1 ½ cups packed fresh basil leaves
¼ cup shredded Parmesan cheese
¼ cup extra-virgin olive oil, or more as needed
¼ cup chopped walnuts
2 cloves garlic
salt and ground black pepper to taste
2 teaspoons extra virgin olive oil, divided
5 cremini mushrooms, sliced
½ tablespoon dried rosemary
1 pinch salt and ground black pepper
1 (8.8 ounce) package 2-pack naan bread
⅔ cup ricotta cheese
⅓ cup feta cheese
1 tablespoon shredded Parmesan cheese, or to taste

Steps:

  • Combine basil, Parmesan cheese, 1/4 cup olive oil, walnuts, garlic, salt, and pepper in a blender; blend pesto until desired consistency, 5 to 8 minutes. Add 1 extra tablespoon olive oil at a time for a thinner pesto. Set aside.
  • Heat 1 teaspoon olive oil in a skillet over medium heat; stir in mushrooms, rosemary, salt, and pepper. Saute until mushrooms are tender, about 5 minutes. Set aside.
  • Heat 1 teaspoon olive oil in a large skillet over medium heat. Add 1 naan and cook until crispy, about 2 minutes per side. Spread naan with a generous amount of pesto, and top with ricotta cheese, feta cheese, and sauteed mushrooms. Sprinkle with Parmesan cheese. Cook until cheese is melted. Repeat with second naan and remaining ingredients.

About 8 - 10 medium shrimp
1/2 - 1 Tablespoon Basil Pesto (store-bought or homemade - recipe here)
2 Tablespoons Pesto Rosso (a.k.a., sundried tomato pesto: recipe here)
1 piece of Naan bread (or other flatbread)
Shredded Italian blend of cheeses
Garlic scapes (the greens), snipped
Several cherry or grape tomatoes, halved
For garnish: fresh basil leaves

Steps:

  • Preheat the oven to 400 F. Spray a small baking sheet with cooking spray. Toss the shrimp in the basil pesto and set on the baking sheet. Bake at 400 for about 3 - 5 minutes or until mostly cooked. Remove from oven.
  • Spread a light layer of Pesto Rosso over the Naan, then top with shredded cheese. Arrange the shrimp and cherry tomatoes on the pizza, sprinkle with garlic scapes and a bit more cheese.
  • Bake at 400 for about 8 - 10 minutes or until the cheese is nicely melted and a little brown on the edges. Slice and enjoy!

½ cup Basil Pesto
⅔ cup Shredded Mozzarella Cheese
½ cup Spinach (sliced into ribbons)
¾ cup Grape Tomatoes (halved)
Salt and Pepper (to taste)

Steps:

  • Preheat oven to 400F.
  • Place the naan bread on a parchment-lined baking sheet.
  • Spread the pesto on, leaving about an inch of room towards the edges. Sprinkle cheese and top with spinach.
  • Cut grape tomatoes in half and place them on top. Sprinkle lightly with salt and pepper.
  • Bake 10 to 12 minutes, or until cheese has melted and naan crust has browned.

½ cup pizza sauce (100 g)
1 cup shredded mozzarella (85 g)
½ cup shredded cheddar or parmesan (40 g)
To Serve: fresh basil, crushed red pepper

Steps:

  • Prep: Preheat oven to 450°F (230°C). Once hot, place naan directly on the racks and cook for 2 minutes. Flip carefully with tongs, then cook for another 2 minutes. Remove naan from the oven.
  • Assemble: Spread 2 Tbsp of sauce onto each naan, followed by ¼ cup of mozzarella and 2 Tbsp of either cheddar or parmesan.
  • Bake: Carefully place naan directly on the oven racks and bake for 4 to 5 minutes, or until cheese is melted and crust is golden brown.
  • Serve: Allow to cool slightly, then cut into slices and top with fresh basil and crushed pepper.
