1 (1 1/4 ounce) package taco seasoning mix
8 ounces apricot jam
12 ounces salsa
1 1/2-2 lbs chicken pieces

Steps:

  • Place chicken parts in crock pot.
  • Combine taco mix, jam and salsa and pour over chicken.
  • Cook on low 6-8 hours.
  • Can also be baked in a 350°F oven for 45-60 minutes.

1 (2 to 3 pound) whole chicken
salt and pepper to taste
1 teaspoon paprika

Steps:

  • Wad three pieces of aluminum foil into 3 to 4 inch balls, and place them in the bottom of the slow cooker.
  • Rinse the chicken, inside and out, under cold running water. Pat dry with paper towels. Season the chicken with the salt, pepper and paprika, and place in the slow cooker on top of the crumpled aluminum foil.
  • Set the slow cooker to High for 1 hour, then turn down to Low for about 8 to 10 hours, or until the chicken is no longer pink and the juices run clear.

4 boneless skinless chicken breasts, cut into cubes
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can Ro-tel Mexican festival tomatoes (with lime and cilantro)
1 (10 ounce) can chicken mushroom soup
1 cup hot salsa
1 (15 ounce) can black beans (drained and rinsed)
1/2 cup buttermilk (or regular milk)

Steps:

  • Mix the cream cheese and rotel tomatoes together in the crock pot.
  • Stir in the soup, salsa, milk and black beans.
  • Add the chicken to the crock pot.
  • Cook on low for 6 hours.

Here is my plain ole baked chicken in a crockpot,fall off the bone, delicious recipe. This is using my favorite mayonnaise rub (NO BUTTER)a little salt and pepper, and some fresh parsley! Thats it! 1 - fresh, chicken hen, roaster
- salt & pepper
- parsley
- mayonnaise...yep!...mayonnaise

Steps:

  • Rinse insides of the bird.. Remove any giblets. Wash and dry chicken. Dry again! Sprinkle cavity with salt,pepper and parsley. TIP#1..... You might want to tie wings and legs close to the bird. Then they will not fall of,when lifting the bird out of the crockpot!
  • Slather on a thin coating of mayonnaise, all over the bird!! DO NOT USE BUTTER. Place that beautiful bird, on a rack in your crockpot. What?? no rack??? TIP#2... MMmmm!.. use metal canning rings! TIP#3...or crumpled aluminum foil. Sprinkle on parsley. Basil or tarragon.This is optional. Cover and cook on high for 6 hours. Remove chicken to a platter, let rest for 10 minutes. Then pull that glorious bird apart, and serve! TIP#4...You can strain the juices and make wonderful roast chicken gravy! TIP#5..Remember to save your left over bones...for a delicious soup! TIP#6...Left over meat?..Make open face hot chicken sandwich!

This tastes like a rotisserie chicken. My family loves this and it is so easy to make. I make this a lot. **Please note: I have a big slow cooker and a seven pound chicken fits nicely in it. Please adjust cooking time if making a smaller bird.

1 (7 lb) whole chickens (I prefer one with a pop up timer)
seasoning salt (use liberally)
pepper (use liberally)
10 dashes Tabasco sauce (or any hot sauce)

Steps:

  • Wad three pieces of aluminum foil into 3 to 4 inch balls, and place them in the bottom of the slow cooker.
  • Rinse the chicken and pat dry. Season the chicken with the season salt, pepper and Tabasco, and place in the slow cooker on top of the aluminum foil balls. There is no need to add water; it will make its own juices.
  • Set the slow cooker to High for 1 hour, then turn down to Low for about 8 to 10 hours, or until the pop up timer pops or the juices run clear.

1 large onion, peeled and cut into thick slices
2 carrots, halved lengthways and chopped
1 small or medium chicken
2 tbsp butter, softened
1 bay leaf

Steps:

  • Preheat the slow cooker if necessary. Put the onion and carrot in the base of the stock pot to form a protective layer to sit the chicken on, and add 100ml boiling water. Gently ease the chicken skin away from the breast. Stir some salt and pepper into the butter and push the butter under the skin. Put the bay leaf in the cavity of the chicken and sit on top of the onion and carrot.
  • Cook on low for 5 hrs, then check that the chicken is cooked by wiggling the wing - it should feel very loose. Tip the chicken up so any liquid inside flows out, then cook on high for 30 mins. If the chicken isn't cooked through after the initial time, cook for another hour, then turn the heat up. If you want the skin to be browned, grill it for a couple of minutes (make sure your slow cooker insert is flameproof if you keep it in the pot, or transfer it to a roasting tin).
  • There will be some gravy in the base of the dish with the veg, tip everything through a sieve and press the veg gently to make sure you get every last drop. Serve the veg on the side, if you like.

15 boneless, skinless chicken thighs or breasts
1 (26 ounce) can condensed cream of chicken soup
2 cloves garlic, chopped
1 (16 ounce) container sour cream
1 (7 ounce) can diced green chile peppers
15 flour tortillas
3 ½ cups shredded Monterey Jack cheese
1 (10 ounce) can sliced black olives
1 bunch chives for garnish
black pepper to taste

Steps:

  • Place chicken in a pot, cover with water, and bring to a boil over high heat. Continue to boil until the chicken is done, about 10 minutes. Drain, allow chicken to cool, and cut into small pieces.
  • Place chicken pieces in a large bowl. Stir in soup, garlic, sour cream, and green chiles.
  • Spray the inside of slow cooker lightly with non-stick cooking spray.
  • Tear tortillas into pieces, and arrange half of the pieces in one overlapping layer across the bottom of the slow cooker. Arrange half of the chicken, half of the soup, and half of the cheese on top. Repeat with remaining tortillas, chicken, soup, and cheese. Top with black olives.
  • Cook on Low setting for 3 to 4 hours. Top with chives.
