At our house, we go crazy for this dish. Serve this with garlic mashed potatoes and you'll think you've died and gone to heaven. I sometimes double the sauce... Enjoy!

1/4 cup flour
2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon thyme, dried
3 -4 lbs cut up chicken, skin on
1/4 cup butter, melted
4 green onions, chopped
1/2 cup mushroom, sliced
2 tablespoons lemon juice, fresh
1 teaspoon sugar
1 teaspoon salt
1/3 cup apple juice

Steps:

  • Preheat oven to 325°F.
  • Mix flour, salt, pepper and thyme in a plastic bag. Shake chicken to coat well.
  • In a frying pan, brown chicken in butter. Remove chicken and place in a casserole dish. Add onions and mushrooms to the frying pan; cover and simmer for 3 minutes. Pour the onions, mushrooms and butter over the chicken.
  • Mix together the lemon juice, sugar, salt and apple juice. Pour over the chicken.
  • Bake for 1 hour at 325°F.

Chicken, Wine, Jack Cheese & Mushrooms! This is a recipe that my Grandmother came up with years ago. She called it Chicken Santa Cruz as she developed it after having something similar on the wharf in Santa Cruz, CA. My kids have always called it "The Yummy Chicken". It is definately YUMMY and is a family favorite.

5 boneless skinless chicken breasts
1/2 cup grated parmesan cheese
3 eggs
1 cup breadcrumbs
1/4 cup oil (for browning)
1/2 lb mushroom
1 cup white wine
1/2 lb monterey jack cheese

Steps:

  • Preheat oven to 350 degrees.
  • Beat eggs and leave in bowl.
  • Pour parmesan cheese on to a small plate (for dipping).
  • Pour bread crumbs on to small plate (for dipping).
  • Pound chicken breasts to 1/8 thick (to tenderize).
  • Heat a small amount of oil in frying pan, just enough to cover the bottom.
  • Dip breasts first in parmesan cheese, then in egg, then in bread crumbs.
  • Brown to a nice golden brown on both sides and remove to a 9x13 cassarole dish.
  • Wash and slice mushrooms (1/2 lb was an estimate, use as mamy mushrooms as you like or none at all).
  • Saute mushrooms in same frying pan- just until soft.
  • Add the wine to the mushrooms (Just to cook off the alcohol) approx 5 minutes.
  • Cover the chicken breasts with the mushrooms and the wine.
  • Cover with cassarole dish with foil.
  • Bake at 350 degrees for 45 minutes.
  • Remove from oven, remove foil and place one large slice of jack cheese on each breast.
  • Cover with foil and return to oven for an additional 10-15 minutes or until cheese has melted.
  • Most of my amounts were estimates as I now make this from memory, but you can see, they are easily adjusted to suit your family size.
  • My daughter and I do not like mushrooms so we put them all on my hubbys pieces!

This is a recipe I had at a church supper and I was very impressed. The flavour was wonderful, it stayed hot, and it tasted good served with either rice or potatoes.

4 skinless, boneless chicken breast halves
¼ cup all-purpose flour
½ teaspoon salt
ground black pepper to taste
1 tablespoon olive oil
1 ½ teaspoons butter
½ cup sliced fresh mushrooms
4 green onions, chopped
1 clove garlic, finely minced
⅓ cup unsweetened apple juice
2 tablespoons lemon juice
1 teaspoon white sugar

Steps:

  • Pound the chicken breast halves flat and to about 1/2 inch thick. Cut the flattened chicken breasts into several large pieces.
  • Place the flour, salt, and pepper into a plastic bag, and drop the chicken pieces into the bag. Shake gently to coat the chicken thoroughly with flour mixture.
  • Preheat an oven to 325 degrees F (165 degrees C). Grease an 8x8 inch baking dish.
  • Heat the olive oil and butter in a large skillet over medium heat, and brown the coated chicken pieces on each side until golden brown, about 5 minutes per side. Place the chicken pieces into the prepared baking dish, leaving the oil and butter in the skillet. Cook and stir the mushrooms, green onions, and garlic in the hot skillet until the mushrooms give up their juice and start to brown, about 10 minutes. Spread the cooked vegetables over the chicken pieces.
  • Pour the apple juice, lemon juice, and sugar into the skillet, stir to dissolve the sugar, and bring the mixture to a boil. Pour the sauce over the chicken and vegetables, cover the baking dish with foil, and bake in the preheated oven until the sauce has reduced and the chicken has absorbed the sauce, about 1 hour.

Not only does this kid-friendly dish offer several tasty twists; the "yummy yammy" sauce is also rich in vitamin C, beta carotene and lycopene for a big nutrition boost. *This is part of "1 Recipe 4 Ways". non-stick cooking spray
4 lbs chicken parts, skin removed
salt & fresh ground pepper, to taste (optional)
1 (16 ounce) can yams in syrup, not drained
1 (14 1/2 ounce) can crushed tomatoes, preferably fire-roasted
1/4 cup apple cider vinegar
3 tablespoons dark brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon spicy brown mustard

Steps:

  • Preheat oven to 400°F.
  • Spray rimmed sheet pan with oil. Season chicken with salt and pepper, if desired, and arrange on pan with as much space between the pieces as possible. Spray with oil. Bake for 10 minutes.
  • Meanwhile, make the Yummy Yammy BBQ sauce. Purée yams, tomatoes, vinegar, brown sugar, Worcestershire sauce and mustard in a blender until smooth. Set aside about 1 1/4 cups of the sauce for dipping later; leaving about 2 1/2 cups of sauce for basting the chicken. Brush approximately 1 1/4 cups of the sauce over the chicken and bake for 20 more minutes. Then turn the chicken pieces and baste with about 1 1/4 cups of the sauce. Bake for 20 minutes more until chicken pieces are brown on the edges and cooked through to an internal temperature of 165°F.
  • To serve the original Yummy Yammy BBQ Chicken, dish up the remaining sauce for dipping.**.
