Roasted, thinly sliced yams or potato of your choice, quickly adds a yummy side-dish to your meal. Best when served with chicken, steak, or a mild fish.

1 large yam, peeled and cut into 1/4 inch thick slices
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons olive oil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet or shallow baking dish with aluminum foil.
  • Arrange slices of potato in the prepared pan so they are overlapping slightly. Season with salt and pepper and then drizzle olive oil over them as evenly as possible.
  • Bake in the preheated oven until potatoes are tender and have begun to wrinkle around the edges, about 30 minutes.

1 (16 ounce) can yams, drained
1 dash salt
1/2 cup brown sugar
1 tablespoon cornstarch
1/4 teaspoon salt
1 cup fresh orange juice
1/4 cup golden raisin
2 tablespoons dry sherry
1 cup walnut halves
1/2 teaspoon orange zest, minced

Steps:

  • Preheat oven to 350 degrees F.
  • Arrange yams in shallow baking dish, & sprinkle lightly with dash of salt.
  • In saucepan, mix sugar, cornstarch & 1/4 teaspoon salt.
  • Blend in juice, then add raisins.
  • Oveer high heat, stir & bring to boil.
  • Add remaining ingredients, then blend well & pour over yams.
  • Bake, uncovered, for 25-30 minutes, or until well glazed.

1 lemon, juice of
1 teaspoon cinnamon
1/2 cup dark brown sugar
2 tablespoons butter, plus
1 tablespoon butter
1/4 cup seedless raisin
1 apple, cored and sliced
2 peaches, peeled and sliced

Steps:

  • Preheat oven to 400 degrees.
  • Place yams in a casserole dish, pouring the liquid into a bowl.
  • Add the lemon juice, cinnamon and sugars and mix until dissolved.
  • Pour the mixture over the yams.
  • In separate bowl, combine the raisins, apple and peaches.
  • Add the yams.
  • Dot with butter.
  • Bake for about 45 minutes or until the syrup has thickened slightly and the yams look glazed.
