Steps:
- Mix dry ingredients.
- Do not sift the flour!
- Mix liquids and add to dry.
- Stir until there is no more dry flour.
- Depending on the humidity of the air where you live you may need a little bit more or less liquid.
- The dough should be moist but not sticky.
- It may take a few minutes for the flour to fully absorb the liquid, so don't rush to add liquid or flour to it.
- Score lightly the surface in a diamond or X shape to prevent splitting of the crust.
- This is a country style bread that should be sliced thick.
- It is important not to overwork the dough.
- Shape into a ball or an oval, with oiled hands.
- Place on clean baking sheet.
- Bake for 40 minutes at 400°F.
- Variations: Rub the dough ball with virgin olive oil and sprinkle sea salt and oregano for a foccacia flavor.
- For tea time add a tsp pure cane sugar.
- The liquid can be replaced for orange or other fruit juice if the bread is to be used for teatime and you can even add dried chopped fruits.
- For a savory bread the liquid can be tomato juice and you can add chopped sundried tomatoes to the dough.
- Sprinkling of seeds in the dough or on top of the bread is also possible.
YEAST FREE WHOLEMEAL BREAD
This is so far the BEST yeast free bread that I have baked for my daughter who has candida. It tastes really nice, holds together well and is so quick and easy to make. I adapted this recipe from an Irish Soda Bread recipe called Wheaten Bread which I found on an untitled web site.

- Pre-heat oven to 200 deg.celsius (392 deg. fahrenheit).
- Combine all dry ingredients then mix butter through well with a fork.
- Add milk (and sweetener if it is a liquid) mix until well combined.
- Put mixture into a greased loaf tin and bake for 50 minutes.
- Remove bread from tin and cool on a rack.

YEAST-FREE BREAD ROLLS
My sister is not allowed to eat yeast and sourdough so she can't have regular rolls for breakfast. We were very happy when we found this recipe in a leaflet from "Dr.Oetker". The rolls taste very good and are very versatile. You can either have them with sesame, sunflower seeds, pumpkin seeds etc. if you want to put something hearty onto them. Or you can add some sugar and raisins to the dough and eat them with honey or jam.

- Preheat oven to 180°C.
- In a big bowl mix flour and baking powder. Add curd cheese, salt, milk and oil and quickly knead into a soft dough using the dough hooks of your hand mixer. Don't overmix or the dough will become sticky. Blend in desired ingredient (oats, sesame, seeds -- ) by hand.
- Shape dough into approximately 10 (big) rolls and place them on a paper-lined baking tray.
- Cut a cross into the top of each roll, brush with a little milk (approx. 3 tbs altogether) and sprinkle with whatever you like.
- Bake for about 20 minutes.

AUTHENTIC IRISH SODA BREAD-YEAST FREE
This soda bread recipe is my personal one and very simple to make. Most homes in Ireland still make this bread daily and all have slight variations in ingredients or baking times. If you have ever traveled to Ireland, this is the soda bread you ate with your seafood chowder, soup, stew and breakfasts!

- Grease and flour a 8" (20cm) cake tin (high walls are better but not necessary.).
- Preheat oven to 190°C/375°F or 180C/350F if using a fan assisted oven.
- Sieve self-rising flour with bicarbonate of soda, baking powder and salt into a large bowl. (It is important to sieve the bicarbonate of soda with the self-rising flour, if it is added at a later stage it will give the bread a greenish tinge!).
- Add the wheat flour to the bowl (no need to sieve).
- In a jug mix the yogurt, honey and olive oil then pour onto the flour mixtures in the bowl.
- Stir with a wooden spoon until well mixed and a soft sticky dough is formed.
- Flour a surface for kneading and knead lightly (20 turns max). Form into a round shape, this does not have to fit the tin as it will spread when cooking.
- Transfer to the floured cake tin and with a knife cut a cross across the top and place in the oven for 45 minutes. (The cutting of the cross helps to portion the bread for slicing in quarters.).
- Eat when cool with just real butter or your favourite topping and a cup of sweet tea. It is lovely toasted too!

- Sieve flour with baking powder, baking soda, salt and seasoning.
