AIR-FRYER ZUCCHINI CHIPS
These crispy air-fryer zucchini chips are delicious paired with the creamy dill dipping sauce--or any sauce you have on hand. And the best part? The air fryer delivers a crispy crunch without having to pile on the oil like traditional fryers do.

Steps:
- Cut zucchini crosswise into about 32 (1/4- to 1/2-inch-thick) rounds. Place the zucchini rounds and cornstarch in a plastic bag; seal and shake to evenly coat the zucchini.
- Lightly beat egg whites in a shallow bowl. Place panko in another shallow bowl. Working in batches, shake excess cornstarch from the zucchini. Dip the rounds in egg whites, then dredge in panko, lightly pressing to adhere. Place the coated rounds on a parchment-paper-lined baking sheet.
- Preheat air fryer to 400 degrees F for 5 minutes. Lightly coat fry basket with cooking spray. Add about 10 zucchini rounds to the basket, lightly coat the tops with cooking spray and cook for 5 minutes. Turn the rounds over and coat again with cooking spray. Cook until golden brown and crispy, about 5 minutes more. Lightly sprinkle the chips with 1/4 teaspoon salt while still hot; transfer to a plate. Repeat the process 2 more times with cooking spray, the remaining zucchini rounds and salt.
- Combine sour cream, mayonnaise, chives, dill and lemon juice in a small bowl; stir well. Serve the dipping sauce with the zucchini chips.

AIR FRYER ZUCCHINI CHIPS
Crispy garlic flavored air fryer zucchini chips make the best healthier snack. With no breading, this recipe is easy and quick!

Steps:
- Lay zucchini slices in a single layer on a paper towel. Sprinkle salt generously on top of each slice and let sit for 5-10 minutes.
- Pat the zucchini dry with a paper towel or cloth then place zucchini in a large bowl.
- Add olive oil and garlic powder to the bowl. Toss the zucchini until well combined.
- Arrange the zucchini slices in the air fryer either on trays or in the basket in a single layer. (*see note)
- Air fry at 400°F for 15-20 minutes. Check zucchini around the 10 minute mark and remove any chips to a cooling rack that are crispy or starting to turn golden brown around the edges.
- Continue air frying until each zucchini chip is crispy and golden around the edges. Cool chips on a wire rack for a few minutes before serving to help retain crispness.

AIR FRYER ZUCCHINI CHIPS
Steps:
- Wash the zucchini, cut off the top with a knife, then cut its length in half.
- Use a mandoline slicer or knife to cut into about ⅛" thick slices.
- Sprinkle salt, tossing midway and after to evenly distribute the salt. Let rest for 15 minutes so the salt extracts the water.
- Gently squeeze the juices out and then place on paper towels.
- Add another paper towel on top and try to dry off each slice.
- Spray with avocado oil lightly on the top of the zucchini and sprinkle garlic and onion powder. I found you don't necessarily need to season both sides because the chips are so thin.
- Preheat the airfryer to 320 °F, then add the zucchini slices in one single layer and cook for 10 minutes.
- Mix the chips around and remove any chips that are finished (the golden brown ones). Continue to cook the rest for another 3-5 minutes or until all the chips are golden brown and crisp.

Steps:
- Preheat an air fryer to 350 degrees F (175 degrees C) before you begin preparing the zucchini.
- Combine panko and Parmesan cheese on a plate. Dip 1 zucchini slice into beaten egg then into panko mixture, pressing to coat. Place zucchini slice on a wire baking rack and repeat with remaining slices. Lightly spray zucchini slices with cooking spray.
- Place as many zucchini slices in the air fryer basket as you can without overlapping them.
- Cook for 10 minutes. Flip with tongs. Cook for 2 minutes more. Remove from air fryer and repeat with remaining zucchini slices.
