Simple and good. Add hot pepper to kick it up. Can make with papaya instead of mango......then you get more digestive juices that tenderize so well.

Number Of Ingredients 9

4 shallots
2 inches piece peeled ginger
1 garlic clove
2 tablespoons lime juice
1/2 teaspoon coriander powder
1/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup olive oil
1 medium mango, chopped (papaya)

Steps:

  • In a food processor,process garlic, shallots and ginger.
  • Add mango and puree 30 seconds.
  • Add lime juice, coriander seed, salt and pepper.
  • Then process, adding oil in a thin stream while processor is running.

2 mangoes, peeled & chopped
1 scotch bonnet pepper
1 tablespoon dark rum
1 teaspoon jamaican hot sauce
2 garlic cloves, minced
1 tablespoon ginger, grated
1/4 cup coconut flakes
1/2 teaspoon coriander seed, ground
1/4 teaspoon cumin, ground
1/2 cup coconut milk
1/4 cup lime juice, fresh
2 tablespoons cilantro leaves, chopped

Steps:

  • Puree the mango, chili pepper, rum, and the hot sauce in a blender or food processor.
  • Combine the mango puree with the garlic, ginger, coconut, coriander, and cumin in a heavy nonreactive pot and bring to a boil.
  • reduce the heat and simmer for about 20 minutes.
  • Remove from the heat and cool. Stir in the coconut milk, lime juice, and cilantro.
