, turmeric, sugar, cinnamon, raisins, butter and water. Bring to a boil uncovered. When it comes to a boil, reduce the heat to low, cover and let it simmer for 20 to 30 minutes, or until rice is fluffy and water has been absorbed. Remove from the heat and fluff with a fork. Keep warm until serving time.

CHICKEN & YELLOW RICE CASSEROLE
Chicken and Yellow Rice Recipe - a quick arroz con pollo casserole. This stuff is seriously delicious! We ate this for dinner and reheated it for lunch the next day. Chicken, yellow rice, cream of chicken soup, corn, black beans, rotel diced tomatoes, and green chiles and cheese. Use a rotisserie chicken and this is ready to bake in minutes. Can make in advance and refrigerate or freeze for later. Everyone LOVES this quick and easy weeknight meal!

- Preheat oven to 350ºF. Lightly spray a 9x13-inch dish with cooking spray.
- Cook rice according to package directions.
- Mix together rice, corn, chicken, black beans, diced tomatoes and green chiles, chicken soup, taco seasoning, and 1cup cheese and soup. Season with salt and pepper, if desired.
- Spread into prepared pan, top with remaining 1 cup cheese.
- Bake for 30 to 40 minutes, until cheese is melted and bubbly.
YELLOW RICE CASSEROLE
I have had this recipe for a number of years. I found it in the weekly sale paper for Harvey's Supermarket. My family loves it, but without the English peas and the water chestnuts. I just posted the recipe the way that it was when I found it.

- 1. Cook yellow rice according to package directions.
- 2. Blend soup, sour cream and melted margarine.
- 3. Combine all ingredients except grated cheese.
- 4. Pour into a 7x11 baking dish and cook for 25 minutes in a 350 degree oven.
- 5. Top with cheese and return to oven for 5 minutes or until cheese is melted.

A family friend first turned me on to this dish. I warn you, it's addicting. Feel free to adapt to your personal taste (ie change the type of soup, heat of Rotel, etc.). One of the many wonderful things about a casserole. If vegetarian, please read the food labels before you buy. Most yellow rice mixes and cream soups contain chicken product. The ingredients I use below are completely vegetarian.

- Preheat oven to 375 degrees.
- Cook yellow rice according to package directions. For a firmer rice, use less water and reduce the cooking time.
- Combine rice, cream of mushroom soup, Rotel tomatoes and Mexicorn.
- Spread evenly in an 8x8 casserole dish.
- Top with cheese.
- Bake for 20 - 30 mins or until the cheese begins to brown.
